Mark Lambert stopped by this week to show me his Herb Smoked Chicken recipe on his Red Box Smoker.
For this Herb Smoked Chicken recipe Mark starts by removing the backbone of the bird with a pair of kitchen shears. Simply cut down each side of the backbone and flip the bird over; press down on the breast to separate the wishbone and the chicken will lay flat on the board.
The secret to this recipe is getting crispy skin and Mark does this by completely drying the skin with paper towel and then applying a little olive oil cooking spray.
For the seasoning he keeps it simple: Salt, Black Pepper, and Garlic - my Killer Hogs AP Rub works great here.
The chicken actually lies on these herbs while it’s smoking. Build a nest on the cooking grate and place the chicken breast-side up on the herbs.
Mark added approximately 25 briquettes of charcoal to the red box and removed the water pan so the heat was directly below the cooking grate. Also instead of wood, Mark added fresh herbs to the hot coals which produced a wonderful smoke that flavored the chicken even more.
The chicken went on the top position on the red box and cooked for just over an hour. Once the internal temp hit 163 in the breast, it was done. The skin was perfectly browned and crispy.
At this point he rested the bird for about ten minutes and then cut it into individual pieces. For serving it was drizzled with white bbq sauce and garnished with some of the finely chopped herbs from the nest.
Mark says his family requests this recipe at least once a week and I completely see why. This chicken is packed with moisture and falor. You can pick up on the herbs but it’s not overpowering in the least bit and the skin…on my…it was the best part.
Paired with the White BBQ Sauce all I can say is Winner, Winner Chicken Dinner! Believe me you want to try this recipe. Big Shout out to Mark for stopping by and sharing!
Herb Smoked Chicken Ingredients:
- 1 Whole Roasting Chicken about 4lbs
- ¼ cup Killer Hogs AP Rub
- 2 Bunches Fresh Rosemary
- 2 Bunches Fresh Thyme
- 2 Bunches Fresh Sage
- 2 Bunches Fresh Chives
- Olive Oil Cooking Spray
- 1 cup White BBQ Sauce* recipe below
White BBQ Sauce Recipe:
- 2 cups Mayo
- ¼ cup Apple Cider Vinegar
- ½ Tablespoon Black Pepper
- ½ Tablespoon Granulated Garlic
- ½ Tablespoon Table Sugar
- 1 teaspoon Salt
- ¼ teaspoon Cayenne Pepper
- Juice from 1 lemon
Directions:
1. Prepare Red Box smoker or other bbq grill for indirect cooking over dry heat. Smoker temp should be 400⁰. For best results place coals at least 17” below cooking grate.
2. Rinse and clean chicken. Remove the backbone by cutting down each side with a pair of kitchen shears. Place the bird breast side up and press down until the wishbone separates allowing the chicken to lay flat on the cutting board.
3. Pat the skin completely dry with paper towel.
4. Spray the skin with olive oil cooking spray and season both sides with Killer Hogs AP Rub. (salt, black pepper, and garlic can be substituted here).
5. Build a nest out of the fresh herbs on the cooking grate. Reserve a few herbs for placing directly on the hot coals.
6. Set the chicken breast up on the herb nest and place in the smoker. Add a few herbs to the fire and cook until an internal thermometer reads 165 in the breast or 175 in the thigh.
7. Remove the chicken from the smoker and rest for 10 minutes before cutting into individual pieces.
8. Drizzle the herb smoked chicken with White BBQ Sauce and garnish with fresh chopped chives. Serve with additional white bbq sauce for dipping.

Herb Smoked Chicken Recipe - Zábava
"Pot of melted butter even?"
"Hao, hebibiboy"
Malcom broke him with that one 🤣
Straight up sounded like Johnny Bravo spotting a fine chick
James Holt I was thinking something similar.
"Hao, hebibiboy" LMAO
I hope he stays around longer but man he eats good!
4:33
when he says „lets get to cooking” all my struggles and pain is gone
If my local redbox would switch from movies to bbq I'd actually use it.
