BAKLAVA FILLING
2 tbsp Melted Butter
100g Pistachios
100g Walnuts
40g Caster Sugar
2 ½ tsp Cinnamon
20g Honey
50g Melted Butter
FLAPJACK MIXTURE
5 tbsp Toasted Sesame Seeds
350g Rolled Oats
210g Butter
60g Light Brown Sugar
60g Golden Syrup
60g Honey
¼ tsp Sea Salt
1 ½ tsp Cinnamon
3 tsp Rose Water
GLAZE
160g Honey
Juice of 1 Lemon
6 tsp Rose Water

In Canada we call pancakes flapjacks, so was surprised when they weren’t pancakes. But looks very yummy.
Same in the US, at least here in the Southern US. When they pulled out the oats, I was very confused. lol

Yup - I think all over the US & Canada, flapjacks are pancakes. I think of old timey stories of lumberjacks eating flapjacks for breakfast. However, I looked up the word and one site claimed that flapjacks -as an oatmeal bar (or tray bake)- was invented in the UK first. I had never heard of the English style until I saw the GB Baking Show recently.
I couldn’t be more ready for bake off this year!

Ok I have made this twice and it is totally delicious, but both times it has totally disintegrated when I’ve cut it after cooling in the fridge. I tried lower temp and longer the second time and same result. I am thinking maybe I should tried quick oats instead of rolled oats so maybe they will absorb more of the liquid and bind together better, but I’m not sure. Any advice or thoughts?

Question: I find walnuts are too bitter most of the time. Might be a carryover from childhood when fresh items weren’t available in the prairies (Canada). If anyone can recommend a brand available in Canada, I’d love to hear about it. Could pecans be used as substitute?
There's actually a way to get rid of the bitter taste. Boil some water and add in the walnuts and let it boil for about 3 minutes. Remove it, run it under cold water and dry the nuts using a kitchen towel.( if walnuts have the skin on, just rub them between a kitchen towel) After that pan fry until golden brown or roast in the oven. Hope this helps!

Is there anywhere I could reduce the sugar (honey, golden syrup) in this recipe?
I doubt it. I found this quite crumbly as is. I think if you reduced the sugar more it wouldn’t hold together at all.

Would this work with non-dairy substitutes ie marg?
They said you could use Vegan butter. That is the same as margerine.

Maybe make sure you compress it really well in the baking tin before putting it in the oven? Also make sure the syrup or honey you use is measured very accurately - measuring by weight, not spoons or cups is best. One of the biggest reasons for inconsistent results in recipes using golden syrup is not getting an accurate amount due to not weighing it.

Mmm ok, don't want to make it too sweet...dumps in 3 lots of honey, white sugar, brown sugar and golden syrup. That there is a massive insulin raising mouthful !
I know it's all about the recipe but sometimes I just wanna watch and not so much talking and please do not touch your hair when touching food and put in a bun. And she is really talkative with her hands. Sorry not trying to be a all negative cause the recipe sounds good,
