- Sun dried tomatoes are a gourmet treat that look gorgeous and taste fabulous. The best part is that they are so easy to make and if made right, will keep for months. Add them to everything from a party dip to breakfast eggs for a vibrant pop of color and flavor.
I only jar up a few at a time when i do sundried tomatoes..and I use a sheet pan and put them on the dashboard in my car..they dry out fully in no time on a hot sunny day...only thing i have to do is move the car a bit.. Great video and who does not love them on a homemade pizza.
That’s a great idea! Thanks
Love this idea! Going to try this method. 👏🏼👏🏼👍
Oh my goodness...that is a fabulous idea! I have cooked a chicken under the hood of my truck while we traveled before--I should have thought about that! I am going to try it! It was 118°F in my university parking lot today--it would take no time at all!
Love it will try this for sure
OK. That has to be one of the best ideas ever.
I chocked up listening to you. It isn't possible for a child to understand the sacrifices a parent makes. My parents made sacrifices daily. They did so with a song in their hearts and joy in their step. They are both gone now. Thank you for reminding me. Also for the wonderful video.
You are so welcome--reading your post got me teary. My parents did the same with the nine of us! Thanks for your comment.
Me, too!!! I didn’t get to have my own kids, but we feel the same way about my husband’s daughter and her kids. ❤️❤️❤️
Me too! 😭 sooo beautiful! I’m going to write that down so I never forget it! Exactly how I feel about my boys!
My children used to respond "I love you more" when I'd tell them I love them, and I'd say that's not possible lol. A couple of my girls now understand after having their own😍 I know children think they know what real love is, but there's something special about the love of a parent for a child/children💖💖💖 Thanks for sharing that poem.
@@RoseRedHomestead Thanks for sharing that poem
I watch this video each time I do my sundried tomatoes. I don’t want to miss a step. Instead of calling Pam "that woman with a gadget " my husband says "that's one smart woman"!😊
I’m Italian and when my grandmother made these, she had the oil at 270. She then poured it over the product and water bathed it for 15 min. We ate it for many months. Hope that was safe, we are all still here. Love your channel and all your safety tips and trials.
La Verne: Thanks for sharing! Jim
Thks for the tip
@@RoseRedHomesteadwould this benefit storing. Would you recommend using this method?
Great tutorial! I worked in a Bistro in Sacramento, CA back in the 90s where we made a sauce from sun-dried tomatoes, roasted red bell pepper, cream and herbs. All ingredients were blended smooth. We sautéed and tossed the sauce with radiatore pasta, and then flash-broiled some mozzarella on top. Exquisite, colour, flavor, texture!
Thank you for sharing, I jotted down your instructions to try later.
That poem was meant for me today I do believe! It touched my heart & soul. My daughter is going through a 6 yr breakup & irs a hard thing on all of us as a family & her as an individual young woman. It just breaks this mother’s heart for her. They weren’t married but he was a good man. Please pray for her & our family. Thank you ❤️
I will most certainly do that, and I am so sorry your daughter and your family is going through that.
Thanks so very much. I truly appreciate it. ❤️
The poem! 😭 Love this - only now at age 56, I am trying to learn to garden and am growing tomatoes. I will be doing this. Thank you. ❤️
You can do it! It is never too late--that is fabulous!
I'm honestly curious how it went.
Wow, that poem was so true... like serious just insanely true.
I know--that is why it touches me so much! Thanks for your comment.
I grow an heirloom variety that was developed for sun drying. I dry them all the way in my food dryer and then store them all year as dried food. When I want to use them I put them in a bowl and cover them with hot water until they are the texture I like, drain them, and cover with a bit of balsamic vinegar and the rest with olive oil. Sometimes I add Italian seasoning and salt. I refrigerate them and use within a few days.
That sounds like a great process--delicious as well! thanks for sharing.
Do you know what variety you grow? I
@@sandydaniels2668 These were Romas, but they did not come from our garden.