Ha ha ha! Best comment ever!
Lmao that's great.
Lol
I love how Malcolm is always “ready” to try what ever is cooking. He is always smiling when he says it!
Malcom. That guy knows what he’s talking about. That way of making a chicken is awesome. I Really liked that Alabama Sauce too. 💪🏼👍🏼
Meathead, I like your version as well!
Thank you so much for this video. Made this meal on the Traeger tonight and my family could not believe how good this was. It was simply amazing. To see my wife’s expression after her reluctance to purchase the smoker was priceless. It was simply amazing. The herbs are the key to everything!!! Thank you again my friend. This is our go-to meal once a week now :)
Malcolm Reed, you've been given a heaven sent gift from on high. I appreciate that you pass your talents on to people who want to have fantastic good food. Many thanks Malcolm.
This is awesome Malcolm! I love you bringing in other BBQers in to show their stuff. Love the BBQ community! Y'all stick together, and it's just good to see great people sharing great food!
Nice! What separates your episodes from everybody else is that not only are they great, but I love how you list everything done and used in your drop down.
I don't miss any of your videos. The collaboration was a great surprise.
Keith Brookshire I agree.
done this recipe probably 20 times and on multiple cookers. It is without a doubt the top way to cook bbq chicken aside from maybe rotisserie. The flavors are incredible. I have done all cuts of chicken, whole bird is still my go to but legs, thighs, wings, anything works with this. The fresh herb bed adds a dimension that nothing else will.
That mumbling when he mentions melted butter lol
Dude!! I think he had a mini butter stroke!!!!
16:22 The sly, under-the-table napkin pass
so..
The same napkin he wiped his mouth with....🤣🤣
Yeah I noticed that, at least it was pre-covid😂 great video as always
@@jamalhinson ahh they're from the south.
"Probably melted butter would even..."
***Channels inner Tim Allen growl***

Well God Damn, this looks absolutely delicious. When Malcolm says it’s a “go”, then it’s a “go”!
10:29 Malcolm puts a claim on his wing. LoL 🤣
Melcom, dont sell yourself short buddy, "use your own rubs" yeah right! Your AP RUB is the best rub I and people I cook for has ever tasted!
NOTHING BEATS MELCOM REED'S AP RUB!!!
I'll try it on your recommendation.
This is so much better than the paid "chefs" on the cooking shows. The way you and your buddy explain things make it so easy to re-create. Thanks Malcolm.
I love your channel Malcolm! I've only recently found it and you've taught me so much. I love your enthusiasm for smoking. Thanks from Australia. 🇦🇺
If I didn't live in an apartment I totally would have bought that red box smoker on an impulse, that thing looks absolutely fantastic.
What man doesn’t love grilling!
I really appreciate your videos and I absolutely like how you don’t make a huge deal about buying your product (your spices) always telling people use your favorite or you don’t have to buy mine. Just for that I’ll be looking for your name
I just tried this on my gas grill. Didn’t try the dressing at the end but I think and my wife and family agree this was the best chicken I’ve ever cooked. Thank you and keep them coming.
That bird looked amazing, that sauce looks pretty good too.
MALCOLM - my personal preference is to have the skin more done and maybe even a little bit crispy - this gentleman ends with the skin a little under done for my taste -
but it's all personal preference - thanks again for your great videos
Man, I was drooling like crazy, that sauce man! That sauce!
Great presentation as usual Malcom. Thanks for changing things up. Always good to see how another pro does it. I use and love that AP rub on just about anything. I use it every day. Your blend is just right. I have to try this. Thanks Again!!
I have made this chicken 6 times since getting my smoker in April. It is a favorite of everyone’s!!! I also was inspired to make an Alabama White Sauce that I have tweaked from this recipe and made “my own.” The white sauce has become so popular I am required to keep a jar in the fridge for my wife at all times and friends have even used it on steaks and tritip. Thank you for being an inspiration to so many of my cooks.🙌
Mark seems like a very humble and kind.
