  • In my first cooking video, I decided to go with this unique recipe for a Celery-Radish salad. Combined with a late Friday night recording time, one Corona beer, some swing music, a cat, and an irreverent sense of humor, and you have not only a good time, but a great side salad... Enjoy!! ---

    This colorful, crunchy spring salad is from "Eat a Little Better", the cookbook by Sam Kass, former chef to the Obamas, President Obama’s senior policy advisor on nutrition policy and executive director for former first lady Michelle Obama’ Let’s Move! campaign. This salad is typical of the fare he prepared for the Obama family. “These two vegetables are usually cast as supporting characters, but in this salad, they’re the stars of the show,” says Kass.
    Use a mandoline to make quick work of thinly slicing the celery and radishes. Cotija is a crumbly, salty Mexican cheese that you can find in most supermarkets. If not, feta is a good substitute.
    Ingredients
    1 head celery
    6 -8 small radishes
    1 -2 serrano or jalapeno chiles, seeds and veins removed if you want less heat
    3 Tbsp extra-virgin olive oil
    1½ Tbsp fresh lime juice
    1 big handful crumbled cotija cheese or queso fresco
    Kosher salt, to taste
    Directions
    Trim and discard bottom 2 inches of celery. Using a very sharp knife or mandoline, thinly slice celery crosswise, including any leaves; place in a large bowl. Thinly slice radishes and chile. Add to bowl. Add oil, juice and cheese, tossing to combine. Season generously with salt and more lime juice to taste.
    Serves 4-6.
