Married men that love to cook too make my heart swell. I love to cook but if my partner is a king in the kitchen too I will move aside and allow him to rule that space too. We dance 💞 and take turns. No set rules or expectation based off "gender roles". I'm sure those greens taste amazing👏🏽

I cook my mustard greens with smoked ham hocks diced potatoes salt and pepper and bacon. They always come out delicious. I've got tons of homemade recipes in my head including bar b que too.

Smoked anything tastes similar enough. Smoked chicken or better yet smoked turkey has that sticky collagen/ fat and pork fat is tasty of course. But smoked or salt cured turkey can taste close enough to ham or pork. I love the sticky turkey fat from Turkey wings. You can use the turkey wing skin to add fat and flavor to greens and rice. It's ok to dispose of the skin after cooking with it for those that don't like to eat skin. Race has no factor my friend , I'm not black either but I love southern food and lots of high flavor food like Indian, Thai, etc. Flavor ,flavor ,flavor is what matters. Cheers !!!!

The reason you add a little sugar to the greens is to counteract their bitterness, especially when cooking mustards and turnips, or adding them to collards. It helps to balance the flavor. You don't want them sweet, just a tablespoon or so to the pot. People also add a little apple cider vinegar for the same effect.

I put a combination of salt pork, smoked pork jowls, and smoked turkey tails, so I don't have to put oil in my greens, because there's going to be a lot of grease and fat released during the cooking! I also put red pepper flakes in my greens, because me and Mr. Cayenne pepper don't get along at all!!! LOL My Aunt told me long time ago to add a little baking soda to my greens to cut the bitterness and make them tender! Like when you were doing your layering, just add a little baking soda (1 tsp.) to each layer!!! I like to mix my greens (Mustard, Turnips, and Collards sometimes a little Kale) also, to me that means everybody gets a little taste of what they want!!🤔🤨🧐😉🥰✌🙏❤

G Rich, this how my Grandma made her greens with one exception, she added corn dumplings into her greens which were seasoned with red pepper flakes. This has me craving greens, I'll be making some this weekend.

I am from the South and I remember my Mother putting Corn meal dumplings in her greens as well, they would come out firm like Hot water Corn bread.