Fantastic!!! Love your system, gonna do it your way. Thanks 👏🏿😆
I am just finishing my first batch. Just thought I would mention that you must be doing something right because others are copying you, lol. I love your videos, the fact that you teach the importance of food safety. I had to re-certify in food handling every 5 years when I had a restaurant. Even 40 years does not make one an expert unless they are willing to continually learn. Thank you both for sharing your expertise and awesome videos with us!!
Well said and thank you for your kind words. It is nice to see your name pop up frequently on our channel. We appreciate your support!
I add sun dried tomatoes to Greek salad, pasta salad, even pizza. Also delicious added to sub sandwiches or antipasto💞
Thank you for sharing these ideas! They sound great!
I hope you will visit Italy.
You are such an amazing woman, and I think this trip is not so expensive, so go on, research and make your dream come true! 🫶🏻🤗 Thank you for amazing video!
Cheers from Croatia! ❤
Lord, what a most beautiful tribute to declare. Yes, we give it all up for them. (I have five….all adults now. Gave up career, money, dreams….and homeschooled them all. Zero regrets!)
I love that! Zero regrets is a wonderful legacy for your family down through the generations that follow you. And what joy!
I love our dehydrated “sun dried” tomatoes. I used different coloured cherry tomatoes and the colour in my jars is just amazing, not to mention the yummy taste. I store mine in my pantry and I only have 2 jars left from last fall!! We use them in everything, salad, nachos, tacos, pasta, pizza, the list is unlimited! Thank you 😊
Sounds great! I love the idea of the cherry tomatoes in different colors. I will have to try that! Thanks for sharing.
Gardening in the North, can you store them that long with no problems?
Hello! I’ve never had any issues with it. We just opened a jar and used half of it in our salad…. 😢 1 jar left
Pam and Jim are incredible. These videos are informative and easy to follow. Pam is a natural educator who is always thinking about food safety. Thank you!
I fully agree. A professional channel that deals with facts. And there not like most of these SHTF Preppers on here. I only watch their channel and Prepper Potpourri.
Thank you so much, Mark!
I love the poem you quoted at the beginning. Our children are our greatest treasures for sure. These sundried tomatoes look delicious and I am thrilled to know how to make my own. Thank you for all of your wonderful videos.
You are very welcome! Thanks for your comments.
crackers with cream cheese and sun dried tomatoes is the best snack ever. we puree them into a paste and slather them on crackers. we also add them to pasta, to salads, to sauces and just about anything else. we love them so we grow a ton of tomatoes and dry pounds and pounds of them.
Thank you again! I'd never thought about sundried tomatoes, now I've added them to my going to try list.
I love the poem you quoted. Our family was only 4 of us but I would never trade a second of the time spent with my children. Now we have our Grands and they mean the world to us. God Bless you, Pam and Jim, you are such an asset to this community.
You are so welcome! Thank you so much for your kind words.
That was one of the most touching poems I've ever heard. I actually ran the video back to make to make sure that I had it right.
Thank you for sharing that poem.
You are so welcome.
I have dehydrated cherry tomatoes from my garden just waiting for this recipe! Thank you so much and I love the poem.
Thanks! I dehydrated cherry tomatoes for the first time last week. I powdered them!
The poem spoke to me. My heritage is not Italian but my heart and soul is 100% Italian. I have been there once for 19 days. I cried all the way home. I too chose the family road and now I am too old to start over and live that dream. So I find ways to bring Italy to me.
It sounds like you are making the best of your Italian soul. Yes, starting over is difficult at our ages. Jim
Thank you so much for your thorough explanation of how to add the olive oil. It's always been confusing to me on the safety measures. Now I have the confidence to adding the next step to my dehydrated tomatoes. Beautiful poem!
I can't wait to make these! I use them in bread making, bslsamic vibaigrette, pasta salad and blended into cream cheese as a spread.
Those look absolutely delicious! And they would be delicious in just about everything. I'm hoping we get a nice crop ourselves there's about 30 plants out there 10 of them are San marzano. And that poem was beautiful. I'm going to play it back and write it down.
I hope we all get a great tomato crop this year. I have 4 San Marzano tomatoes starting to grow on two of my plants. I am so excited! Even in the middle of all this heat and drought. it was 108°F today!
