Press & Sear Lion's Mane Mushroom Marsala
Ingredients:
Lion's Mane Mushrooms, whole
300g Button Mushrooms, sliced
100g Shiitake Mushrooms, sliced
2 Scallions/green onions, diced
2 cups all-purpose flour
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 tablespoon wicked chicken seasoning (or other chicken-flavored seasoning)
Butter (plant-based)
Olive oil
Instructions:
Prepare the Lion's Mane Mushrooms:
Heat a large skillet over medium-high heat and add a splash of olive oil to the pan
Press down on the mushroom steaks gently with a second pan create a searing effect, the "press and sear" method, add about ½ cup of water to help steam and shape without causing too much sear on the mushrooms. This helps condense into a form that can perform the same way chicken would.
Cook the mushrooms for about 3-4 minutes on each side, or until they are thin enough to work with.
Remove from heat and let cool to room temp.
Mix the Seasonings:
In a shallow dish, combine the all-purpose flour, granulated garlic, granulated onion, and wicked chicken seasoning. Mix well to create the seasoned flour.
Press & Sear the Mushroom Steaks:
Heat a large skillet over medium-high heat and add a generous amount of plant-based butter and a splash of olive oil to the pan.
Dredge each Lion's Mane mushroom steak in the seasoned flour, ensuring they are coated evenly on both sides.
Place the coated mushroom steaks into the hot skillet, making sure not to overcrowd the pan. Cook in batches if needed.
Pan sear on each side until gold brown then remove from pan to start the sauce
Prepare Marsala Sauce:
Heat the same pan, add butter and olive oil and add sliced mushrooms. Cook for 5-8 minutes until they shrink by half in size and form a nice golden-brown color.
Add a splash of Marsala wine and then the broth. Let the sauce simmer briefly until it thickens slightly.
Add the cooked Lions Mane fillets to the top and pop in the oven to finish.
Plate the Lion's Mane Mushroom steaks and drizzle the Marsala sauce (if using) over them.
These delicious mushroom steaks can be served as a hearty main dish alongside your favorite sides, such as mashed potatoes or sautéed vegetables.
The press and sear method enhances the texture and flavor of Lion's Mane mushrooms, creating a delightful and satisfying Marsala dish perfect for mushroom lovers.
Simple Sweet Potato Mashed Potatoes
Ingredients:
1 large sweet potato
4 medium-sized masher potatoes
2 tablespoons butter
Salt, to taste
Black pepper, to taste
Splash of plant-based milk (optional)
Instructions:
Peel and chop the potatoes into evenly sized chunks to ensure even cooking.
In a large pot, add the chopped potatoes and cover with cold water. Place the pot over medium-high heat and bring it to a boil. Cook the potatoes until they are fork-tender, usually around 15-20 minutes.
Once the potatoes are cooked, drain them well and return them to the pot.
Add the butter to the hot potatoes, allowing it to melt. Using a potato masher or a fork, mash the potatoes until smooth and creamy.
Season the mashed potatoes with salt and black pepper, adjusting the amounts according to your taste preferences.
For a creamier consistency, you can add a splash of plant-based milk, such as almond or oat milk, and continue to mash until well incorporated. This step is optional but can enhance the texture and flavor. - Jak na to + styl

Also am I the only American who grew up with and still uses electric kettles?! Lol I hear this difference all the time but I always remember having one. they save energy and time. And as an adult I’m a coffeehead an a gooseneck kettle is the best for making a good coffee - it helps with pouring accurately and evenly. And also when I’m steaming something on the stove and need more water, I can put the spout by the lid without lifting the lid all the way up and releasing steam.
I hope I’ve sold some fellow Americans on the usefulness of a kettle 😂

Omg I love your recipes!
"newish" to cooking (generally!) and tried this recipe as it looked and sounded so delicious. It turned out pretty oily for me (but still tasty) so I checked out the Chik-Fil-A recipe and Derek explained about boiling the mushrooms so they don't absorb as much oil! Awesome tip! I think my mistake was removing the liquid/broth in the first step so that the cutlet would crisp up a bit (which they did) but then after dredging and then frying again they were like little oil sponges! Do you have any other tips for beginners working with lions mane mushrooms and frying?
Luckily have some more Lions Mane mushrooms so will have another go at it and keep them in the broth for the prep cooking next time. Thanks so much for your fun, easy to follow videos and the delicious recipes!!! You make cooking vegan seem less intimidating :)

I have an electric kettle! My second one, from Hamilton Beach. They make crappy ones now, so I'll have to move to the UK when the current one bites the dust, I guess : ) Loved the editing on this one--ah, I remember those late 70s/early 80s dishes well, all the rage when mom wanted to cook "classy" in the Upper Rustbelt--and think the recipe would please anyone. I really wish more types of mushroom were available in the stores here in Poland. I can easily get button mushrooms, various kinds of dried local forest mushrooms, or dried shiitake, and less easily oyster mushrooms, fresh shiitake or shimeji mushrooms. But I've never seen lion's mane mushrooms anywhere and anything more complicated is just not there.

Chicken Marsala has been something on my list for recreating since Ive been vegan. IT used to be my all time favorite dish before I went vegan. I could definitely try and recreate it, but i have not been able to find a vegan marsala wine. All of them are not vegan. My search continues.

Just made this with the Lion's Mane that I've just grown. I can honestly say that it was the best dinner I've eaten in my life. The Massala really adds a lovely taste. My sauce was with chestnut mushrooms with some left over. It made a delicious toast topper for breakfast. Thank you for the inspiration!

I love these videos, but I'd like to see use of more cost effective mushrooms. Grow kit for Lion's shrooms is around $25-30 USD - I believe you get 1 fairly large yield, then possibly 1 smaller yield after that. Pricey...
Could you go over the different mushrooms that the company “marvelous mushrooms” sells in a future video and highlight the best recipes for each mushroom? I am in California and I’m looking into ordering because it looks like a great company. I would be very interested to see what you say about the various varieties. Perhaps they may even offer you a coupon code for your customers?!
There are closer mushroom growers to you. Look into Small Hold, Hifimycology, Farwestfungi etc. I will always be doing mushroom recipes as we mix it up a lot. Thanks for watching.
