    On most of these recipes, I wish we had smell-o-vision. Jeez!! I can remember my grandma cooking most all of these dishes. I miss the days of sitting on our back porch snapping green bean, shelling peas and going to her smoke house for our meat. Not to mention having fresh chicken by way of a rung neck. Also having venison, quail, squirrels, dove, etc I've lived in Georgia ALL my life. And I wouldn't trade a minute, nor a second of my childhood. Growing up on a true farm living the farm life, priceless!!! I miss these days. Everything now a days is a rush and husslebussle. No one, myself included, it seems has time for a good family meal or gathering anymore. We ALL need to get back to our roots. Live simply and lovingly!

      I love shelling peas and beans.
      My mom and I would go to her parent's house to shell. We sat on the porch in rocking chairs, a giant bowl of peas to shell and iced sweet tea beside us.
      Now, whenever my aunt and uncle has an abundance of peas to shell since they wouldn't be able to shell them all, she gives us a bushel or 2.
      My mom invites me over to help because she knows I love shelling.
      Only, now we sit in a recliner.
      I miss picking peaches.
      When I was much younger, we'd go to a huge peach orchard and pick peaches in the summer.
      We'd get 25 ¢ a basket.
      That's when my hyperactivity was at its strongest and I could pick peaches in a flash.
      I miss those days. 😢

      You know the sad thing about hearing these stories is our grandkids won't ever know the feeling of living that kind of life yes they will hear our stories about it but really live it. I wish things were different.

    Watching Paula cook the greens brought back so many memories for me. I kept looking at the pot she was cooking the greens in and it brought back memories of my mother's Club Aluminum cookware she used back in the 60's. My mother didn't mind the stems of the greens. She would buy bunches of fresh greens and clean them really good then roll up the greens and chop them up with the stems and cook them like Paula is doing. She would cook them a few hours to get the stems nice and tender. My grandmother on my father's side would cook turnips a lot and I love them. Thanks for these fond memories I was able to relive from just watching your video of cooking greens.

    I like equal parts turnip and mustards green. I love the turnip bottoms cooked in them too.🤤 My Mom would put a pinch of baking soda in the pot of mustards and turnips to help tenderize them when needed.

    The stem is full of nutrients and vitamins, and it brings a ton of flavor. Also it gets nice and tender. I do not take off all the stem.

    I have a friend that advised me to pre-boil my greens for 30 minutes and then strain, rinse and return greens to my pot with fresh water and add my seasonings and pork. Perfect effect, no bitterness.

    Ms. Paula i still clean my greens off even if the bag says already clean you never really no i also use broth to help season my greens

    We had a wonderful bounty of turnip and collard greens, put 21 gallon bags of turnip greens in the freezer and still picking collards.yum

    THIS WAS MY FAVORITE VIDEO OF YOURS SO FAR and I have been watching since the first day. This one was SO authentically YOU. I COULD NOT FIND hog jowls so I subbed thick cut bacon, but I am making the beans and these greens for NY Eve. Paula, I love these videos so much. My heart just hurts so much, a lot of the time, because my husband's dear mother is dying. I cook a lot of your beautiful recipes for her and she likes them! Sometimes they are all she eats.     I still wash bag greens they still be dirty and bugs in them and we've even found a Pebble rock in them

      I basically cook these using Turkey bacon, except I use smoked Turkey legs or Turkey wings or smoked hocks. I use tbsp sugar and with her seasonings I use broth with one stick butter. They’re delicious but do wash your greens for bugs or some dirt. Any dry beans are great with them. Thank you Paula

Turnip greens,Hog howl, black eyed peas you always got to have them on New year's Day. The way 2020 was ....I will make sure to have this meal two days in a row. We need a good year.     Hey Paula ❤️ I love to use smoked turkey in mine with an onion 🧅 and other dry seasonings. I will boil my turkey legs or necks until the meat is falling off the bone. I removed the bones from the juice then season and add my greens from there. It’s some good eating Paula. My daughter adds butter 🧈 to hers too.

    I like the stems, they get cooked long enough, so they are fine to me. Also, I add a little bit of apple cider vinegar to mine.

    Since moving to the South from Pennsylvania I have discovered southern foods and one of my favorites is Turnip and Mustard Greens. Another love is Boiled Peanuts! I would love to see Paula do a video on Boiled Peanuts!