I think hubby and family could pitch in to buy an Italian holiday as a great way to say thank you.❤
Thank you so much for this delicious recipe and the step by step video. I gave to buy a dehydrator. Can you tell me at what temperature should I set it once I have the tomatoes ready to go🙃. Thank you, and thanks to Jim too.
You saved the day! I dehydrated some tomatoes but when I put them in EVOO they came out crunchy as you mentioned. I tried putting them in water to reconstitute, but not warm water, and they were better but not what I wanted … still crunchy. Now I can finally use all the tomatoes I dehydrated to give to family and friends who love sundried tomatoes. I’m so thrilled I can now finish the process and know how to proceed safely. Thank you so very much!❤️
I am so glad this information was helpful. Thanks for sharing!
The recipe I use is boil a littler of water with half cup vinegar add dried tomatoes for 5 mins. Dry on towel for 2 hours and then pack in oil
I absolutely love that poem, my children are worth more than any wordly treasure. I think it was Sister Hinckley who said that her children were her jewels.
You are a fountain off knowledge on your subject. Thank you for sharing and thank you to Jim for his excellent camera work.
This was a great video. I would love to do garlic infused olive oil now I know not to use fresh garlic. Thank you.
Excellent! Glad the info was useful for you. Thanks for your comments.
I always skip through video’s except yours. You never have dead air or nonsense talking to take up time. If anyone skips in your lessons they are missing very important information. Thank you spam and Jim for all you have taught me. I’m 67 and raising three wonderful granddaughters . I’ve learned more useful skills since watching you them ever in my life.
She definitely knows hers stuff! Canning and Preserving is an exact science.
I get all of my higher education from this channel. Thank you for being the best teacher ever! Truly priceless! 🥰🤗💖🙏
Chica: You are so welcome! Thanks for watching our channel. Jim
Oh my God I love you and all the great information you give us .I'am just starting to can and I will be following you and no one else but you because I feel save with your teachings.😘
Those look delicious. Going on my list. I hope y'all are staying cool!
We are camping at Moab and riding our 4-wheelers in the cool of the morning. Thankfully our trailer has a good air conditioner!
Love your show. You are so detailed! It helps us beginners become better. My first year canning and you are my number one video to watch. Thanks
I can't wait to try this recipe. Thank you for explaining botulism. I will take every precaution available to keep loved ones safe.
Thank you, Pam, for the sun-dried video. It was another great video! I love sun-dried tomatoes and had no clue how easy it would be to can them. I will either grow or purchase tomatoes from a local grower and make these this season!
You made me tear up when you spoke that poem. I have started following you and have purchased a dehydrator and nesco canner. You most definitely have the Best information for me. Thank you for working so hard, and I hope that one day you at least get to visit Tuscany❤
Awesome! Tfs please stay safe and sending hugs to you both 💜🙏😎
Such a wonderful video! You remind me so much of my Nana. She had an immense love for food preservation and your insistence on botulism safety warmed my heart. I could almost hear her talking through you. I hope you will be able to visit Italy soon and enjoy the beauty in person.
I'm about to dehydrate some cherry tomatoes and tomato pears from my garden. Then I'm going to follow your recipe for sun dried tomatoes. I can't wait!!! Thank you for such an easy to follow and informative video!
This was the best recipe I read for sun dried tomatoes! The only one that said to rehydrate them before jarring them up. Makes sense! So I just finished mine and they look just like yours! I sent this to my sister that wants to try sun dried tomatoes for the first time.
Thank you so much for your fabulous videos!
That pleases me so much to hear your experience. Thank you for sharing!
How lucky your kids r to have u both as parents as u teach us you tubers so much about canning & I absolutely adore u . U r my Go To for canning safety
Thank you so much! That is very kind.
I have a bunch of tomatoes ripening currently, and assuming no disaster hits them, I will try this…looks amazing. I also appreciate that you have a science-friendly prepping channel…those are rare.
I very much enjoy your videos. I will be doing this this summer . I have planted 12 san marzano plants in my garden for sauce and sun dried tomatoes
I love this. I also love the poem. Ms. Pamela I want you to know that you are my go-to tutorials. I uaually watch youtube on my TV but I had to hunt you down so I could let you know that your tutorials are a very important part of my prepping skills.
