Someone on your Easter prep video gave a tip on easy peel hard boiled eggs. They said to drop them in ice bath and peel right away. I have chickens, made fresh hard boiled eggs yesterday and used the tip. It's the 1st time ever not a single shell stuck while I was peeling. I can't believe I've been doing it all wrong for over 40 yrs. To that person, you're my new favorite person!! 😍
Yes, that tip works well, i start mine at room temperature and add just a bit of baking soda to the water. They peel so easy, i used to hate peeling hard boiled eggs because they always stick and i would tear up the eggs. Not any more. Lol
I watch you every single day and have been about 2 years now i have learned so much from you somethings i do use and some i dont but its just watching you i do enjoy you so much.
I never have an egg peeling problem when I do them in my pressure cooker. 6 min and done. Of course, that doesn’t include the time to come to pressure. Can do up to 2 dozen at a time.
I usually run mine under cold tap water.. that works for me to.
I have done that after seeing it several years ago. I also add a little olive oil in the boiling water before I add my room temp eggs. As I drain the water I swish the cooked eggs around the sides of the pan cracking the shells then put them in ice water and peel.
Cleaning is always necessary and this is where my mom helped. She had 5 girls and 1 boy. She cooked every meal until we each turned 11 and at 11 we were taught a dish. Mine was macaroni and cheese which means I learned how to make a cream sauce, light, medium, and heavy. I learned how to add flavor, in this case cheese. And I learned to make 2 vegetables to enhance the meal. I also, at 11, became responsible for preparing the dinner every Thursday. My oldest sister had Monday, spaghetti, and Saturday, pizza. Susan was in charge of Tuesday, Baked Beans with hamburger. My brother opted out and therefore had to make the salad 2 nights a week. My mother cooked the other meals but this gave her a break from cooking during the week. Even if you only have one, remember he can and should learn to cook and help clean up the kitchen. At 4 and 5, we could set the table, and the dishes were the responsibility of those that did not cook the meal. Your son will love learning and his future wife will appreciate your efforts. Hope is beautiful. In 4 or 5 years your job can be easier.....with a little help.💞
Did similar with our kids. We also had cleaning jobs (NOT a part of an allowance). If one child was notoriously messy in some area, their job ended up being in that area. The boys learned to hit the toilet early on. The girls learned to not make a mess in the sink when they put on their makeup. Philosophy: No one is going to pay you to do your chores as an adult. Clean clothes, meals, house cleaning and bills don’t differentiate between male and female. Learn this early on.
My mom gave us a meal budget. We had to select the dinner menu, get the recipes approved, and create the shopping list too beforehand. This encouraged so many lifeskills in us. We learned creativity, preparation, research, planning, and budgeting. Mom was a wise woman. It became something of a competition to try new recipes between myself and my 2 brothers. They are better cooks than I am.
Yes! I did this with mine, too (2 boys, 2 girls)! What was really cool was that if one of them wanted to not make dinner one night, they taught a sibling to cook that meal. Win - win! On their 8th birthday they learned how to use the washing machine and dryer to do their own laundry, and my husband does his own laundry as well. These days the only laundry that I do is my own.

Pie crust tip: this started with my mother’s mother. Whenever any of us rolled out a pie crust we would cut off the excess, press it into a smaller disc and roll it out again. You then smear the top with softened butter and a mix of sugar and cinnamon. Then roll it up, cut it into 1” pieces and pop it into the oven along with your pie. Cook until lightly browned (about 10 minutes). This special treat was always given to the assorted kids who were hanging around waiting for the pie to cool, lol.
Omg, my Gigi did that too. She called them sugar and cinnamon horns because after rolling them up she would bend them into a slight U. We LOVED them ❤❤❤

