Can you Substitute blue cheese for Gorgonzola I’m guessing yes but I thought I’d ask?
I'm watching this 9 years later and Chef John is an absolute gem. His humor and skills are so spot on.
This is such an outstanding, quick meal. Its rich, so you don't need to eat much to feel full. We were in some time constraints when we made it so we didn't use the apples and walnuts. The dish can be prepared (minus the apples and walnuts) in a matter of fifteen minutes at the outset. Honestly, I wouldn't have thought to include apples and walnuts anyway. But, I can easily see how they would add to the flair, flavor and interest of the dish. I think it would be a nearly perfect Valentines Day meal after work if there's someone special in your life (or really anytime). You'd have both the time and the room to fix up a very nice dessert. Important note: pay attention to Food Wishes instruction to put your *quality Gorgonzola* into the freezer for about ten or fifteen minutes prior to crumbling it up. You'll make it infinitely easier on yourself.
The idea of putting apples and nuts with the gorgonzola sauce is stellar.
Just made the sauce but used gnocchi instead of pasta. Also added a little bit of English Stilton with dried cranberries which I had a tiny bit leftover. FANTASTIC!!! Had a similar dish about 8 years ago at an Italian restaurant. So happy I came accross your recipe. Now I can make a much better sauce at home. Thank you, Chef John.

This recipe reminds me of my favorite recipe for steak. After the steaks are cooked, in the same pan, combine 1 cup bleu or gorgonzola cheese, 1 cup butter, and 1 cup cream. Cook until well blended, the cream is thickened, and the butter melted. Pour over steaks and anything else that happens to be on the plate (baked potato, vegetable, etc.) and enjoy. I made this for my mother who hates stinky cheese, and she put it on everything but her dessert. The sauce is rich and flavorful.

That takes less than a minute, so never a problem.
About 20 years ago I was a waiter at a nice hotel restaurant in Nashville TN and we had a stuffed breast of capon that was breaded and partially cooked on the stovetop then finished in the oven. It was stuffed with a blue cheese and herb butter (thyme) and then served with an almost identical blue cheese cream sauce to this and a little blue cheese garnish. I love walnuts with blue cheese mashed in some cream cheese for stuffed celery.....mmmmm!
I watch food wishes mainly because his voice is so soothing and the food looks so appealing ahaha

THANK you! Had gnocchi with gorgonzola sauce in Rome SEVERAL times and chef wouldn't give up recipe! LOL Now I just have to create a recipe for walnut ravioli for this!

This is just my observation but in general, on CZcams, you can tell a chef from a cook because cooks would have stopped before the apple and walnut went in. Chefs' almost always need some extra thing most people would never think of.
I finally got around to making this last night and it was spectacular! Even my wife and kids, none of whom are moldy cheese fans, enjoyed it.

Very similar to how I make my Alfredo sauce minus the Blue Cheese. I usually sauté butter in a pan and lightly brown some garlic before adding my whipping cream, and I use both fresh basil and parsley. Chef John is a genius in the kitchen.
Nothing is more torturous than watching anything he does while laying in bed and starving at 3am.

I always thought I would like blue cheese since I like very strongly flavoured cheeses, but I didn't like blue cheese the first time I tried it. I read that for some people they don't like it at first, but through small amounts over time you can acquire a taste for it. I'm planning on trying that, because I really want to be able to like blue cheese.
I imagine any cheese that melts well would work as a substitute, obviously it'll taste different so it'll just have to be something you like.

Lovely Chef John ^^ Thanks for this. And indeed adding nuts to gorgonzola sauce isn't at all weird. There's a classic italian sauce called 'Gorgonzola e Noci' which contains walnuts I believe.

I just tried this with a few substitutions: mainly Feta in place of Gorgonzola, and chicken breasts pan fried in olive oil and seasoned with oregano, parsley, and garlic. Still, it has to be both the easiest and most AMAZING pasta sauce I've ever tried, let alone made.

Whipping cream sometimes includes added sugar. I'd check to make sure. Of course, cream in general is sweet due to the high amount of milk sugars.

I live in SoCal for the last 10 years and you're right the food is order of magnitude more diverse indeed, but everything is prepared with very low quality ingredients because that's what the FDA allows. How many Americans know the taste of real chicken, of unprocessed milk, of real tomatoes, I'm talking about basic food here. Diverse (in term of ethnic) doesn't equal quality. The big + of Chef John is he always push here and there to use real good quality ingredient like home made sour cream.

He has a recipe where he uses goat cheese, fried apple and walnuts you may want to check out, but as a fan of sautéed pears on baked Brie, I like where your mind’s at!

Because some people would miss-time the pasta, and their cheese would be sitting in the sauce, and could get too cooked by the time the pasta is added and mixed. I have to think of every possible scenario with these people. ;)

I like this sauce with a nice steak or roast beef. I use gnocchi's with this. Totally amazing! Use good quality gnocchi!
