    This delicious, creamy, and flavorful cheesy chicken dinner with broccoli and rice comes together in less than an HOUR!
    You read that right. I am able to make delicious meals in my Instant Pot just like this one! And not to mention that I can do it all in one device. No need for other pans! Can you say fewer dishes?? Yep, I thought you’d like that.

    Ingredients:
    1 medium yellow or white onion, diced
    2 garlic cloves, minced
    1 1/2 cups white rice
    4 cups chicken broth, divided
    1 tsp salt
    2 pounds boneless, skinless chicken breasts, cooked and chopped
    1 pound fresh broccoli florets
    8 ounces grated cheddar cheese
    Salt and pepper to taste
    Add onion, garlic, rice, rice, broth, salt, cooked chicken, into your Instant Pot. Cover the pot and secure the lid. Make sure valve is set to SEALING. Set the manual/pressure cook button to 7 minutes (high pressure). Once time is up turn the knob to VENTING to let the pressure out.
    While the pressure is being release, steam your broccoli in the microwave for 4-5 minutes or on stove top.
    Stir in the broccoli and cheddar cheese. Add Salt and pepper to taste. You can always add a little more cheese on top if desired.

    Hint: open the lid and add the cheese. Replace the lid and wait about two minutes. Open the lid and stir the melted cheese. Then add broccoli and lightly stir. This helps melt the cheese, and not bread up the broccoli florets.

    I had same confusion on rice to broth ratio had to google it. 1 cup of rice to 1-1.25 cups of liquid. I used this measurement and it came out delicious.

    Had to read through the comments because I was very confused because the stated liquid added seemed to be too much. I went by what she said about 1c rice to 1 1/4c liquid. My cooker is a 1:1 ratio when cooking rice but this is the first time I tried it. I only added 2c broth to the 1 1/2c rice and it turned out perfect. And take the hint from a comment below to open the lid, add the cheese, replace the lid and wait about two minutes; melted easily and made for easier stirring. However, with only two of us at home I should have cut the recipe in half! Good luck all; it is really delicious.

    I have tried chicken and rice many times only to get the burn notice. The other directions specifically says do not stir. After watching your tutorial and you stirred the rice, I tried it. Came out wonderfully, no burn notice and it was delicious!! I need more recipes for 2 people.

    GREAT DINNER TONIGHT!!!
    I watched this video 8times for each step to a T. Next time I'll use shredded rotissarie chicken...i used canned chicken instead.
    I also used 4 cups of Chicken Broth.

    I'm glad you put how much chicken in the recipe. With limited shopping, I'm not going into the store anymore so not getting rotisserie chicken but cooking all the chicken in my (Crockpot Express). This sounds like a great recipe. Have you or would you do a brief review on different IPs? I'm going to buy one and wondering which one to get. I'm tired of no manual or pressure cook button among other things. I didn't know you had a cookbook coming out. I bought one from the makers of Crockpot Express and it's just crap. I'll preorder your cookbook now. Thanks for the great recipes!

    Looks good...I would like to try but little confused about the liquid. You stated 1 1/4 cup liquid for 1 cup rice and in the video you state you're putting in 4 cups of broth and poured in two cans. Then a minute later you stated you put in 2 cups of liquid. In the description you note 4 cups of broth with 1 1/2 cups rice....seems like a lot of liquid for that much rice. Can you confirm how much broth exactly for 1 1/2 cups rice? How many ounces were those cans of broth? Thanks and all the best!

      Tarot Living I think it’s 4 cups as stated in the recipe and initially in the video, and that she just misspoke the second time referring to the ‘2 cans’
      of broth that she put in, as opposed to 2 cups.

    I’m confused on the amount of broth, first it’s 4 cups then it’s not. I just put this on while watching the video. I used 4 cups, I hope that was right. Love your videos Kristin!

