Ingredients 材料:
1) Egg yolk batter 蛋黄糊:
• 3 egg yolks (3个蛋黄)
• 40g Veg. Oil (40克 植物油)
• 50g Milk (50克 牛奶)
• 50g Cake flour (50克 低筋面粉)
• 15g Cocoa Powder (15克 可可粉)
2) Meringue 蛋白霜:
• 3 egg whites (3个蛋白)
• 45g Sugar (45克 糖)
• 1/2 tsp Cream of tartar or lemon juice (1/2茶匙 塔塔粉或柠檬汁)
3) Chocolate Ganache (做巧克力浆)
• ½ cup semi-sweet chocolate chips (½ 杯半甜巧克力片)
• ¼ cup heavy whipping cream (¼ 杯重奶油)
4) Chocolate Truffles (松露巧克力)
Make six 1”diameter, about eight 0.75” diameter truffles (可做六个直径为 1 英寸,约八个直径为 0.75 英寸的松露松露巧克力球)
• 4 ounces (1 cup) high-quality semi-sweet/ dark chocolate bars ((4 盎司(1 杯)优质半甜/黑巧克力))
• ¼ cup heavy cream (1/4杯重奶油)
• ½ tablespoon unsalted butter (½ 汤匙无盐黄油)
• Cocoa powder, chopped nuts, sprinkles… for coating (可可粉、碎坚果、糖屑…用于包着松露巧克力)

Yes it's unsweetened cocoa powder. It will work for cupcakes too! Baking time for cupcake will be a little different. 275F for 35 minutes, turn to 150C/300F and bake for 15 minutes. Check it with a toothpick to make sure before taking out from the oven. 😀

*Cake*
• 5 Eggs
• 65g Veg. Oil
• 80g Cake flour
• 25g Cocoa powder
• 80g Milk
• 75g Sugar
• 1/2 tsp Cream of tartar
Baking time and temperature will be the same.
*Chocolate Ganache*
• 2/3 cup semi-sweet chocolate chips
• 1/3 cup heavy whipping cream
*Chocolate Whipped Cream Frosting*
• 2 cups of heavy whipping cream
• 1/5 cup of semi-sweet chocolate chips

Chiffon cake doesn't need add milk/sugar syrup to moist it, right??
No you don't have to add those after slicing it, unless, you think the cake is over-baked --- after you slice it, it crumble too much and don't hold together at all. 🙂
