    That is just mouth watering!! My 5 year old daughters loves u! Whenever I need her to sit down with me quietly, I just tell her "lets watch laura" and she runs!! Lol I even catch her making her own cooking show when she's having her breakfast :) she talks JUST like u!

    did I say I was cooking it all the way through? I said brown it on both sides, it continued to cook for 45 minutes in the soup. So therefore it was not raw and no, it won't give you salmonella.

    I really liked this recipe and will try it this weekend! I'm Mexican and the recipe we use here is: blend tomatoes, garlic and onion , add water put it on a pot to boil add epazote and season it ,when you serve the soup put fried tortillas cut in thin slices on top , sour cream , fried chile , chicharon and avocado.i know this sounds like what are those ingredients ?? but that is basically how we make tortilla soup here . Pls keep sharing your recipes!!

    My friend actually adds red enchilada sauce and slices and fries her tortilla strips , adds them on top and tops it with Mexican shredded cheese! It's soooooo good! You should try it Laura!

    Made this chicken tortilla soup the other night. We loved it!
    All the flavors working together are delightful, and it's so comforting. After you are done with a bowl, you are completely relaxed. The dark meat chicken is the way to go. Warm up your tortillas in the oven and go to town. This is a definite repeater.

    Laura--I love how you eat your food at the end. You never see people that cook the food ever eat. Sometimes I think you are going to burn you mouth on the hot food.

    Don't know how / why people go on about your accent! It's perfectly fine. I have a friend from the U.S., we love in London England. She speaks EXACTLY like you do. Her inflections and movements of her mouth speaking are the same. When I first saw your video, six months ago...I did a double take... and she's just as nice as you are. And effervescent and chirpy. I love you both.

    I made this last night and I fried tortilla strips and seasoned them with lime juice and a salt and cumin mix....My Hubby LOVED IT!!! This tortilla soup recipe is amazing! So glad I came across you on CZcams! I will Deff be trying more of these recipes!

    Hello Laura,I am going to try this recipe tomorrow, but in a slow cooker....Something tells me that trying it in a slow cooker will allow the flavors to infuse even more....Thank You for your awesome recipes.

    When summertime comes, you should try making a blueberry pie with the cooked filling, and fresh blueberries mixed in, so there is a sweet jam-like filling mixed with tangy, fresh fruit. ITS AMAZING

    If you have any Middle Eastern stores nearby, you should try looking for tomato paste there. That's where we get ours, a brand called Tukas (it's Turkish brand, I think). It comes in glass jars. I've never bought tomato paste in a tin or tube.

    I use diced tomatoes, zucchini, yellow squash, and onions for my vegetables. I also add a bit of Monterey Jack cheese on top with my tortilla strips. Yum!

    Hi Laura, I made this recipe but I didn't have black beans and instead put cannelini beans and it was AMAZING! This is going in my repetoire for sure. I normally use chicken breast but the dark meat was a great idea PLUS it's cheaper!!! THANKS!

    Laura I really enjoy cooking and some of the recipes you've done have inspired me to try new things, to which I can say I'm glad I did. One thing I enjoy doing when making the broth for this soup, is adding some steeped and blended ancho and pasilla peppers. It really gives this recipe a wonderful kick.     What my mom does in a tortilla soup, is we use another kind of tortillas (we called them tortillas de maiz), the ones that were like in the fridge for more than a week or two, we cut them in strips and fry them a little, oh! and we also add avocado and panela cheese cubes in there it is completely delicious you should try it :DD

    My favorite soup. Instead of the Jalapeños I use chipotle in adobo sauce blended. Gives it a real good kick and flavor. Add celery cheese and avocado. Great video.

    Nice recipe...I actually eliminated the beans and used White Corn called Hominy, it lends a serious Mexican "Lime" flavor. I also add fresh lime.
    When I serve it...I serve it in a wide bowl...first filled with shredded lettuce, then the soup...then cheese, tortilla strips and a sprinkling of cayenne...DELISH! :)

    This looks delicious! I had to alter my soup as my son doesnt like any "chunks" of tomatoes, veggies and wont eat dark meat :( I now use the chicken breasts, blend up all the tomatoes etc in the blender and cook it in my crock pot and that makes the soup smooth and the chicken really tender and I still get the flavor from it cooking all day.

    There's different versions of it, but I have had tortilla soups where the tortilla was actually blended with the broth so when you're eating the soup you get that hint of tortilla throughout it, it's delicious.

    I'm not Laura (obviously) but I cook a lot so maybe this will answer your question?
    You can substitute water in for chicken stock in many recipes, the only thing is you might lose some flavor(since chicken stock is basically chicken-infused water with salt). But,since the soup cooks together for 45 minute with all the ingredients(except the cilantro, tortilla and scallions) I think substituting water for the chicken stock should be fine. Maybe add a little extra seasoning if you feel it's needed

    You should try to heat up the tortillas this way:
    Grease an pan with oil, and put the tortilla in. Let it "puff up" and get golden brown before you turn it around... Take it over on a cuting board, and while it is still hot you sprinkel over som rock salt. Then you cut into desided pises.. It is delicious!

    I made this, but forgot to get the tomato paste, so when it came to the veggies and spices, I added a quarter cup of flower and cooked that for a few minutes before added to the rest. It turned out great, It turned more of a stew with the thickness but it was good for a cold winter day.
