- Eating nose to tail is such a nourishing and enjoyable experience when you understand how to work with the “odd” bits! Today I get to show you how I best enjoy preparing oxtail. Full of collagen, healthy fats, calcium, and glutamine, oxtail deserves a place at your table and all it really requires is that you have the patience to braise it!
Braising meat really boils down to cooking in a liquid and doing it at a low-ish temperature for a fairly long time. This kind of cooking is perfect for tough cuts, and those with a lot of connective tissue that take a while to break down and become tender.

I use this same basic formula for cooking small necks as well (think lamb or goat) and it is one of my favorite cozy winter dishes! Learning to braise made all the difference when working with cuts like this! Do you have any best tips for cooking necks/tails?
Braise - think crock pot or a stew! Braising is cooking at a low temperature with added liquids for a long period of time. This method will help to soften tough meats and connective tissues and infuse them with great flavor.
Yep, I've eaten since I was a small boy in the 70's, ox tongue too but not had that for decades since. I had oxtail a couple of months ago though, delicious.

I've only ever had oxtail soup. My dad loved cooking soups. I was quite young; it tasted like beef vegetable soup, only much richer and had greater dimension.
Love oxtail! Last time I also cooked a beef cheek along with the oxtail. Cheek pretty much also has all the benefits of oxtail. It's to be slow cooked too. Love your channel. Have a blessed and fruitful weekend 💕

I love ox tail. I brown them and stick them in a pot of navy beans or black eyed peas in my pressure cooker with lots of seasoning . So amazing 😋😋😋😋

I'm so glad to hear you are enjoying them! I actually just started a corned beef experiment using a couple of 1800's recipes as my starting place. I am interested to see how it goes! I am using a brisket but I think a chuck roast could work really well with this method I am trying out since its primarily a brine. According to my vintage recipe guide, it should store in good condition about 3 months with this method. Beef Bresaola is also on my list!

There are many variations, but all are braised in pretty much the same method just different seasonings and different choices for the liquid used. Jamaican oxtail and southern style oxtail are a couple of popular variations. 😊

Looks good! Where did you get the oxtail? Did you get a cow processed or special order it?
I got a half beef this year split with some friends and was able to talk to the butcher and ended up with 3 tails that others in our group didn't want! I totally scored. But I've also been able to buy them once in a while from a shop in Chewelah or online from Azure. I do this same thing with lamb and goat neck as well!

Do you have a Lion diet version of it?
Lion diet is basically carnivore but only certain types of meat or only red meat, correct? If you need carnivore and don't do any spices at all, I'd use a bone broth and just simmer the tail in bone broth and salt if you do salt. If you allow vinegar in your diet, I'd add a splash of acv to help extract the calcium and add that hint of acid, but it would be fine without. The main thing is just to have enough liquid and cook it low and slow until the meat is falling off the bones!

Totally get that! You can really easily make it carnivore or whatever suits your needs as long as you have enough liquid and cook it low and slow until the meat is falling off the bones, it will be delicious!

@@apinchofpatienceLengue (my Spanish ok?) makes a great Burrito! Good in many other ways. My mom chunked it up and used it in gravy, like the day I had some grade school friends over for lunch. They were hesitant at first but quickly adopt to it as being good.
