- Based off a recipe of one of my favorite Lagers, lets brew a Munich style Helles Lager! But, more importantly, lets talk about how it went and how we can improve.

My gear: (listed in order of appearance)
• Water Filtration: Portable Reverse Osmosis water filter
• Digital Mini scale, 200g
• Mash Tun: Anvil Foundry (6.5 gallon capacity)
• Anvil Steam Condenser
• Grain Mill: Malt Master R2 Pro (modified with corded drill)
• Hop Strainer: LUCKEG Brand 300
• Fermenter: SS Brewtech 7gal conical with FTSS and FTSS extensions
• Hydrometer
• Keg: 2.6 Gallon Torpedo Slimline Keg
• 5 Gallon CO2 tank and regulator
• 5 Gallon Wide mouth PET carboy
• Custom built Keezer System with Intertap Taps

Hey I think the sulfur is from the pressure ferment. I get it if I let the pressure build too early. I prefer to spund the pressure just at the end of the ferment. Give it a try!
That’s actually what I’ve been doing recently on my spunding ferments, I’m going to have to try this recipe again and see if it makes the difference!
I’m looking to get more sulfur on my lagers. I like it lol.. I spunded and pressurized at yeast pitch. Also keeping the fermenter at 50F should help. We’ll see

Great video first video I seen of yours. Wont be the last. For the sulfur you can off gas the beer from the keg and that will clear up the problem.
Good stuff, my german pilsner is carbonating now. Used Novalager yeast too.

@@5minutebrewery I just brewed and kegged the Helles lager kit from more beer, it’s pretty good! I used the cellar science German lager yeast.
Dogs not wrong there is no such thing as a bad free beer in my eyes.
I’ve got a batch of Mexican Lager with NovaLager right now. No sulphur notes at all but I didn’t ferment under pressure. Interesting for sure and that’s too bad you’ll have to brew more 😂 cheers 🍻

A local brewery around here has a Novalager Mexican Lager, and it's excellent! one of the reasons I gave this recipe a try. Exited to hear how yours turns out!
What a coincidence, I just put a Helles on tap a couple weeks ago. I did a mix of Pilsner, Vienna, and Munich I (67:22:11), all Weyermann. Came out supper malty 5.3% ABV. It's a great beer for right now as the weather is starting to cool off.
Then you mentioned you used Novalager. I've got a fresh hop lager conditioning right now that I fermented with Novalager around 12psi. Lallemand's info says they specifically designed the yeast to inhibit sulfur so that's def a weird one. I'll be interested to see if I get any sulfur notes like you did. I still got some time until I find out though as I got a whole keg of Helles to drink first.

It certainly is odd, I was initially wondering if it was the stress from pressure fermentation. However, *spoilers* the light lager I brewed alongside this one was fermented with the same yeast and a more traditional no pressure/cool temp setup, and I still got noticeable notes of sulfur in that batch as well. Curious!
Pressure fermentation tends to trap sulfur, in my experience. For really delicate styles like Helles I prefer to do traditional low-temp fermentation.
Good call, that could definitely be a factor as well!
I haven't noticed any issues with 34/70 at higher temps and both with and without pressure
do you use whirlfloc tablets?
I used to, but moved away from using them. I wasn’t too sure they were doing all that much, and it’s another thing to order/remember to add in.
I use Biofine and gelatin to fine my beer on occasion but at the end of the day I feel like it’s kind of up to the yeast weither or not the final product wants to drop clear anyways!