Congratulations on the new developments in your garden -- very wise to establish the deer fence barrier in this initial phase!! May I offer 3 suggestions for this first garden season? 1)Buy some "deer resistant" plants (lavendar, coneflowers, zinnias, lambs ear, butterfly bush, allium, dusty miller, japanese forest grass, etc) to plant in large pots strategically placed along the outside of the upper fence line (where there is no retaining wall block). The large pots themselves will add another deterent since deer often avoid jumping too far away from a fence boundary. 2) Add small pockets of cascading plants in between the upper retaining wall stones (along the roadway) like creeping thyme, creeping phlox, trailing lobelia, strawberries, etc. This will soften the wall appearance and encourage pollinators at the top of your garden. 3) Lastly, perhaps Josh could build you a simple portable "veggie wash stand" table to position near your back patio, so you can do the initial rinse of garden produce before going into your kitchen. Sow the Land YT channel has a "DIY vegetable washing station" video showing how to use an old kitchen sink connected to a garden hose hook up with a galvanized mesh top as the "drip dry" area. Build it on wheels so you can store it away during the winter or move it to specific spots during busy harvest season. Can't wait to see the progress this summer!

My husband got a single bowl utility sink for outside - connected to a hose so I can rinse off garden fresh produce. He attached the legs to wood boards so we can easily pick and store the sink in our shed for the winter. What a game changer this was

re: birdhouse I live in New York, so not sure if you have wrens by you, but i have a wren house over my vegetable garden. The birds are territorial (surprisingly effective for their size) but will only eat bugs. So the double benefit of allowing another critter to pick off cabbage worms from my brassicas for me while (trying to) prevent robins/bluejays from eating our berries and grapes have been helpful. Every year when a wren moves in to lay eggs, i name it Kylo Wren 🙂

While pre-heating the oven for pie/quiche, put the sheet pan in to preheat. When you put the pie plate on the pre-heated pan your bottom crust immediately starts to cook. My bottom crust is always perfect and no soggy bottom.

I freeze cream cheese for both recipes and spreading. When you thaw it, somtimes it has a bit of a crumbly texture which is not good for spreading, but you can put it in the mixer and whip it for a perfectly spreadable consistency. It’s get all fluffy just like the store-bought whipped cream cheese.

When I was a child and learning to cook from my mama, when she made pie crust, she would let my sister and I take the scraps and roll them out, sprinkle with sugar and cinnamon and put it in a pie plate and bake it. Then my sister and I had a fun treat. As Baby Acre gets older, that might be a fun way to create memories with him. Every time I roll out pie dough now...and I am almost 70...I remember those very special memories of cooking with my mama! Thanks for your videos! I watch every one! They bring me back to my younger days of cooking, baking, gardening and raising babies!

You will also be happy having that deer fence as a way to keep your son with you as you garden and he starts walking. You won't have to worry about him falling off the retaining wall and you can just concentrate on what you are doing.
I made these muffins 4 times now and brought them to a party...they taste phenomenal and were a big hit...sometimes when i bake something my man ask me :" is this a Becky recepy?" I love that you are using your grandmothers rolling pin. I also inherited my great mothers cast iron skillets and I use them everyday. I absolutely love them. I think about her every time I use them. My husband won’t even touch them out of fear of ruining them because he knows how special they are to me. It’s the small things in life that make matter.
Girlll I’m 61 and just found out two years ago the reason my crust doesn’t get done on bottom was because I was using glass pie plates. So I ordered stainless steel pie pans from Amazon and I haven’t had that issue since. Love them!
If you go back glass dish just use parchment paper then baking beans for 20 minutes then take it out of oven then fill quiche up with fillings
I make crust less quiche. I love it and basically no carb depending on the veggies you use.

That quiche looks divine! I watched a French chef make one on YT a couple of days ago and learned two things. I thought I'd share them here with you .
First, he does suggest to blind bake the crust. Once that is done, he brushes the crust with an egg white to "seal" the crust, then puts it back in the oven for 5 more minutes. He said it keeps the custard from making the crust soggy. I'd never heard that suggestion before think I'll try that next time.
Second, he gave some technical baking info that I didn't know. He stated that in a quiche, you should always cook your vegetables before putting them in the custard batter because the custard will solidify at 145 degrees, but the vegetables won't be cooked until a temp of 211 degrees. The chances of overcooking the custard are high if you don't pre-cook the veggies. I found that very interesting.