I love this recipe! I can always count on you for safely preserving foods!
I just *love* your videos. Thank you for sharing these wonderful goodies with us! God bless.
Thank you so much! Jim
So much fantastic information, thank you.
I am so glad that I came across your canning videos. I made the mistake of oven canning dry beans and rice after watching several videos by unqualified people. You answered a question I had about salvaging those. I made an attempt, but ended up trashing the beans. I was inexperienced enough to not know I couldn’t can on my glass top stove. That’s another story. I have since learned that my stovetop caused a fluctuation of heat. Glory he! The beans came out of the jars and made a royal mess. I will be watching and “liking” your videos since I listened to your credentials. I can trust your advice, and being a teacher of mathematics, I know all about probability. I like your zero probability method. Thank you.
Sorry for your precious experience. So glad you found us and thank you for your kind words. I am doing a MicroMoment next Monday on probability in pressure canning, so you will have to check it out to be sure I explained it right! I will watch for your comments! LOL
Thanks Pam. There is a variety of tomato called Principe Borghese that are often used for this, they are a compact determinant plant that produce small, almost mini-roma like tomatoes and they grow exceptionally well in pots due to their compact nature. Might be a good variety for you to try this coming season.
That is a beautiful poem
Thank you! I love it as well.
I loved your video. The only one I have found that talks about botulism. I'm glad I found this out before taking the next step. I was going to use fresh garlic
Oh my goodness that poem! LOVE, LOVE, LOVE!!
Thank you so VERY much. My new to try this year garden put up. I try something new each year. I appreciate you both so very much.
Thank you SO much for this timely video! We have one plant that has 1oz size tomatoes that are only good for canning or drying (and boy, is it prolific!). I’ve been dehydrating them, but hadn’t figured out how to store them, yet. Principe Bhorgese is the variety, I believe. Maybe by the end of the summer, we’ll have enough dehydrated to do the oil-saving process. 🏆🏆🏆
That sounds wonderful. I have not heard of that variety, but now I am curious and want to check it out! Thanks for your comment!
I made two quarts from tomatoes I raised. It takes an incredible amount of time to get to the finished product. Each tray of tomatoes took over a day to dehydrate, and no telling how many trays of tomatoes it took to make those two quarts!
Thanks for sharing this video will save me lots of money.
No problem 👍 Glad it was helpful!
Hello! I had to revisit this and am making. I would save the oil afterwards for cooking or dressing with the infused oil. It’s a great idea for those few ripen tomatoes that come in and not enough to just can the tomatoes. Thank you so much.
I love the Italian foods and the country!!! I would love to do these. I have some now that I must do something with before they go bad. Been canning other things!!!
Thank you for the great information.
That poem was beauty itself. Family first!
I think so too! Thank you.
Oh Pam, what a beautiful poem. Thanks for sharing.
New subscriber here. This is the best video on sun dried tomatoes I’ve ever seen. I love the idea of drying them completely, then rehydrating them. That way they can be dried and stored, then rehydrated and processed in oil, in smaller batches. Thank you!
Great point actually....dehydrate them for long term storage, then when ready make a batch of sun dried tomatoes in oil. I like it
Great information thank you
Those look delicious!
Great demonstration!
Thank you!
I love how you mix your personal story with your tutorials!
Thanks! I love telling stories!
I once tried to soften dehydrated tomato slices in oil, thinking to do the same thing, and it didn't work. Now I know why! Love the expression on your face when you say you can use them in "anything you want!"
Glad it was helpful! Thanks for your comments.
Thank you for the poem. You mother are the wonders of this of this world. We are making this saturday.
Benjamin: I agree! Jim
In Greece i have olive trees.I take some olives and put them in water that i change every 2 days to remove bitterness. Then i put them in a solution of water, salt and vinegar for almost 70 days. Then in big vases i put the olives, fresh garlic, rosemary and pepper corns, and i top it with olive oil.I keep it in a cool place and it last for 8 mounths.I never had an issue, but from now on i will use dehydrated. You know best.I trust you.