    My GaGa used to make turnip greens and cooked turnips. My grandad put sweet pickle juice on his greens, so I did too. But I like the turnips raw and ate them like an apple!

    i clean and cut up my greens for that very reason, too many stems. i've only ever made collards with smoked turkey but i think i will try paula's recipe.

    I cook greens in a fifty five quart crawfish pot when I grow my own. Mix turnip mustard collard and spinach together start collards first then go turnip then mustard last of all spinach when all other greens are done.. Always cook turnips separate from greens slice thin and cook on low heat with no or very little water lots of butter keep covered stir a lot pinch of sugar or stevia depends on how old they are olive oil if you are trying to be healthier than butter. Always use lots of pork jowl or hocks or ham maybe bacon drippings. Oh yea cook outside on a propane burner so the house is not smelled up.

    The bagged turnip greens and mustard greens are the way to go. I used to grow them, but in their place I planted asparagus. The asparagus is so much easier to take care of than greens. I can't ever get the turnip roots to grow. They were always so small, but the greens were awesome, except for the washing. Hope you had a Merry Christmas. Have a Wonderful & Blessed Day!

    I'm growing greens in my garden now. You can grow a lot in a small space with greens. They grow PERFECTLY in a Georgia winter. Like we had that 23 degree night recently and my kale, turnip greens and mustard and even random lettuce is still alive. But I usually wait for a good freeze before I start eating them. Try growing greens in warm or hot weather. They will be so bitter you'll be spitting them out faster than you put them in yuor mouth. The cold weather does something to them and I love them.

      ChrisW ~ That's interesting and good to know about growing greens in warm weather and probably why my sister's greens are always tough and very bitter, but the leaves are big and pretty on the collards. We live in Northern Virginia and she plants in late spring...When did you actually plant yours...BTW we are originally from Georgia. :)

      @@vickiemckinnon6460 Yep. They will grow but some of the ones will probably want to bolt and go to flower. That is what all my greens will do when they "revive" in the spring. I planted mine by seed in September and htey are green and sweet now. But if I planted them in the spring and grew them over summer. Very different taste. For southern growers, I recommend fall growing. They will live through a mostly cold winter. I've had great luck with Kale, mustard and collards and turnips. Certain lettuces and things like spinach will not survive a super harsh winter.

    Be careful with those bag greens, small bugs still be on them, so you still have to clean with your hands

      Yes me too!! I wash all greens, bagged or not. The reason being is because I want to ensure they are cleaned. Keep in mind these bagged greens are not hand washed. They are processed.

      Any bugs would be killed with the cooking heat. That said, I've never seen a bug yet.

      The store can wash 10x I have to wash 2 but I don't buy already package greens so easy to pick than go nuts doing what u are doing by the x u are doing the picking from the pot.they could be picked💜

    Ok on the butter. I personally use LanOLakes tubs which have 50% olive oil. I get my flavor & feel that I'm looking after my heart health.
    My Mother was Polish, living in Minneapolis, & she put turnips in her mashed potatoes for Sunday dinner

    Hi Miss Paula I really enjoy your show I really enjoy your recipes I've been following you since 2010 my mother who is not with us anymore used to watch you all the time and adored you but this is the first time that I've kind of disagreeing with you about the greens I'm an African-American woman and no matter if they're your greens are in a bag and they say that they're pre-wash I wouldn't trust that I would watch the greens and some water and vinegar or lemon or lime but that's just my my feedback on on your greens I really enjoy how you cook the greens but I would tree wash him before I cook them thank you Miss Paula

    I just finished cleaning 2 huge bunches of mustards and had forgotten how time consuming it is but I love being able to cut the stem out almost completely. I’m like you, the stems in the pre washed drive me crazy but I usually use them. Lol. You make me want to go get some turnips to add to my mustards. Love you sweet Paula. I’m down here near Jacksonville not too far from you.