Miss Becky I would do whatever I could to deter birds from my garden. They will eat your berries they will eat your cucumbers there. Yeah, I would refrain from attracting them to my garden. I would attract them somewhere else on the property. That’s why people usually have like a scarecrow in their garden to keep the birds away so they don’t eat your corn and I’ll kinds of stuff, and that’s just my opinion
When my husband and I were looking forward to buying 10 acres so we could have a garden and chickens life got in the way of our plans. He had a mild heart attack and we decided to buy a house in town but we still can garden but on a very small scale in our backyard. I love watching you going through the process of starting a garden from scratch it makes me feel like I'm apart of the process. So rock on girl! You will eventually get your green house.

As a rule of thumb I always filled my cake pans and muffin tins 3/4 way full. That was how I was taught in school
I also inherited my Grandmother’s rolling pin and her tube pan. They have to be at least 70 years old. She used them for as long as I can remember (many years before I was born at least) and I’m 72

Yes. Excited for them. Another plus on that deer fence is safety for the little one! Also, as far as a greenhouse goes, having the flexibility is so important. Will have to extend our pad on our sloped property to fit our new, bigger one.
Please plant some clover for the deer and lawn outside the fence.

Purple Martin houses are really nice for a garden area. They feed exclusively on flying insects, such as beetles and mosquitos. Potentially cutting down on the population of destructive insects. They are generally on poles pretty high up. Best of luck with your garden!!
In Oklahoma we put Bluebird houses and purple martin houses. I don't know if your area has the same birds
You have to put the houses out or clean out existing houses in the Spring. It "invites" new birds to nest
I freeze milk, too, but the organic milk separates. I have discovered that I can put it in the blender and re homogenize it. You may want to try that with the half and half.
If you dump the mostly defrosted Half and Half in the blender for around 30 seconds it comes out great. Good choice on the fence. You KNOW that deer family was watching and saying, "Ha, free buffet coming any day now!"
A tip for getting the pie crust done is also to put it on the bottom rack. It will tend to brown up pretty good without browning the top too fast. I generally do all my pies on the lowest rack setting. Quiches as of late have been crustless for us. Helped me when I WAS diabetic.

Gluten free quiche
I never use glass dishes to bake quiche. Always use metal, preferably with a removable base. Then place on a preheated cookie sheet to maximise heat conduction. Glass is a really poor conductor of heat
You emphasized Was. Were you able to overcome this? If so, how?
Diet can reduce blood sugar levels if borderline. My friend staved off diabetes for a decade before now being labelled diabetic (genetically predisposed). She still only needs to manage with diet rather than tablets or insulin.

Yes, bird houses... Purple Martins, Swallows, Bluebirds, etc. Add some bird feeders too, maybe over near the chicken coop? Also consider mason bees (10× more effective pollinators than honeybees & they are gentle, & take very little effort).
Never encourage birds to be near your chicken coop. When the feeders get empty they will eat your chicken feed and your chickens can't get enough to eat if they can't free range.
I was going to suggest purple martins as well! I have a purple Martin house in my yard… Last year we had crazy winds, and it blew down. My heart is broken because this year I might have only sparrows nowhere for the purple martins.
Be careful with the bird feeders. I live in Washington too and they will attract bears. I have had 3 bird feeders demolished. Where we live the bears do not hibernate. It doesn’t get cold enough. Bird baths still attract birds.
Whenever I see your videos I get so happy! You are so sincere! I am so happy you went with the deer fence first. Think of this first year as a learning experience for your green house. Go through an entire year and see what you need to grow in there. Look at how surprised you were with all that snow! You will have your hands full with a garden 10 times bigger that what you had, and baby acre too. So as you say give yourself grace, enjoy what you have accomplished and then make adjustments for next year. Thank you for being you! ❤❤

Me and my siblings got my mum a greenhouse for her 60s birthday and we are starting a whole new garder for her. We need to out up fencing and other protecting for deers, wild hogs and rabbits. It is gonna be so mutch work but im glad for my mother to have a nice garden. Glad to have water beside the garden so it attracts birds and other smaller god things to the garden
Hi Becky! We used hog wire for our deer fence it works great but it will not keep out rabbits, so, we added one strip of chicken wire along the bottom to keep them out! Works great! ❤

