How to Clarify Lime Juice | Carbonated Last Word!

  • It's a Last Word, but it's carbonated! I clarified the lime juice to make the carbonating work, so lots to learn about in this video.
    Last Word
    3/4 oz Gin
    3/4 oz Clarified Lime
    3/4 oz Maraschino
    3/4 oz Green Chartreuse
    I carbonated it with the CO2 from my beer keg. There are probably other ways to carbonate a drink, like in a soda stream, but this is how I do it because I have the equipment already. I got an adapter like this (but not exactly this) to connect the ball lock to a plastic bottle: www.morebeer.c...

    Love the science. One of my lockdown purchases was a carbonator where the bottle has a pressure relief valve so you can carbonate anything without making a mess.

    Great video, Pete! I had read about clarifying citrus juice, but it was super helpful to see you actually do it. I worked in a lab for 15+ years, so your video took me back to those days!

    WOW this one blow me away. The juice clarifying process looks a bit laborious but the final result is very appealing.

    Hey Pete, not sure if you've seen it but there's conversion kits you can buy to connect a regular CO2 tank to a carbonation system like the SodaStream. Get a 2 regulator system with one pressure setting for your sodastream, and the other for the homebrew and your set! Obviously all of that depends on space.

      hmm. I could also put water in the keg and have on demand soda water... but I dont think I have space for both. thanks for the tip!

    Love the book and cocktail science! It is pretty Rad! Great video. Inspired to clarify lime juice. I’m not sure how you would do this in a soda stream! If you put anything other than water in the container it explode! (She’s says from experience!) Your way seems better!

      I heard that about the soda stream, apparently there are other products that can do it without exploding. I will stick with this for now since I already have it!

      I followed the advice in Liquid Intelligence, I don't have a centrifuge, I didn't want to freeze-thaw it, and I didn't have Pectinex. I didn't want to milk wash either, I wanted the color and didn't want the milkiness.

    A great gadget for carbonating any liquid at home is the DrinkMate, just like a SodaStream but you aren’t limited to plain water.

      @@UnclePete yeah, they’ve got a special pressure release system so the contents doesn’t spray everywhere when you remove it from the carbonator

    I love this category of drink. One of my favorites:
    2 oz gin (Hendrick’s)
    1oz ginger simple
    1 oz clarified lemon
    [ champagne acid is best ]
    2.75 oz clarified orange juice
    Small pinch salt
    1 shake orange bitters
    You may tune the sweetness to your preference / taste

      That sounds good! I would probably turn down the orange juice a bit, but I am going to try and clarify some more things in the future, so I will keep this in mind! thanks!

      @@UnclePete That would probably be good. The inspiration for this drink was the French 75. The OJ, half the gin and half of the lemon is analogous to sparkling wine. The remainder added to the "wine" makes a French 75.

    i can do with another juice? that is not citric example tomatoes juice

      You mean clarified tomato juice? I think that tomatos don’t have pulp and you could get it pretty clear with just straining. I would consult liquid intelligence on this if I were you.
