Can't wait to cook this. Thank you for sharing your family's recipe , Damian. Agree with everything you said about knowing and preserving one's heritage. I am hainanese and often think fondly of my grandparents, dad and aunts when cooking their recipes. Now I tell my son what home-cooking means to me when i cook him his all time favorite Hainanese beef noodle soup.

Thank you Chef Damian! This looks like the kind of curry I like! I truly regret not learning my grandmother's curry rempah (Malay style with the candlenuts, galangal etc)🥲She usually used the mortar and pestle. Then she would cook a whole wok of the rempah and distribute to us different families. We were all spoilt.

I love when people cook with heritage and heart in mind. And I am a strong believer of preserving and expressing culture through food.
As a product of a mixed race marriage (Chindian with Tamil, Peranakan and Hong Kong Cantonese roots from Malaysia and Singapore) and having lived extensively in Asian countries, I have a strong affinity for South East Asian cuisine. And Chicken Curry pretty much epitomizes the broad spectrum of the 'same-same but different' notion across these countries. I love it!
One correction though - Sotong Masak Hitam is not exclusive to Singapore. Never has been. It is a classic Malay dish also enjoyed by the Peranakan. I've also had it several times in Indonesia. Unlike shrimp or prawns, sotong (squid/cumi-cumi) is less popular these days as a singular dish and the Masak Hitam method is an acquired taste and can be visually unappealing compared to the more familiar Sotong Sambal (with Petai please!).

Born in JB Johor, we've always had sotong masak hitam ( squid in its ink) it is a Johor dish. Johor and Singapura were 'one' 80 years ago....

Yeah I’m thrown off by the term Eurasian curry. What’s the Euro influence here? Potatoes and tomatoes that are native to South America? Were natives of SEA confused about these fruits and vegetables and what to do with them until European traders said “Throw them in the curry and thin out the broth!”

But a very fundamental great mistake in classifying the Sea Gypsies population as malay or Melayu or Malai as spelled in British legal records.
The sea gypsies is brown skin aborigines but not the same as malay or Melayu.
Malays or Melayu are not natives of peninsula malaya , Malaysia, Singapore or even in southern Thai .
The word Melayu originated from Jawa, Indonesia which means criminal fugitive and the land they ran to is called Tanah Melayu.
Singapore was discovered by the British Sir Stamford Raffles . He recorded sighted a few sea Gypsies only when he landed in Singapore and there was no record of him ever sighted any Melayu or malay.
The southern and certain western part of peninsula malaya have linked with Sumatra, Indonesia during the 300 plus years of Dutch rules.
That is the reason the Melayu abdooos from western and southern part of peninsula malaysia originated from Sumatra despite their blatant denial. Those from the north and East Coast of peninsula malaya originated from Jawa, Indonesia.
There are many small tribes of genuine natives of peninsula malaya and malaysia, they are called Orang Asli and Orang Asal , who are made up of kadasan , Dusun, termiah etc.
As undeniable fact the Eurasian, Siamese etc have been habitants of peninsula malaya much longer than many malay abdooos in peninsula malaya.
