As a guitarist I easily get into a cycle of riffs/solos etc that pretty much sound very similar, so to get myself more creative I study the keyboard and orchestration of songs I like and transpose them onto guitar and play them in clean tone ambient style. It gives me a completely different perspective on the songs and leads me off in lots of different directions inspired by different elements of the same song. Plus its fun and sounds really different.
I have a few different approaches to songwriting. As a guitarist, I usually sit down to write with either an idea of the kind of song I want to write, and start writing riffs and solos that way, or with no idea, and will noodle until I find interesting parts that I'll record and store later. I have little "riff collection" recordings in my phone that I'll go to and piece songs together from those.

I usually just come up with one idea and add on to it in says that make sense, and makes it feel like a song.
I.E, in one of my bands songs, it starts with a string intro, so had that lead into a more fast pace, catchy and driving riff, into a verse-chorus cycle, to a bridge/solo section, to a build up, and ending it with the same string theme this time over heavy power chords.
To sum it up: I take an idea and build off it.
For me the real struggle is i only know Basics in music theory..so its kinda hard to figure out which keys/notes the Orchestral instruments needs to fit in the mix

Just out of curiosity what program do you use for your symphonies? I've got EastWest.
EastWest is phenomenal. I usually use a combination of that and some custom soundfonts that are built specifically for symphonic metal.
