Sir ur style of description is amazing and I enjoyed watching ur all the rides ..
sir I hv few questions regarding interceptor
    1) how it absorbs the off roading terrains which we may encounter during our trips.
    2) mileage
    3) did u face problem of puncture and changing tyres since it’s not a tubeless tyre
    4) Himalayan vs interceptor for touring?

Thank you for the kind words. Glad you liked the videos.
I would say the suspension of the RE 650 is quite good for the price range. I haven't tried pure off-roading, but for bad, broken and under-construction roads (which is what we encounter a lot in India, whether we want to or not 😀), the suspension copes pretty well. The Interceptor's riding posture is also fine for that and you can stand up comfortably for short periods. The stock tyres don't have good grip off-road though.
Regarding mileage, I have got an overall average of 26 km/l. That ranges from around 22 to 33 depending on riding conditions.
I haven't had a puncture yet (touch wood!), but honestly, that is a worry I always have. I have added the Formula X gel inside my tubes, but how well it would work would depend on how bad the puncture is. My hope is that it will at least slow down the leak to such that I can ride to a roadside repair shop. And I always carry an air-pump. But it's a good idea to familiarize yourself with the wheel removal and fitment process if the need really arises. The stock tool-kit will let you do that. With some additional tools and a spare tube you can actually fix it yourself. But it will be be back-breaking labour (for me at least) and will take time. Not something you want to do in the middle of a long ride.
Himalayan or Interceptor for touring? I haven't ridden the Himalayan but I think it will be more comfortable, more suitable for off/bad roads and have better luggage carrying capacity. For me the only problem with the Himalayan is the engine. It's just not adequate to keep you happy on the highway, especially if you have a passenger and luggage. The Interceptor's performance is barely enough for me. With some modifications/upgrades the Interceptor can be a good touring machine too.
