Thanks for asking and watching.😊 I only refrigerate each cake tiered for a minimum of 2 hours before attempting to stack them. I never freeze my cakes for the stacking process. This is to avoid a drastic temperature change on the cake from the temperature of my freezer to the temperature in my kitchen . This is to avoid excessive sweating of the buttercream .

I hope you don’t mind me asking another question. Do you push the center dowel all the way down to the cake board when using the dowel for stacking the cake? TIA