If you use the black PVC coated hog wire .... you wont hardly even see it. It kind of goes invisible. ABSOLUTELY BEAUTIFUL garden space ..... so so pretty
I would suggest putting hangers on your fence posts that you can reach. That way, you can hang bird houses, hummingbird feeders, bird feeders or hanging flower baskets. The hangers allow you to take down and easily clean the feeders or houses. I go to Hobby Lobby and find whimsical houses on sale. Every spring, the birds will build nests inside. I clean them out in the late fall, if I remember. It's fun to be outside and hear a peep-peep, only to realize it's baby birds in a house you put up. 😊
As a canner you can’t say things like “water bathing” the birds in your garden. 😂 So awesome you are setting things up for your future garden plans as well. The deer fence was def the right decision, and your grown room has done so well this year, hopefully that helps in pushing the greenhouse back a bit.
Becky, do you and Josh like sweet potatoes? They're so similar to pumpkin. I make sweet potatoes muffins alot. If you add some orange zest and orange juice concentrate to your recipe along with every other ingredient, they make the most delish muffins. It's something about the pumpkin spice, brown sugar and orange flavor mixed together that is so stinking good. You should try that sometime. Of course I also add nuts and even sometimes raisins also. Yummy❤
If you want to improve the ecosystem/biodiversity, bee grass is really good - and very pretty. You can rake/rough up existing turf and scatter your bee grass seeds, rather than re-turfing completely. It can be mown quite short or allowed to grow - or a combination of both. Also, have you thought about growing some comfrey to make your own organic plant food? It stinks, but is v. effective.
I used extra half and half and heavy cream I was gifted to make buttermilk for a huge batch of biscuits I made and put away in the freezer. I think I made about 85-90. I know it sounds like a lot (and is), but that's a lot of biscuits I don't have to make each time we want them. We are a 5 member home with 3 being growing, active, and working high school teens. They love sausage gravy and biscuits on the weekends.
Oh friend be so so glad you did the deer fence! I know it feels like "how much could a deer eat" but as someone who lives a long way out, I will tell you, deer can be devastating! As in they ate every single one of my bean starts, and every single one of my cabbage, lettuce cauliflower broccoli. Totally decimated an entire garden in two days. You will never regret this!
As seniors, in our area, we get senior commodities every month…… this month the government gave us 2lb. bags of walnuts! We pick up for shut ins and several did not want their walnuts….. I am now the owner of 10 lbs of “freezer” walnuts. Lol. What does one do with that many? I inherited my mother’s rolling pin when she passed…… blessed pastry!

I don't know if you saw (side by side glass blurry), but you had one of the younger beef steers with horns just staring at you in the side by side (approx 8 min 37 seconds into video) looking like he wanted to playfully cause mischief perhaps, and one of the horses felt that, and walked up to herd them out of the location as if to say 'Not today tan steer", and then turned to you like, "Hey, tan steer was thinking about causing mischief, but I told him no. Ya welcome." Perhaps he was mischievous, or playful, or anxious, but whatever it was, your horse recognized that it wasn't a good way to be with you there and kept the steer in line. That is very cool, they are peace keepers. Loving the tons of basil! You can choose whether you want to let it get grow or not. Volunteer plants are the best! ❤❤

Becky, I am so happy that you are getting a deer fence up. Deer are relentless in the garden. I've been battling them for years. My husband has still not finished the fence he wants. You have a nice room right now for starting seeds that is almost as good as a greenhouse. You really are making the right decision. I've read that bluebirds are good for your garden. Maybe get some bluebird houses❤️
I live by myself with 2 dogs and I seem to manage to have 3 loads of dishwashing a day! My kitchen is never clean either. Watching your videos though is inspiring and teaching me how to be more efficient. Prepping more ingredients and processing more fresh stuff, even in small amounts, saves me time and means I can make extra delicious things with less effort. ❤

I completely understand the disappointment on having to postpone your greenhouse, but at the same time this will be your first year experiencing your lovely much larger garden. It might be less stressful for you to adjust to the scale of your new garden and then add in the greenhouse projects I'm sure you're very eager to start. Just a thought 🙂 I'm not at all saying you're incapable of managing both, you are a force to be reckoned with! I'm just a "silver lining" type person and I want to encourage you through the delay.

