Just started trying out sake and I’m really intrigued by the shinomine omachi sake. Do you know if it’s available in the usa at Asian grocery stores or if they have to be directly imported from Japan?

Hello and thank you so much for your lovely feedback! Given your preferences, you would probably appreciate a more dry, earthy, and robust type of sake with higher acidity. Look out for the words 'Junmai,' 'Yamahai' or 'Kimoto' on the sake label and try to stay away from the words 'Ginjo' and 'Daiginjo,' as these styles tend to be more light, fruity and aromatic. so my only experience with sake is with trying Hakutsuru Nigori Sayuri Sake. I didnt hate it but i didnt love it. i found that i could not drink it and be just as happy, what would you ugys suggest trying next starting here. I only get it when im at my local family owned sushi resturant so they dont have the largest selection.
Personally i normally drink scotch, bourbon and wiskey or mixed drinks, so im used to things that have a sweeter taste to them

One of the reasons why sake is the most ideal pairing with all kinds of food is that there is a pleasant touch of bitterness found in many sakes, which sounds like exactly what you are looking for! After tasting a few different sakes you can get your hands on, we're pretty sure you will come across the flavour profile you are hoping for. Kanpai!
Find a yamahai style made with #1 yeast and a light Seimaibuai (70-80%), and you’re looking at some potentially earthy, acidic, and funky sake that would go great with Spicy food! Then again, a low priced futsushu might do the trick...they’re not necessarily bitter, but typically sharp and bold. Great with pub foods like burgers and wings.
