She can. She's using falsetto here because: 1. It's an acoustic cover so it's more intimate/mellow; these versions of songs don't require that much high belting. 2. She's sitting down and playing the guitar at the same time. Hitting the high notes while doing just one of these things, let alone both, is a feat in itself.
