I don’t care for eating mushrooms but love the flavor it adds to my sauce so I quarter two mature portobello mushrooms so I can pick it out and the mushroom lovers of the house don’t mind it at all!

I put the stipes of shiitake (which are usually considered to be too tough to eat) in the blender and get the flavor.

Why are white button mushrooms sometimes much larger than small brown cremini?
Were the portobello we see here white button mushrooms earlier?
That’s a good question, I am not quite sure why but portobello, crimini, white button are all the same exact species. White button is supposed to be the small size of the mushroom and they become brown with age to become portobello looking. It’s odd because the mushrooms I grew were brown even when very small so I’m not sure, I will have to clone white buttons next to see if the buttons are indeed white, then it would have something to do with a trait of the strain causing more whiteness.
