    I cook a lot of Italian sauces and from trial and error / experience I found out that cooking the herbs really delete their flavor... so put w/e herbs (rosemary / thyme) when you're simmering the sauce and put the basil a couple minutes before you're going to serve the sauce, dont cook / sweat them along with the soffrito and stuff because really the flavor will disappear by the time the sauce is done simmering.
    Also to make things easier I prefer to bake my meatballs rather than frying them because frying is a messy job to do at home :P
    Nonetheless this guy's recipe is real legit tho. Meatballs + Polenta is just heaven in your mouth.

    Having a small amount of a binder in your meatballs is important because it retains the juiciness of the meat and soaks up some of the fat, holding it in the meatball. Fat = flavor. Meatballs with a bit of binder in them (some nice, seasoned, house-made bread crumbs, for example) are better.
    Otherwise this is a fine video, if a bit over-complicated. I don't know why it's so commonplace for people to overthink italian sauces, but wowee whoever cooked this up overthought the crap out of it.

    I really recommend using cheese in your meatballs. I use cottage cheese with grilled peppers in mine, they get really soft and juicy.

    I made this sauce recipe today as I love trying new versions and it was extremely thin. I don’t know how his is so much thicker. Very tasty but I’ll stick to my own.

      the veal breast has a little meat with a lot of bone. I suspect it was used to get gelatin from the collagen as the bones slow cook.

    if you ever did a soffritto with basil in italy ppl would say you have no concept of cooking, sorry mate. basil + high heat = nono

    Weather his way is wrong or write to a grandmother in Italy doesn't matter he's a restauranter with a lot off ability.i bet this dish would taste nice to stick to traditional methods can only go so far I'd give it a go at home and I bet I'd pay for it in a restaurant.

      He didn’t explain that well but I assume that it was just used to flavor the sauce. Those are cuts that you’d typically use in a stock

    I understand this video is now 5 years old...but did he change his recipe over the years? If you look up his recipe, in his book, interviews or online it is now 1 lb veal (meat) and 1 lb ricotta. In this video he says the ratio is 2 to 1 (02:52 minute mark) ...which I would understand this to mean 2 lbs veal (meat) to 1 lb ricotta. correct? Printed ingredients and their amounts everywhere else I've found this recipe, states 1 lb veal and 1 lb ricotta. This makes a big difference in the result. Someone help me out. Am I missing something?

    Now I feel ashamed to serve my meatballs! I usually use prepared/frozen hamburger patties & just turn them into meatballs, roll them into flour & fry them.
