    Pickles are the most important part of our meal. Which enhances the the taste of the dishes with its sour, spice and salty taste. Most of south Indian families end the meal with curd rice / Mosaranna and pickle or the uppinakayi is the must to have it. Most commonly the pickles are prepared with Amla / Nelli kayi / gooseberry, lemon / nimbekayi, Amtekayi / Hog plum, heraLe kayi and mavinakayi / mango. Here we have most popular Mango pickle - midigayi or midi mavinakayi
    uppinakayi.
    Ingredients:
    30 to 35 Midi kayi or appe midi
    ¾ cup Salt
    ½ cup Red chilli powder
    1 tbsp mustard seeds
    Many varieties of mangoes are available in the market during this season. This particular variety mango which we are using in this recipe is called midigayi or appe midi which is very small in size, and it has unique flavor compared to the other varieties.
    Ingredients:
    30 to 35 Midi kayi or appe midi
    ¾ cup Salt
    ½ cup Red chilli powder
    1 tbsp mustard seeds
    ಬೇಸಿಗೆಯಲ್ಲಿ ಹಪ್ಪಳ, ಸಂಡಿಗೆ, ಉಪ್ಪಿನಕಾಯಿ ತಯಾರಿಸುವುದು ಒಂದು ರೂಡಿ. ಅಂಗಡಿಯಿಂದ ಕೊಳ್ಳುವುದಕ್ಕಿಂತ ಮನೆಯಲ್ಲಿ ಮಾಡುವುದು ರುಚಿ, ಸುಲಭ, ಮತ್ತು ಆರೋಗ್ಯ . ಇಲ್ಲಿ ಮಾವಿನ ಮಿಡಿ ಉಪ್ಪಿನಕಾಯಿಯನ್ನು ಹೇಗೆ ಮಾಡೋದು ಅನ್ನುವುದನ್ನ ತೋರಿಸಿದೆ .ಕಾಲದಲ್ಲಿ ನೀವು ಇದನ್ನ ಮಾಡಿಟ್ಟುಕೊಂಡು ಸವಿಯಿರಿ.

      Now if possible can u suggest a way to get rid of excess salt water ( in the 1st process where we soak mangoes in salt)
      May be reduce the quantity of salt water to b boiled. bef adding other ingredients?
      I am totally new to this method of pickling mam.
      Pls guide me.

      you can keep it for year+ but make sure add enough salt while doing the pickle. Add khara whenever you use

      yes you can, same quantity. no need to keep in sunlight, you can use once you out the khara

      I suggest to use saindhava lavana (Syndha namak) which is not having Iodine , Iodine salt will spoil your pickle

      @@SwayamPaaka Illa madam, yelekai. Till I removed them from salt water (to boil it ) they were firm, but after putting them back into the masala mixed salt water, 1 day later they became hard !

      Thothapuri mango is not suitable for pickle as it has very short shelf life...enjotyThothapuri mango slices with red chilli powder and salt

      especially in midigayi pickle you cannot do anything. transfer some to a bowl, add cut pieces of mango. it may help to reduce the salt
