What can we use in place of Soju, we don't use soju or any other alcohol in our home😢
I'm Korean living in Australia. I never thought too much of this cookie when I was growing up because there were so many "more exciting modern snacks" in the supermarkets. I thoughts Yackgwa was "olden day stuff". But since I got married to an Aussie husband, we buy this often from Korean grocery stores, because my Aussie husband loves this. & Now my kids love it. I think it's better than other snacks that has so much food additives (colouring & flaver enhancers ...).
I tried making it at home once because it's very expensive to buy in my area($6-7 Au/320g), but I failed so bad I said I'll never make it again. I thought, What a waste of so much of expensive ingredients, (rice flour, oil & syrup). But the way Mangchi made it seems so easy, I think I'll try making it again. My family's gonna love it.

Oh man, I love those cookies. They're addicting as well as very pretty. Whenever my parents go to the Korean supermarket which is sometimes, they will pick up a container. You're spot on when it came to it being juicy, as well as it having a slight crunch when biting into it. Right, it leaves your fingers slightly oily. Also, they're quite dence and heavy which I love. Keep up the content. 🇨🇦

oh so thats how its made. omg what a beautiful process. i once taste yakgwa and i fall in love 🥰 it tastes sweet honey gingery flavour
Pour la pate :
2 tasse de farine tout usage
2 c a table dhuile de sesame
1 c a table dhuile a cuisson(pepin de raisin)
1/4 de c. a the de cannelle
2 c a the de jus de gingembre
1/4 c athe de sel
un peu de poivre noir
1/4 de tasse de miel
1/2 tasse de soju(alcool de riz)
Pour le sirop :
1 c. A the de jus de gingembre
1/2 tasse d’eau
1/2 tasse de sirop de riz
1 c. A table de sucre
1/4 c. A thé de cannelle
Cuire dans huile a 250 degre et ensuite, retirer de l’huile.
Monter l’huile a 350 degre et faire encore cuire jusqu’a bien dore.
Tremper dans le sirop une fois les biscuits retirés de l’huile, pour 1 nuit environ 12 heures.
Merci pour les ingrédients c est plus facile de suivre la recette même si on regarde la vidéo c est trop rapide

반죽에 넣는 술은 약과를 튀길 때 더 잘 부풀게 해줍니다. 그리고 잘 부풀어서 조청에 담글 때 더 잘 스며들도록 해줍니다. 굳이 소주가 아니라 맑고 맛과 향이 강하지 않은 술 종류면 왠만하면 가능합니다.

I’ve searched Korean blogs and found out they say you can use Makgeolli or Cheongju or just wine instead of Soju. But I never tried with these, and they also used Soju, so I’m not sure that work well.
I can be wrong, but the reason you should use alcoholic drink is when you fry the dough, the alcohol evaporates and makes dough rise. For the best results, I recommend following Maangchi’s recipe. Let’s get Soju and make Yakgwa at home. 😊
