if you add a large container of CoolWhip last, folded in, then it makes two pies ;) top with cherrry or any fruit pie filling
My Great Aunt from Mississippi made this pie in the summertime a lot. So good and perfect for hot days! She used the smallest frozen pink lemonade tube for a "pink lemonade pie." (All other ingredients were the same as yours, just replacing the lemon juice w/frozen pink lemonade - thawed to mix.) She added Nilla wafers around the edge for decoration.
I've been making this since I was 7 years old, and I'm 50 now. I am going to recommend that you DO NOT use lemon juice out of a bottle, but squeeze fresh lemons. The taste is SO much better! I usually use 6. Also, brush your crusts with butter and put them in the oven at 350 degrees for about 5 minutes. Nilla wafer crusts taste pretty good with it too.

Made one tonight with fresh lemons and all I had was a regular pie crust which I baked a few minutes and had to wait for it to cool off. Turned out great.

If you put the cream cheese in it, you will not need the egg yolks. It is plenty, plenty rich.

I am sure this is delicious but if you want to take this up a few notches, add egg yolks and lemon zest then bake for 30 minutes at 350. It is really quite delicious.

Oh, rats. I just remembered something. I'm diabetic and can't eat pie (AKA sugar). ☹️
Yeah, the only part of this I can have is the lemon juice. It looks wonderful, though. If you can tolerate the fat (actually worse in the long run than sugar for diabetics) you could whip the cream cheese with the lemon and add some stevia or other sweetener to taste. If you stay away from sugar as a rule you should be able to get by with less than someone who is used to it. Put it in a custard dish and top with fresh berries and that cuts the carbs from the crust.
@@dianeladico1769 Whomever told you fat was worse than sugar in the long run, was dead wrong. It's just the other way around. All I eat is basically bacon and eggs and I've been doing that for several years now. My diabetes is under control but my main source of food is fat.
@@WhatDadIsUpTo This comes from several of the leading experts on nutrition, confirmed by my own endocrinologist. Absolutely, sugar needs to be restricted but it's the fat that causes and propagates insulin resistance in T2D. Get the fat out of the muscles, liver, and pancreas and T2D can normalize or even reverse.

It's not my intention to cause a fuss. My previous doctor told me to avoid carbs and eat meat and not worry about fat. My medication doses increased like clockwork. When I started going to the major hospital here (top ten in the nation) they said, sure, limit sugar and flour but cut the fat, drop the meat, eggs, and dairy. Since then I've lost a bunch of weight, dropped two meds and my a1c is that of a nondiabetic. We're all individuals and YMMV but I wish I'd learned this years ago and if I can help someone else, I will. I can only say what they science says and what works for me. Be well.

Eagle brand in bowl
Add lemon juice & mix
Pour into crust
Refrigerate for 2+ hours
Whip cream for garnish
