    Jamerill, once you’ve shape balls of dough to prep them for the tortilla press, let them rest for about 10 minutes they will work just fine, at least in my experience that’s been the case.

      Absolutely. I find that any dough for pita pockets, tortillas, the dough always rolls out better if its rested in the ball stage.

    Jamerrill - Tortilla idea! Go to Homedepot buy a couple 1 to 1- 1/2” wooden dowels - have hubby cut them to rolling pin lengths to fit each child - sand them - mineral oil a bit - line kiddos up along table with balls of tortilla dough - maybe those plastic small Walmart cutting mats - Tada! Tortilla manufacturing😁

    For even thin sliced bread: cut the entire loaf in half then place cut side against bread board and slice downward through crust to board. This gives you a way to hold the bread easily with one hand and make one swipe down with the electric knife to the cutting board. I do this and I get thin even half slices perfect for sandwiches and French toast.

    You can definitely make flour tortillas in a tortilla press. I have a large tortilla press and a set of gallon ziplock bags slit on the sides that i use specifically for making fresh flour tortillas. The trick is to male sure ypu let your dough rest for at least 30 minutes before you press. I press and stack all of them before I cook them. Delicious. Sadly, I never have any left over. I reuse the bags. Note: I have had to press multiple dozen tortillas and I just remove and lay one between the bags or use parchment paper to keep them from sticking togetjer.

    What a fun experience to get an ostrich egg. I don’t remember how all the eggs we had growing up tasted, but I remember the goose eggs were gross. We had geese, ducks, guineas, and chickens. I’m sure we tried them all. Lol…I’m imagining how tiny the Guinea eggs probably were. Thanks for sharing with us! 😁

    As a long-time viewer of your channel (through different accounts), and as a wife of a Celiac husband, you are speaking the correct way to handle gluten in your household and to talk about what you are doing publicly. My hubs would love to eat regular sourdough products but that is not possible - we've tried the GF sourdough and it's not the same, but it makes him happy nonetheless because he loves the taste.
    One tip: the brand Schar makes excellent GF products and their sour dough pizza crusts and "baguettes" are truly great for convenience. The crusts are shelf-stable and the baguettes are frozen. All work great, if you need a quick option - the pizza crusts are fabulous in an air fryer (good for teenagers). 🙂
    And come on Z-Line, make your product (that you advertise all over CZcams) right. We need to see MEGA Momma baking. LOL

    The secret for the flour tortillias is after you divide the dough into the amount of tortillias it's suppose to make, is to tuck each portion into a nice tight ball then to get a nice quick circle using your rolling pin press each tortilla then rotate the tortillia each time 1/4 turn.

    When you were talking about sourdough pancakes it brought back a wonderful memory. My dad was a showtime cook and he loved making sourdough pancakes with my mum on Sunday mornings. They were more crepes and were spread with frozen crushed strawberries that we had picked and preserved and whipped cream. It was lovely. 💕

    I can definitely relate to be down to one bra. 😂 I remember hearing my mom tell her sister many uears ago that she was down to 1 1/2 bras. My aunt said, "How in the world do you have a half a bra?" We laughed so hard we never got the answer to that question. Aahh I miss that lady!

    Hi Jamerill, I’m from Singapore and we get haze occasionally from the forest fires in neighbouring countries.
    We are then encouraged to wear our masks again if we have to go out.
    When the air quality is very bad, schools are closed.
    Hang in there and here’s hoping the wind blows it away from you

    My parents lived for a while in South Africa. Every Christmas, my mom would fix scrambled egg with an ostrich egg. As I recall, my dad cleaned a large drill bit, drilled a hole, and let the egg drain into a container overnight. It was delicious!

    If the press doesn't work for the tortillas what about a pasta sheeter/roller attachment for your Kitchen Aid or manual crank pasta sheeter. I know the sheeters are strong because it can be used to roll out polymer clay. Just a suggestion maybe this idea will spark some other ideas.     I lived in New Mexico for 3 years while in High School and in Home Ec we learned how to make perfect round flower tortillas. I was taught by someone that has made millions of them. I think if you watched a few CZcams videos on making them it would help you a bunch. There is an art to it but once you watch someone else that makes them "perfect" you will go "Oh, ok, I get it!"

    Beautiful accomplishments, Jamerrill. I hope by now you are feeling better and that there will be relief from the smoke before long. In the past I have made gluten free sourdough bread products for my daughter with the instructions from the blog Vanilla and Bean, she made it so much easier although anything gluten free can definitely be a challenge. It is wonderful your family has taken to sourdough so well. My poor mom tried to get us onto it in the 70's and we kids rebelled...we hated it so much that she gave up and to this day I still only enjoy the occasional sourdough bread or English muffin, haha.

