I like how all the ingredients they used for this dish has similar appearance to what we already have.

The most expensive thing here would be a scorpion-lookalike, basically a giant lobster tail.
You want a better substitute bro? Try moray eel.... But, They're really best marinated in soy sauce. You're right about lobster tail being expensive. Even on Maui you can't spear fish, net and cage catch em outta season. DLNR has eyes everywhere.

You could substitute the scorpion with crab or giant prawn.
The veggie "root" substitute is either carrot or taro root.

Almost if not all dungeon dishes here are inspired from real world dishes.
Giant scorpion is basically the land version of crayfish/lobster, slime is land version of jellyfish, basilisk is literally giant chicken with snake part, mandrake is... turnip perhaps?

It must have taken a lot of cuisine cooking methods and biology research to make this and other monster cooking series. I was most surprised by the slime part
I already expected that slimes are living amoeba but didn't expect to be used as noodles like jelly fish or conjac
Slimes, at least as depicted here, are some sort of mollusks. Their outer 'slimes' are actually gastric fluid.

Well, there are alot of different interpretation on what constitute a slime. Some author made them into amoeba and some made them acidic viscous liquid. This author made the slime have a similar preparation with jellyfish.
If you substitute lobster for the scorpion, mountain yam and taro for the roots, and konjac or jellyfish for the slime, you can totally make this in real life.
Wood ear fungus for the algae
Or soba noodles for the slime

Senshi whippin out dried slime was such a Food Network moment. It's in-character for him as you find out later on, but as it's happening in the first episode of the show, it makes me think of Rachael Ray or some other TV chef going like, "and let's pop this in the oven! And as it so happens I've got THIS one in the oven that's JUST finished cooking..."

Fantasy anime is so much better when it isnt isekai
Isekai can be good, even great, but so many aim for lowest common denominator power fantasy. And actual fantasy anime aren't immune to being used for similar things.
I mean it sort of is.
Winged Lion did get isekai'd into Dungeon Meshi universe.
The problem is most isekai stories are self insert and power fantasy of the author.
I've never gotten into DnD, but suddenly I'd love to play a prolonged dungeon crawl campagin where you have to survive off what you kill and collect recipes / trade with other adventurers
I've done it in different ways, and it's super fun

In DnD lore, a huge part is how many useful ingredients are in monsters, and how complicated their ecology could get. It's missing from recent books, but this anime really scratches that niche I miss a lot)
I think the biggest thing a lot of fantasy forgets is the details. We love a world sertting because we know so much about it and how it works. Dungeon Meshi is perfect!

I really like this series. Early story it so goofy make m forget, they are actually top adventurer, who ventured to the high-level floor. Then suddenly become serious when they descend to certain floor of dungeon. However, right when i thought shit got serious the author slap me with another goofy yet detail on monster recipe and elf reaction.

Well, for this one, you can replace the walking mushroom with regular mushrooms. The giant scorpion could be substituted with lobster, crab, or maybe crayfish (Laios is mentioned to have caught the scorpion like a crayfish). Scorpions can also be eaten IRL. Aside from scorpion, the slime substitute would be the most exotic to most western viewers. It seems to be prepared in a manner similar to dried jellyfish.

I started off with the anime. Then when it ended I moved on to the manga. Toei basically screwed that series over bc it could've been a huge money maker for them if they had kept it going. But nope. That effort went into DBS and one piece

Funny enough bugs have far more protein that is enough for the human body to eat. So Something as large as that scorpion plus when you cook food right it brings out the best flavors, so having him really take the time to cook that bug meat is really appetizing
the human body can not get more protein that is used to (you need to take some strange things like the bodybuilders injections to absorb more protein), also even if bugs have more protein, not all the protein is procesed in the same way in the body, and the less risk to eat is the chicken one, if you fk it the preparation of a fish, you could get an ill, or if you eat red meat regularly your joints and other parts of your body get ill, and yes the chicken has a lot of hormones, at least the nowaday chicken, but it is the last one doing bad to normal people, but you can also eat some seeds that give you protein, here in méxico we have a soup of one of those seeds, it is pretty tasty and some people use it to make tasty vegan meat for hamburguers, i eat chicken every day because of an ill in my stomach, but i miss the vegan hamburgers of that seed because they were pretty tasty and you did not feel overwhelmed by the fat of traditional hamburgers, it is a pretty good way to eat a hamburger without worrying about your weight or the fat you eat, but you need to take care about some vegan taste amplifiers because they can ill you.

When I first stumbled across this anime in Netflix I thought it wasn't gonna be popular due to it being "generic" although I liked it for being one of those 100% classic D&D based series but in the end it became popular and I'm so happy for it.

Surprised this is really the only party to engage in eating in their environment while everyone else brings rations. Especially in a world where everyone is functionally immortal due to resurrection spells so the risk is greatly diminished against the reward.