      I believe they cut the recipe in half here, and for a cup and a half of rice it would be 2 cups of broth, according to their measurements of 1 1/4 cups broth, per cup of rice. My recipe calls for 3 cups of rice, that’s why I think this is a half recipe. But I don’t know why it says 4 cups of broth, divided, in their description box. That doesn’t make sense. The original recipe actually calls for an 8oz jar of cheese whiz, which isn’t all that healthy, but tastes amazing in this! I also noticed that they left out the 10oz can of cream of chicken soup, as well. So regardless of which cheese you use, I suggest that you add the soup, for a creamier dish. :))

    My instant pot just arrived today and I was like "now what do I do???" SO GLAD I found your channel. Your recipes are awesome, I do not know where to start!!! Which cookbook is the best one to get first? I am on a gluten free type diet temporarily, mostly chicken and fish diet. :-)

      Try making their cheesy chicken and rice recipe also. It’s another dump and go recipe that you can modify any way you want regarding spices, and the kind of chicken you use. I also use cut up pieces of rotisserie chicken for that recipe, adding it after the rice and onions are cooked since the chicken doesn’t really need to be cooked in the InstantPot. I also buy precooked shrimp from Costco and cut them into smaller pieces and sauté them in butter and Cajun seasoning and black pepper , then stir them into the Pot after the rice, onions, mixed veggies, cheese, and gluten-free cream of chicken soup are added. Adding the extra ingredients stretches the number of servings. It’s so good. My family is addicted to it!

    Any ideas for how long if you choose to use use thawed boneless chicken breast cubes? Would be great if those cook fast enough to add in with the rice or am I dreaming too high? :) Love cheesy rice so this is a winner, even without chicken as a great side.

    Newbie here from UK Normally use slow cooker recently got James Martin multi cooker thought was same as instant pot it has no pressure cooker or manual button . It's got white rice, brown rice, saute, steam, stew and dessert. before i'm able to purchase an instant pot any them buttons i could use the meantime?

    Do I need to subtract time or amounts if I don't use onion and quite a bit less chicken? I don't like onions and I would maybe use 1/4 that amount of chicken in mine. I prefer a little bit of chicken as opposed to having it be in every bite. It looks delish tho!

    mine got VERY thick!! followed the recipe perfectly, which is a first for me! lol

      Smart Blonde - It’s my understanding that the time remains the same, even if you double or triple the ingredients. Info came from past videos.

    Yum. When you say divided for the chicken broth, usually that is because it's saved for a later part in a recipe. Totally threw me off. Off to make this!

    Why did you add 4 cups of liquid, when you said 1.25 cups liquid per cup of rice? 1.5 X1.25 + 1.875, not 4.

    I use frozen broccoli in your cheesy chicken and rice recipe. My kids don't care for the mixed veggies so I use broccoli in it's place. Turns out great. My kids love it. And there's no steaming the broccoli separately!

    i made this tonight...i sauted the onlions in the bottom first with butter and a little oil...added the rice, broth garlic and chicken.... cooked for 6 min...stirred in broccoli and cheese.... even with salt and pepper thought it was a little bland...and a little to "sticky" for my taste...after first serving added mushrooms and cream mush soup with milk to make sauce...i like the flavor alot... but for me the texture left me wanting....

    I like to make my own cheese sauce. Can I make the cheese sauce in the instant pot ? I make my cheese sauce with 3 cups of milk maybe 4 and ready for this?40 pc of American sheets.

    Does recooking the rotisserie chicken not make it overcooked? I would probably add the cooked chicken at the end with the broccoli and cheese.

      The rotisserie chicken works great. It only cooks for 8 minutes.

    I'm a little confused...when you were adding the two cans of broth you said 4 cups of broth, and it's 4 cups in the recipe, but divided? Do you put some in later? And it's not noted?.. But when you said 1 1/2 cups of rice......1 cup gets 1 1/4 cups liquid, so 1 1/2 gets 2 cups? I'm confused on the broth content?

      There is 2 cups of broth in each can

      We added 2 cans of chicken broth. They are 14 ounces each. So it's just shy of 4 cups. But still works great! You can also buy chicken broth in a quart size. That's 4 cups!

      Six Sisters' Stuff I’m still confused. You said 1 1/4 cup of liquid per cup of rice. Then you put in 1 1/2 cups of rice which would mean 2 cups of liquid. But you put in about 4. Didn’t you put double the required liquid in?

    For low carb, skip the rice or use cauliflower rice! I used to make something like that when my kids were little.