    My family and I love collards and turnips. I always put some kind of pork in mine too . I also use butter , salt , and sugar . I never put pepper in them though. I like regular cornbread or sweet cornbread either or is good with them to me . I hope we all have plenty of money this year . 🙂🤑🙏❤

      Pork pairs perfectly with leafy greens.
      I bought an Instant Pot early this year.
      For Thanksgiving, I decided to cook turnip greens in the IP.
      While I washed the greens, I massaged them pretty well. It helps break down those tough-to-digest cell walls.
      I pressed 'Sauté' and fried 1/2 of the fat back. I put the other 1/2 in raw and put them in between the turnip greens layer.
      I add some water, salt, pepper, sugar and apple cider vinegar.
      The vinegar also helps your digestive system break it down even more, making it easier to pass on through.
      That insoluble fiber is pretty rough to digest.
      It took about 8 minutes to cook them. They were perfect.
      Whenever I cook food that usually takes hours to cook, I can't help being somewhat skeptical that food will cook all the way through using the IP.
      The 1st time I used it, I cooked a fat slab of pork ribs. They said it takes about 40 minutes to cook it tender.
      I set the timer for 40 minutes, doubting that was enough time.

      For my part when you added sugar to the cornbread and greens you've made slop for the hogs.
      Sugar is for dessert and drinks not for greens and cornbread.

      @@jeanjones8801 Old time knowledge has a pretty good recipe. However, instead of using water for your cornmeal mix use some of the pot liquor. Also season your mix with salt and pepper then form them into the disk. Do not completely cover the pot eith the lid. Cook for about 18 more minutes. I would chiffonade the greens before you put them in the pot. Also slice a whole onion, one hot pepper and a bay leaf to help seaon the greens while cooking.

    My mommy and grand parents it was always a traditional thing we had to have on January 1st no matter what hog jaws, black eye peas , Turnip greens mustard green, and pan corn bread and mashed potatoes and it wasn’t New Year’s Eve if wasn’t pot of black eyed peas cooking all night long to have for New Year’s Day, that is for sure with the thick gravy to pour over big slice corn bread and greens. Yummy.

    The Italian version is Swiss Chard with olive oil, garlic, salt n pepper ...and hot banana peppers, optional, all cooked down., As you start with a full pot, and end up with less than half!😁. The stems aren't tough, so no picking needed.

    Love love mustard greens - I still wash bagged greens just like I still wash triple washed spinach-still subject to grit and bugs. I have never had hog jowls-have no intention of ever trying them-smoked turkey tails work fine for me

    My mom always did that too and put turnips in there too so good and we loved what they call hen pecked salad it was just the real young greens you pick first I sure do miss my mama I lost her nov 12 this year 😞

    My Mom cooked mustard / turnip greens. She would put a tsp of sugar and a tbs vinegar in each mess of greens. She’d use salt pork if she didn’t have ham hawks or smoked hog jowls. Served with fresh hot cornbread and sliced onion 🧅
    In the spring we would go pick wild Polk greens! 🥬 she would rinse, boil, rinse, boil, rinse, then mix the Polk with her fresh greens from her garden. She would say, Polk is to strong to eat alone, that’s why she would mix with other greens

    Ms Paula, you and my Mama cook turnip greens the same way! 😀 She always added mustard greens to hers, and she used either smoked fatback, or thick cut bacon, a spoonful of sugar to cut the bitterness, and finished with half a stick of butter.❤ Sure miss my little Mama. But now I make them for my daughter, who loved her Grandma's greens and Mexican cornbread.😊

    My grandmother and I still we put the really thick stems in bag we put stems and onions bit carrots bits and celery ends used those for soup. I also still can my pressure cooker is my best friend. Lol.

    My granmama would sometimes mash a turnip in with her mashed potatoes too. I thought it was because she had a turnip that she needed to use before it turned, I didn't know this was an actual thing.

      Neither my mother or my mother in law cut off the stems so I am use to the green with the stems as long as they are cooked long enough to make the stems nice and tender.

    Definitely still need to wash those bag greens! They're time saving, but too many stems!!! I always say next time I'll get regular greens! Love mixed greens and cornbread

    I don't like to buy those bagged greens because they are half full of stems. I'd just as soon buy a big bunch of greens and process them fully myself as to have to stand and pick out stems. I'll bet right now, that guest house smells so good!

    This is SO GOOD! 😊 I grow vegetables in my backyard here in Melbourne Australia and grow plenty of greens including turnip greens and mustard greens over winter and spring. I usually ask my husband to tear the leaves off the stems then I wash the leaves several times before cooking them. I've picked up lots of great tips from your video and can't wait to try them out. I doubt they have hogs jowl here so I will try to find something similar at the butchers. Maybe pork cheek is similar? Thank you for this wonderful video.

    Need to know temps for hog jowl and greens. How much water? Is it better to boil or fry the hog jowl. Can you use fat back instead of hog jowl or other boiling seasoning meat