Blue Bird houses can go every 25 feet apart and they will have 3 clutches of eggs if you clean out their house between hatches. Also, Purple Martins are colony birds are prefer to have a condo with close neighbors. Their houses can be made to look awesome. Hopefully, they are birds that are native to your area. Tufted Tit Mouses are so dainty and cute with their smaller cute houses, and Chickadees too.
I’m 64, raised 4 kids! I still cook all meals, meal prep, or canning. Birthday cookies to mail for grandchildren. Yea my kitchen is Always dirty! As Is my sewing room! AS is my garden! Apparently I’m very creative!, LOL!

You can reuse Ziplock bags = I wash out with just hot soapy water and a sponge, (that goes into the dishwasher) and let them air dry.
Maybe you can freeze dry the half and half. It should mix up well, it should make a fantastic creamor. For the greenhouse area you can set up a spot for sitting and drinking your coffee
Your garden is going to be so exciting to plant up. Having the deer fence now is an excellent idea. You are working so hard to keep the little moles out, you definitely want to keep the large deer from your beautiful plants. Take care and spend lots of time hugging and playing with Baby Acre.

I love that you make quiche so often! My number one pie tip is to put your pies on the bottom rack of your oven!!! This gives you nice and crispy bottoms!

I was grating up carrots I harvested, had to give my hand a break so watching you and a hot tea was just what I needed 😁 trying to get as much done today day as I can for future preps once I get all 3 dehydrators going I will can up rest. I staggered my beds so my second bed of carrots will be ready at end of may so not killing myself with 2 raised beds full of carrots 😁
Becky before you cook your quiche do you blind bake it first so that bottom not soggy l always use parchment paper on top of your pastry then baking beans to hold paper down while you cook bottom of quiche for 20 minutes then put filling in
I have made these pumpkin muffins twice now and they are FANTASTIC!!! I can't make them very often because I will eat them all day until they are gone! ;)

I think you made the right decision with the fence instead of the greenhouse. One thing that would be helpful with the greenhouse, would be to dig it down at least 4 more feet to take advantage of the heat from the earth(and the cooling effect in the summer as well). Research a wallapini to learn about the benefits.
As much as you cook and share with others. When you can, treat yourself to a new countertop on your island from one slab of granite - no grout lines for our Becky!! Thank you for all you do❤
Just a little reminder Becky. Quite a while ago you gave us recipes for home-made cream of "fill in the blank" soup i.e cream of chicken. You could use the frozen half n half for those recipes. Also for mac and cheese and homemade pudding. Thanks for the interesting informative videos.

We love birds too! We live in Florida now but came from Maine. I don’t know if you are planning on bird feeders but we used safflower seed to attract the birds because the squirrels won’t touch it. Squirrels will dig around in your raised beds too. So we wanted to discourage them from hanging around.

When I make a quiche, I make two or three, then cool the extra baked quiches, wrap them up and freeze them. Then you just cut your pieces and microwave each piece as needed for a quick lunch or dinner
To make sure your bottom crust browns: when your oven is warming up put your sheet pan in the oven on the bottom rack. When the oven is up to temp, put your pie on the sheet pan, leave it on the lower rack and cook as usual. It has never failed me. I pre heat to 400 and lower to 350 When I put the pie in.

Becky, have you considered putting up some bat houses on your property? Oregon has 15 species of bat that are native, and bats are very important to pollination as well as controlling nuisance insects such as mosquitos. All over the country, their habitats are shrinking and keeping bat houses around your property can also discourage bats from nesting in your home (which, even though bats are cool, you probably wouldn't prefer...).
Every time I see you cleaning your eggs it takes me back to the 70's when I used to buy eggs from a neighbor. You never knew what you were getting, she raised many exotic breeds (her son made his own flies and the feathers were colorful), but also had ducks and geese. You got a combination, some were tiny, some very large. Duck eggs make the best cakes.

Add chocolate chips. Amazingly yummy. I have been making pumpkin cake, bread or muffins with chocolate chips since the 196O's.
Becky - your wooden handled bread whisk - if the handle dries out too much (as with dishwasher) it gets loose. Try hand washing to see if it will gain enough moisture to stay attached
Try shaking the half and half to reincorporate it.
