  • Ingredients
    500g medjule dates
    4 diced green chili
    1 tsp ginger garlic paste
    3 tbsp rice bran oil
    1/2 tsp mustard seeds
    2 sprig curry leaves
    1 small piece of asafoetida (1/2 tsp powdered asafoetida)
    1 lemon sized tamarind (soaked)
    2 tbsp diced ginger
    2 tbsp diced garlic
    4 green chili chopped
    4 tbsp red chili powder (less hot)
    1 tsp salt
    1 tbsp jaggery powder
    Step by step method
    To making the medjule dates recipe, remove the seeds from the dates, roughly cut them with fingers. Keep them aside.
    Heat oil in a pan, add the mustard seeds and curry leaves, allow to splutter. Then add the diced ginger, garlic and green chilies respectively, next add the ginger and garlic paste along with asafoetida powder.
    Sauté until the raw smell goes away.
    Add ground chili and mix well.
    Now put the medjule dates. Medjule dates has its own sweetness and softness so no need to soak.
    Stir to infuse the flavors in the dates with salt (1 tsp) to taste.
    Pour the tamarind extract with water two cup water. .
    Allow to cook in a low heat for 5 minutes.
    Season with jaggery powder and saute for another minute.
    Remove from the heat to cool.
    Enjoy this deliciousness with paratha and biryani.
