    That is the Canadian butcher's knot. But you ignore the sequence.

      If meat has thick parts you can tie it to make it even with other sides. That way you can cook every part equally I guess

      It is done for more even cooking. If you are cooking a whole chicken on a rotisserie it will prevent it from burning. It is a good thing to know if you like to cook.

    You do it differently than what I see out there. The first knot you tie is called the arbor knot. It is commonly used in fishing in the USA. Don't need it for the butcher knot. This is more common czcams.com/video/t4-yLf2K3SM/video.html

    Notice how many times he changes which hand is holding the end, as if he can't decide how to do it. (The problem is when he slowed it down, he lost how to do it. He stops, switches, goes back, switches, starts, stops, goes back, switches, etc. Very frustrating. Try another.

    In the beginning , the end of the twine touched the meat and then touched the rest of the spool. That’s called cross contamination and the entire spool should be thrown away.
