Almighty God said

I'd peel the cucumber and score the flesh down the length of it with a fork to release the bitter juice. Don't have to do that if it's a telegraph cucumber though, only for the short or English ones. Raw carrot is too hard for me to eat so swapping it out for a red capsicum would work too I guess. Although grating or par boiling the diced up carrot to soften it a bit might make it easier to chew. Gunna give this salad a crack over the weekend....thanks for the recipe. Watching from Aotearoa New Zealand.
