For Fried Onion:
Oil - ½ Cup
Onion - 500 grams (peeled and thinly sliced)
For Chicken Marination:
Chicken with bones - 500 to 750 grams
Yogurt (plain and unsweetened) - 1 Cup
Garlic (paste) - 1 Tablespoon
Ginger (paste) - 1 Tablespoon
Salt - to taste (1¼ teaspoon)
Red chilli powder - to taste (1½ teaspoon) - add more for spicy biryani
Cumin (roasted and crushed) - 1½ teaspoon
Coriander powder - 1 teaspoon
Turmeric powder - ½ teaspoon
Garam Masala (ground) - 1 teaspoon
Nutmeg (Jaifal/jaiphal) & Mace (Javitri) powder - ½ teaspoon
Cardamom powder (¼ teaspoon) or 2 to 3 pods
Lemon Juice - ½ Tablespoon
Fried Onion - approx. ¾ Cup
Tomatoes (blended) - 2 to 3 / 125 grams (Cup)
Green chili (paste or sliced) - to taste (1 Tablespoon / 2 chillies)
For Cooking Chicken Biryani Masala:
Potatoes (peeled and chopped) - 3 medium size (150 grams)
Whole spices:
. Cinnamon (Dar cheeni) - 1 small piece
. Star Anise (Badiyan) - 2
. Black peppercorns (Kali mirch) - 4 to 5
. Cloves (Long) - 4
. Black cardamom (Bari elaichi) - 1
. Bay leaf (Tez pat) - 2
Dried Plums (Aloo bukhara) - 5 (optional)
For Cooking Rice:
Basmati Rice (long grain) - 500 grams 2 Cups
Water - 12 Cups (3 lit)
Whole spices:
. Cinnamon (Dar cheeni) - 1 small piece
. Star Anise (Badiyan) - 1
. Black cardamom (Bari elaichi) - 1 pod
. Cloves (Long) - 3 to 4
. Black peppercorns (Kali mirch) - 4 to 5
. Bay leaf (Tez pat) -1
Salt - to taste (1½ Tablespoon)
Lemon juice/vinegar - 1 teaspoon
Oil or ghee - 1 Tablespoon
Green chilli - 1 to 2 (make a slit in center)
For Assembling Biryani Layers:
Coriander & Mint leaves (chopped) - approx. ¾ Cup
Fried Onion (use remaining half quantity - approx. ¾ Cup)
Chat masala - ¼ teaspoon - optional
Garam Masala - ¼ teaspoon
Biryani essence - ¼ teaspoon - optional
Orange food color - ¼ teaspoon (dissolved in 1 teaspoon water) - optional
Serve warm with raita and salad, and enjoy.