    I do Lisa’s no knead artisan bread and one time the recipe does two loaves, but I make one big loaf and bake the same. Turns out perfect. Oh and I never worry about preheating for a full hour…works great.
    It is a confusing thing at first that timing and all the steps; but eventually, with practice we get the hang of it! :)

    Yes, you can make flour tortillas in a press! I do it all the time. All you have to do is press the dough between parchment paper. I even bought pre-cut 10" parchment for convenience sake.

    Two things: lots of tortillas take forever to roll out, try using a pasta roller (kitchen aid has one) for the first rollout. Then finish by hand. Second thing, can you talk about how much less garbage and recycling you have now that your doing less grocery shopping.

    I have used a tortilla press on flour and corn tortillas and it works just fine. I just got a bigger one a few days ago and have not tried it yet. But I have been making my own sourdough tortillas and they are amazing so excited to try my new press. It’ll help big batch freezing all the tortillas that I make. God bless

    It’s just my husband, myself and my oldest brother but I make freezer meals. I, too, have my own business. I’m a personal shopper but cut my clients down to two and am 3/4 retired. I love freezer cooking! Just turned 60, had Bariatrics sleeve surgery and they have come in handy for my small household. Thank you for getting me interested into it!

    I usually have my kids’ friends come over and we do a tortilla party a few times a year. We make tons of them and I send a bunch home with each kid, as well as putting a whole lot of them in our freezer. If I didn’t have the help I know for sure that I wouldn’t make them lol. It’s a ton of work!

    Jamerill, use wax paper between your sourdough tortilla press. That’s pretty glossy so you should be able to pull them right off! As always, I love what you do! Keep it up.❤

    Look up yucca root for a gluten free alternative. You can buy the root at some special stores. They are a lot to peel and cut (you can get them peeled and cut up in the frozen section) This I found to make a very yummy pizza crust. I steam the cut up pieces and blend to turn into a batter with Italian seasonings, garlic powder, onion powder. It’s yummy! Yucca root is also known by several different names, cassava flour, tapioca starch is made from the starchy parts of yucca root. Also, soaking rice over night can also make a batter for gluten free ingredient options.

    These fires in Canada are hurting people, here in Minnesota it is terrible! Went to Ladysmith in Wisconsin, no haze, and we came back to Minnesota and it was hazy again, this haze has been here for at least a month! It makes you feel sick, and I feel that this is being done on purpose. The haze has to be carrying more than just smoke ! I try to go into the garden early morning, and not being out in it for more than a couple of hours! Each morning, it looks like it is going to rain, gray and not your normal summer clarity. I wonder how many have noticed this?

My daughter, daughter-in-law and myself are going to get together and do a big batch cooking week end and then split them between the three families.     As a Canadian, yes we have renewed forest fires. I believe there are fires in California and Nevada and over on the American eastern seaboard. We are suffering too. When it gets really smoky, it cools the gardens. It is so hard.

    I HAVE a cast iron tortilla press and use it on flour tortilla all the time. I got it because when researching, the weight of the press helps with the gluten in the dough. So go for it.

    You should try Farmhouse on the Boone's sourdough sandwich bread. It is easy and very tasty, great for a substitute for regular sandwich bread. No stretch and folds either.

    Jamerrill,
    I enjoy your videos. Attached is a video that while unfortunately is in Spanish, fortunately it shows the traditional way of making tortillas. The CZcams content provider uses a warm tortilla press that makes a thin perfectly round tortilla that she takes from the tortilla press and places immediately on the plancha (griddle) to cook. That is the tortilla press you’re looking for to make the flour tortillas without having to roll them out!

    You just have to be graceful and realistic with yourself and situation when it comes to shopping challenges. You could burn up all your energy and stretch yourself thin, or choose the most important things to do yourself and put your energy into them and give yourself grace with the rest.

    You could always roll out a mega big sheet of thin tortilla dough then use a bowl to cut out the rounded shape.either cereal bowls or Tupperware bowls until you find the right size that works for you

    In upstate New York we are getting the smoke and torrential downpours. Every other day it’s raining. My garden is underwater most of the time. My tomatoes, which is a big part of my canning are not faring well. The ground has no time to dry before we get another torrential downpour. So if I had my druthers. I would prefer the smoke. At least my garden wouldn’t be drowning. Not going to be a good canning year. 8:22

    You can also mix it up very well in blender put in 1 cup and than freeze it for cooking, or it you have a freeze dyer.

    flour tortillas... I have been told that if you let the dough rest 30 min. after cutting them into individual pieces then they can be pressed out on a press and won't shrink back down. Good luck!