4:58 love the response “buh bah bu bah”! 😂
The "bird's nest" idea sounds fantastic... will definitely try that basil/thyme/rosemary.
This is the second cooking recipe I’ve used from you Malcolm and it did not disappoint!! I used my Camp Chef DLX and this was the juiciest chicken I’ve ever had, I was really surprised with the “White BBQ sauce” sooo good.
You’re making me a hero at my house with my wife☺️
Did this tonight on the camp chef and it was a big hit. A savory chicken for Cinco de mayo. Love the nest of herbs.
Haha I'm making this today! Such a good Cinco de Mayo recipe!
Just want to say thanks guys for that absolutely delicious chicken recipe. I have been cooking chicken for years and this one is on top of the list. I guess the herbs did something special beacause every bit just melted in the mouth. No need for knife, just fork and that Alabama sauce.... Man! Awesome!
Killer hogs bbq rub is trending #7 on videos right now!
If I was his neighbor, I'd buy the meats for exchanged of having it cooked... Every single cook he's has done, looks amazing, delicious and gets me hungry. Thumbs up
I know...I'm sure his neighbors are always hungry after smelling all that wonderful scrumptiousness emanating from his deck!
I have tried some of your Recipes and they are great, Malcom Reed!!!! Thank you
I love how you brought another professional in to do a traditional chicken! Awesome!
The collaboration style of this video is a nice addition to usual uploads...which are always great btw. Glad to see a video using the Redbox Smoker too. Looking forward to another one soon!
Malcolm you do a good job on these videos. You let the person talk and do their thing and make a short to the point video. Thanks for the great videos.
That white bbq sauce recipe was excellent. Gotta admit, I was skeptical when I saw the ingredients. But the zesty flavor goes very well with smoked chicken.
Very nice looking chicken. That red box did a super job.
Awesome video ! I gotta try this ! Thanks Malcom !
I've followed this recipe a few times now and can confirm it is a fantastic way to cook a while chicken. So good.
I saw on TV a few years ago a Alabama White Sauce and have loved it since. Glad you had it in a video... I dont think thing many people have heard about it.
Oh man that looks delicious! I'm definitely making it!
Thank you Malcom for sharing all this awesome food!
The napkin pass made me chuckle..im starving now
I have done this several times. a few on my kamado and a few in the wood fired oven. it is an awesome recipe that lends itself to all forms of cooking. Thank you.
I'm making this TODAY!, and if I do half a good job, going to do it again on the 4th for the family. Thanks Guys!
Never ever thought of doing a bed of Herb's like that and with a chicken, but man it looked good with that white sauce... this is simple but looks damn good. Thanks Guys
Really liked this one especially with another bbq head in the video. Very interesting thank you for the advice!
Did this last night on a Pit Barrel. Unbelievably delicious. Never heard of Alabama White Sauce up here in SD but this was by far my best smoked meal I've ever made. Thanks for the inspiration and instruction.
Awesome video...combining two greats, Priceless!
Love learning a new technique.

Looks wonderful! Wish I was there to try it out. I'm just learning how to smoke and get a lot of help and encouragement from your videos. Thank you.
NEVER heard of white bbq sauce til now Malcom...Gettin' the ingredients to together right now! Another awesome vid!
I just bought Lamberts dry rub for some baby backs im gonna smoke today
i always do whole chickens and often times Turkey, spatch-cocked. I also mix in horse radish to Alabama sauce (strength dependent on subject protein)
No one cares
Just made this for dinner, along with smoked pork loin roast, and 4 racks of ribs. Everybody was fawning and moaning about the deliciousness of this chicken.
Thank you for making me look like a chicken expert :)
This was delicious!
I learned a lot about how to chop up the bird after cooking. I’m going to use this technique for a long time.
