I don't have a pressure canner, so what I do is soak my beans over night (I soak a lot) and then I slow cook them in my slow cooker on low for 4.5 hours. Once they are all cooked, I bag them in sandwich sized Ziploc bags, using a serving spoon with slits to not gather up too much liquid. I fill them about half way then lay them down flat and stack them in my freezer in my kitchen. Once they've frozen flat (easy to store and thaw) I move them to our larger freezer in our garage.
Thawing is a breeze, I open up the bag and add warm warm and that helps to allow the beans to slide right out of the bag without needing to break it open, so you can wash the bag and reuse it for something else later. You can pop them into your stock pot or skillet at that point and cover it with a lid for a few minutes to get them to thaw out thoroughly.
And that's it!
I don't want to dismiss what you are doing with your empty jars, i love your are so diligent and just wish that I could do this, too. My health is very poor at this time. I saw another use for our empty jars that might help those of us that could be left without water services. We are currently in flood stages and our water in many areas has been compromised. I saw full shelves of canned WATER. What a good idea to put clean, safe drinking water in glass and can them.
I took the turkey carcass home from my Aunt’s Thanksgiving and made broth too. My family thinks it is crazy to make broth. I just nod and smile and cook down those bones.
And they probably go to the store and spend a fortune for a little box of bone broth! :-)
If your kids like pasta, cook up some elbow noodles and put a scoop of them in the bowl before adding the chili. I didn't grow up eating it that way, but my husband did. I started doing that with our kids as well. It's a great way to stretch that chili out and turn it in to a chili mac.
I have been doing this as well since I first started to follow you about 2 years ago. It's just me and hubby, but we're doing it☺️ and it's nice to know that no jars go back empty to the pantry.❤

Such a great idea! It is just the two of us as well. A makes perfect sense to save on storage space! I love the idea of canning in smaller batches. Have been making Jessica's cranberry juice for two years now and really like it!😊

Another way to fill empty jars if you don't want to dedicate as much time cooking and canning is to put together the dry ingredients for different baking projects. My kids and I put together brownie mix, pumpkin muffin mix, zucchini muffin mix and biscuit mix yesterday :) they had a blast and it saved me some time on future days!

Good morning Jessica and family! Such a good idea keeping the jars full, even for two people like us. Made a batch of your cranberry juice this week. Get my cranberries here once a year from Snopac foods. They are based here in Minnesota, so it is nice to support a more local business. I really like all of the ideas from this week's video. It is wonderful motivation for the winter months!
You might be doing this already, but an idea and easy source for making broth. I was able to get 27 lbs of beef femur bones left over after butcher from my local mom and pop butcher shop for $1lb. They filled two 18qt. roasters and will make wonderful broth with the marrow in it, yum! This time of year as you know, is the busiest time for butchers and easier for someone who is looking for a good inexpensive source for making broth.🥰😊God bless and take care!

I had an idea for a "cupboard challenge" for me to try throughout 2024. I have more cook and bake ware than room to keep it in my relatively small kitchen.. Some of it is on the sentimental side as in Aunt Mary's this and mom's that. My challenge to myself is to identify anything I haven't used in a year and repurpose, re-home, resomething it. Wish me luck!

Thank you Jessica for inspiring all of us! I have been canning cranberry-apple juice and cranberry orange sauce. I have frozen raspberries that will be turned into jam soon! Pineapples are on sale this week and I may can those too! This is a great time of year to start a batch of vanilla extract which will be ready at the beginning of fall for baking! I also dehydrate grape tomatoes to use on pizza, etc. The possibilities are endless! God bless you and your family!

I always enjoy your little bit here and there canning. I realized as I was watching you make your chili base and your beans that it would be easy to can a base to make the Italian soup Pasta Fagioli. I lived in Naples Italy for 2 years and locally they don't tend to add much meat to it. So doing a can of "tomato base" the cooked beans and the pasta would make this all day dish come together quickly. Especially if you added your garlic pucks or garlic scapes to it. Just an idea for the future if you wanted a different flavor. I'm doing pumpkin cubes and turkey broth this week too! Have a great week and thank you as always for your inspiring videos.
I would recommend putting cardboard on top of the lower jars before stacking.

It’s great to see some of these winter canning projects as I’ve made a list of a few things too that I don’t have time to do in summer, I’ve made raspberry jam (frozen from my allotment) and used up all of my tomatoes to make pizza sauce. I will be making medlar jam this week. I’m tempted to buy some cranberries now too as you gave me lots of ideas 😁

This is my norm too, since I found your channel. It's probably the 1st tip I picked up. But right now, I am in the empty out freezer and jars stage since our solid 9b zone has it's best planting time coming up in just a few weeks (Christmas Day anyone??) Already putting in green onions, garlic and lettuce. I'm late on the garlic, but I'll manage. Will be checking big freezer for any spare cranberries for juice and sauce though, making way for this year's harvest. YUM

We generally only have two of us for meals but canning is still well worth my time. Last month we picked up our Beef and pork. I need to can some of that. Beans are on my list too. Now that cranberries are available I will get some to can cranberry juice too. I wish my adult daughters would realize they could do this too. Happy canning!

Like you I like to make meal making simple. When I feel good I take full advantage to do canning. I don't have a freeze dryer so I dehydrate and freeze ingredients for later use, and it is so convenient.
