Saying that, I still do love an aussie classic, the burger with the lot. Beef, cheese, lettuce, tomato, onions, fried egg, bacon, beetroot and ketchup. Give it a shot.

Not a restaurant in america that can build such a burger. Maybe in&out burger or tommy burger in the 70s and 80s, but today im guessing they taste like chalk like all the rest.
Smash burgers are my absolute favorite! The only thing I personally would change is pre seasoning. If that rub contained salt then mixing it in the chuck will strengthen the protein bonds making it chewier than it needs to be. Add the rub at the end y'all!

We did this with bison in a pan, smash burger’s are always a hit with the family but that griddle looks awesome!!
Yes! Bison is great! Anything you cook on a Blackstone you can also cook in a pan but just less volume.
I love the concept. Try a medium dice on the onions and start then before the burgers.