    A cast iron press works fine on flour tortillas..my daughter and grand daughter use one. I've made three to six dozen by rolling them out by hand using a roller my father-in-law made for me when I was first married...he used a broom handle from a industrial broom, cut about six to twelve inches long. He then sanded all the rough edges and it fit perfectly for my small hand.

    Put in in blender it mix it well like milk shake before cooking it. Add half and half or heavy cream not milk. Cheese , basil, add onion power spice it up for taste. Add salt ad very last so it doesn’t rubber up on you .

    You might have gotten the smoke from Nova Scotia. Fires were bad and we got a bit too. Now they are dealing with floods in the same area.

    Hey , from up here in British Columbia Canada. I enjoy watching your youtube often. Just some encouragement from someone whose summers are most often filled with smoke . Sometimes for a few weeks , sometimes all summer. Unless you have existing respiratory issues that could be aggravated by smoke...I have never heard of anyone getting a cold from smoke. Yes , you should be careful if it bothers you . However , most of us up here try and go about our lives as without letting it stop us.
    Sometimes Im sad when I cant see the mountains around me when the smoke fills the air, but we keep doing all the things .
    We raise our own meat and butcher it as well. We have never found any issues with meat , even on our smokiest summers. Even my huge garden and the orchards that run through this huge valley have not slowed down . Not till we had the record braking heat wave from a few years ago when we were the hottest place on earth for a few weeks. The growing fruit etc took a toll. Yet , a lot still survived. This winter we had a very unusual deep cold snap for our area, which has damaged more than the smoke ever has.
    Just wanting to encourage you that plants are amazing , even in the smoke. I thought I would have to do some hand pollinating some smokiest years ...but never have had to.

    Hmm interestingly enough, here in Massachusetts, we had the haze, but it didn’t seem to affect me too much. I’m 61. I went out for walks, and did gardening, but I wasn’t running around either.

    My grandmother used to mix her eggs up like omelet consistency for scrambling. There was no way she would eat egg with a bit of eggwhite visible. When I scramble like more then 4-5 eggs I give them a quick whisk so all the yolks are broken. Maybe an idea for a next time you come across an ostrich egg. Whisk it a bit might give less of the little seperate bits of white.

    I’ve always beat my eggs throughly in bowl w milk (or water) to avoid chucks of egg whites cooked up. I think it makes them fluffier too.

    1:05:52 I have found that if you have issues with your dough shrinking back to the smaller size. You need to walk away from it and let it rest for about 15 minutes. Then when you come back to it. It tends not to fight you. The gluten has a relaxed in it. That would be for your tortillas that you’re rolling out.
    1:10:39 imagine being the baby that has to come out of that eggshell. Wow they must be tired!

    You could sit with the scale and mega weigh out 8 jars of flour and other ingredients so when you do a mega bake day, you just have to dump the jar of weighted ingredients into your bowl. That might be the next step toward using weighted ingredients in all your baking.

    I've been growing as much as I can, however everything is taking so long to grow this year. Canning, freezing, dehydrating everything i can! This whole summer the sky has been strange, guess it's those wildfires. We have to do as much as we can to be self sustaining. Love your channel ❤

    If you have a pasta maker you can roll your tortillas out on there and make them rectangles. :) Tortillas are basically just noodles that are pan cooked instead of boiled.

    Maybe you could buy a pasta attachment for your kitchen aid to press out your tortilla dough? Just running it through on the thickest setting may work.

    With the quail eggs it is fun to do mini breakfast. Bite size biscuits and mini sausage patties and mini bacon pieces. Little kids love it.

    Love seeing you do sourdough. I have been making it since 2020 and since I am pre-diabetic, it's basically the only bread I can eat. I, too made the artisian loaves, but now make the sandwich bread, which goes further for our household. Baker Bettie has an excellent video (and recipe)😊 on her CZcams channel. You might enjoy it, too. Just FYI (I also make tortillas and only use my tortilla press for corn tortillas. They just don't work as well for flour tortillas, unfortunately. ) Those I roll out very thinly.

    easy way to weigh out ingredients, get a scale you where you can zero it out then place your measuring cup on it and zero it out then set it for ounces or grams and then pour it in that will give you both cups and and grams for measurement's I had to do that when I was my dad's care taker he could only have a few grams of certain foods so I had to punt and I did this so once I got down the grams in measuring cups I was just able to hit the floor running

    I wonder if the tortilla dough can't be thinned out with a pasta machine without cutting it into pasta just when it has that part where you make a big sheet. Make it thin that way then just cut shapes?

    If anyone in your family is creative & wants to try carving your ostrich egg with a dremel, there are some really nice ones, lots of filigree designs. Be a good practice one.

    I saw a chef use water in eggs, just a small amount, like a table spoon for about 6 to 8 eggs...makes them very tender.