Well, I watched your video and it really helped. However, I use the Brickman for the first time. We started it at 2:00 PM EST and it is now 7:30 pm EST and we are really hungry. We had a problem getting to the temp. But, love your videos. Thank you so much. I love to BBQ. You guys are awesome. My herb garden still had fresh herbs in January 2021 in the snow. :))))
This dude Malcolm just sounds like a bbq boy! I love this dude!! Would like to see him smoking w Myron Mixon and Johnny Trigg
Great job guys. Mark is anew favorite. Love the herbed chicken and the Georgia white sauce.
I love this channel so much, it's so wholesome
Did this one on the weekend. Absolutely fantastic. TBH I didn't notice the herb flavours and will try it with a herb sprinkle next time. But just an outstanding recipe, succulent, juicy, melt in your mouth. Thank you.
Bought the Killer Hogs Rub Pack again after watching because Malcolm Reeeeed is the man. Whatever I cook I now say “I’m calling it”
2:25 he knows what he is talking about, for sure.
It's great watching the pros grill. Sweet video!
monster chicken. I'm amazed at how big your chickens are!
These videos are so much fun, getting me in the mood to grill something!
Outstanding recipe! I’m definitely gonna try this one!
I’m gonna have to try that sauce.. as always thanks for sharing all the tips Malcom
Watching a Malcom Reed BBQ video before/while grilling seems to have become an almost everyday ritual.
your guest is a great teacher, and you asked great questions too, malcom, great video, looks mighty tasty
Perfect narration and recap after the cook like always on this channel.
Malcolm, been a massive fan of yours for a while now and thought nothing could top your suckling pig video, but this one, somehow, could top it. The ease of getting a chicken and cooking like that, with those types of results... probably going to be cooking it tomorrow. Awesome video!
Funny. I had seen this video posted, but had not watched it yet. Labor Day Weekend I bought a rub called Lambert’s Barbecue Sweet Rub O’Mine for my pork shoulder, which turned out very good. Had a nice smell to it too. I did realize this was the guy who made this run until Malcom said Sweet Swine O’Mine. This rub won world champion at Memphis In May in 2009 & 2013 and world champions pork shoulder in 2005, 2008, 2009 and 2013. Good stuff!
I love watching all your videos!
Interesting way to cook a bird. Thank you for sharing.
Love the channel. I tried this recipe today using my own AP seasoning (salt, lemon pepper and garlic). My only issue was I added a bit too much seasoning on the skin - so it was a bit salty. However, when chased with some potatoes augratin it balanced out as I did not add salt to the potatoes. Wish I could share a photo. Made on Weber kettle 22inch. Ive learned a lot from your channel. Keep it up.
Great job and look forward to trying! Can't wait to see what you and Shane Draper have up your sleeve!
Great video as always and great recipe! Keep it up!
My mouth is literally watering...
Thanks for sharing guys, definitely will try this one!
Malcolm - Thanks for the great videos!
Looked good enough to jump thru the phone to get😍, a must try. Thank U!
I do Tri tip and Baby backs in my Red Box.
Love it.
Feeding the Smoker wood to the charcoal is the trick.
Took some practice to get it spot on.
This white sauce is really good. Almost tastes like the special sauce from my favorite burrito place so a HUGE THANKS because now i can work off it and try and perfect those flavors. As for the chicken, its still cooking so i hope it come out as good as it looks in the video
Welcome Mark ... great job !!! I hope to take the comp class one of these days and meet you two !!! :)
I'm a big Malcom fan, if you watched his early videos you can tell he's eating well! Lol
Great video! Looks amazing!
I cooked this yesterday and it was awesome, Thanks!
Malcom you have excellent culinary skills and your videographer does a fantastic job as well!
I've done this recipe on my electric smoker several times and I loved it. I got a Traeger pellet grill for my birthday and this afternoon I'm going to try it on there, so I was reviewing the instructions. I do note that while you put the smoker temp at 400 to start, he does say at 7:40 that you want to hold it in a 325 degree range, although that isn't in your written directions. Since my Traeger is programmable, I'm going to set it to 420 to put it in and then set it to 325 for the run. We'll see how it turns out. Thanks again for this video; I can highly recommend the recipe as my ideal way to smoke a chicken!
