- Welp the first official cook on my new UDS is in the books!! I decided to go with a 10lbs Pork Butt when the store had them for .99 cents a pound! The Cook Details
Fuel: B and B Oak Lump and Western Post Oak Chunks
Pit Temp: 275-300F
Protein: 10 pound pork shoulder
Cook Times: Total cook time of 6 Hours - 4.5 hours smoked and 1.5 hours wrapped. Pulled off when probe tender which this time was 204F. Let rest for 7ish hours and pulled

That was a true test on the adjustability of that UDS. Man that thing held steady temps....👍👍 Probe tender with awesome bark and still hot after resting 7 hours....Killer! 👍
