This episode is one I am super excited to share with everyone! I got to make tea with the leaves from Ancient trees from Qianjiazhai mountain.
Under the tutelage of Sister Ai, I got to take part in processing the leaves and drinking the final product!
It was a great experience, to see how the expertise and style of individual tea masters can play such a difference in the end product. I think that doing it myself gave me even more appreciation for the work that the tea farmers do, especially at top quality places where they are trying to be the best they can be.
I got a small number of cakes of these teas - I’ll make them at future live events so people can try it!

This has become my new favorite thing. I find the way you bring the Chinese culture and traditions of tea making into light for us westerns that have been plagued with Lipton tea bags. Traveling to the mountains of Yunnan and picking tea leafs with sister Ai looked absolutely beautiful and tranquil, i dream of visiting places like this and learning more about the Chinese tea culture

The amount of effort going into making teas is amazing! I love how sister ai checks the tea smell from the cup and the gaiwan to make sure her tea is up to her standards OoO
The effort is intense! This is why the higher quality teas are so much better than the bagged stuff 😂😂😂

Thank you!! There aren’t any white teas in this master series but they make them and I am taking back samples. They might show up in future subscription boxes🎉

'what an amazing process! Do they use any pesticides on the trees? I saw your good info on how "organic" isn't really a description, but would like to know if the items you are choosing for your box have had pesticides used on them?
No pesticides or anything - the tea is from wild trees in a protected rainforest. Because of fire season we couldn’t hike into the tea tree part of the mountain but you can see the mountian and part of the environment in the video I did where we went to the waterfall - the trees are on that same path maybe three hours hike into the forest :) check my reels.

This was extremely relaxing and informative. I was interested from the very beginning. The only thing I wish is that you might make some longer videos with more scenery. I'm so jealous that you get to be there. I want to see what you see. To be able to be there and watch the process. Their tea factory(?), or tea making facility looked super clean! I was impressed by this. I'd love to see a video of how you can tell the quality of teas! If that's possible. There is a special tea house in Portland oregon with a bunch of teas that seem to be high quality... but I also don't know what im looking for...

Oh wow, can only imagine how the warehouse, pressing room, and woks smelled! It's a shame you can't capture that in the video
My question is especially the stuff we get in the subscription box, will the plastic from the bags affect the tea leafs themselves if we decide to just buy it and store it like I bought a 12 year old aged white tea from you and I keep it sealed in its packaging for 18 years to make it into a 30.
The best way to encourage good aging is to remove the plastic and store it anywhere that’s not too hot not too cold and without any other smells that could transfer. So not a spice drawer. If you keep it in the original paper you should be good!
For loose teas, you can keep those in the bag, if you open them every now and then new air gets in naturally and will keep oxidizing the tea

What happens if you don’t fry the leaves?
Seems like much more than just dry the leaves after picking them.
I wonder how much is necessary and how much is tradition/superstition.
If you pick the leaves and go directly to drying, you make what is called white tea. The extra steps are added because over the years people have wanted to make different flavors and characteristics from the tea, and so they created different processing methods. This is the way to make Pu’er tea but there are other types of tea
My question: what is the difference between green, black, white, and red tea as well as roibos(sp) teas?
what does she mean when she says they kill green?
IIRC they're destroying enzymes in the tea that facilitate oxidation, allowing the tea to stay green instead of turning red/black.
