3 lbs diced and softly cooked carrots
milk of choice
1 tbsp vanilla
pinch of nutmeg
250 ml evaporation milk
1 can condensed milk
pinch of salt

Thank you! It is harder to find the recipe with cooked carrots. A wonderful Jamaican friend used to make this for me in Florida. Glad now I know how!
I make mine like the milk one I do add the Guinness and the rum along with some supligen but will definitely try the other thanks debs and again happy Easter

I think the one with ginger and lemon would be my choice. That other one could be nice though.
It's funny, when I think "carrot juice" I just think raw carrots put through a juicer or press of some kind. My favourite "juicer" raw juice is carrot, apple, orange or lemon and ginger, so that's what drew me to the lemon and ginger version. This Jamaican way is almost a cold soup though! I'll try it, thanks.

Hi Auntie debs, thank you for showing your way of making carrot juice,& yes we used to peel and grate the carrots and then put them in like a cotton tea towel and do a lot of squeezing first, which you would need strong hands for, lol but I remember adding a small amount of beetroot juice with the carrot, nutmeg, then the tin milk to sweeten etc, I am not sure about fine brown sugar then simmer and cook down and put it in the fridge, . Do you think there is a way for diabetics to drink some, as I miss my carrot juice very much, due to being an insulin based type 2 diabetic, 😢
just do it and omit the sugar or use ur type of sweetner u use in ur tea u should be good