That is quite a process--thank you so much for sharing what you do. The vinegar for 70 days would have acidify the olives, which is probably why it has been fine. But using dehydrated is a better way to ensure your safety.
Im so excited to have found this video… I watch all youre videos, and for some reason missed this one.. it is summer here in Australia, and we have an absolute mountain of homegrown tomato’s.. Ive freeze dried so many, and now, plan to make some of youre delicious looking sun dried tomato’s in EVOO…. Thanks as always for the safety first approach.. I just purchased a Presto digital canner, after watching youre videos, and testing on that. xo
Hello Beautiful Lady! I love your videos. I watch you all the time. I love that poem...simply beautiful! I especially like the intro music to this video, very Italian. You are my go to for canning. Now I am interested in freeze drying foods. Thanks for all you and Jim do for us. Big hugs from Fort Mitchell, AL.🤗🤗🤗😘
Thank you so much!
You are very welcome and thanks for replying and sharing!
I managed to wait two weeks and tasted my sun dried tomatoes. They are wonderful! Next year I will do more. Thanks again for a fab recipe!
It sounds like you did a great job canning. We hope you are able to do more next season.
🤗 My husband and I have had 6 living children as well💖💖💖 Absolutely worth it
Thank you so much for this video! I love sun-dried tomatoes !!!
You are welcome!
Small jars with a pretty now would make lovely Christmas gifts.
She's so good....
Thanks! Excellent video!!
You are welcome.
Oh, that poem ❤ Have you been to Italy? If not, can you go now? If there's a way to get that dream, go for it! We have 4 children and the sacrifices that go with that. With adult children, we're going to do some of the things we missed out on when we had to support them. We have to save up but it is so worth it. It's our reward for a job well done. Our kids love to see us living our lives and enjoying ourselves too.
Thank you so much for sharing your comments. We are in our seventies but still working full time and loving it. I hope someday to retire and travel a bit, and Italy is on the list!
Wow I am so glad I found your channel! You give the best information. Thank you so much for doing the videos 💗
You are very welcome. We are glad you found us, too!
I love you, I wish I have had someone like you in my life, thank you. May the Father bless you and keep you safe.
Thank you so much.
Oooola la I made these following your recipe & soooo excited
Great 👍
This is fun! I’ve been watching your video in the grocery store because as I’m getting ready to get sun-dried tomatoes for a recipe I just wondered if you can do that at home? And of course you can!
So that’s some thing that I will be working on this year as tomatoes come in season. I’m going to try it one time with grocery store tomatoes. And won’t that be delicious when local tomatoes are in season, I can’t wait!
Thank you for showing us how to do that!
Mmmm those look yummy!!! Another wonderful video! Thank you! Definitely gonna try this out.
You are so welcome! I hope you do try them!
Italy is the only destination travel that I have on my bucket list - but like you my family takes front and center - kindred spirit - and love your recital of the poem - may have to share during our next family dinner
I hope you do. It is a wonderful poem. Thanks.
Oh yes I live in southern Tennessee and we have some HOT days so I'm looking forward to trying this out.
Great info and tips. Thank you so much.
❤❤❤ loved it. i am making these tomorrow with my new dehydrator
Fantastic! Jim
I’m so grateful for this recipe! I tried it last year shortly after you published the video, drying the tomatoes in the sun, and have several kilos of tomatoes drying in the sun right now for more. Can you address oil-preserving foods that haven’t been dried, such as Italian-style oven-roasted tomatoes or pickled eggplant, or as I’ve seen in France, coverIng fermented vegetables with a layer of olive oil to preserve them? Would these foods be safe if stored in the refrigerator? Your videos on water bath canning everything and preserving
in honey were extremely helpful and I’m sure there are a lot of us who would love the general low-down on preserving foods in oil. Many thanks in advance!
Even garlic with honey. I made a bunch and eat every day
Thank you for sharing these wonderful sun dried tomatoes and the beautiful poem....
You are welcome.
OMGosh that poem made my eyes leak. Thank you for the beauty of the poem, and the recipe for sun dried tomatoes.
Thanks for the information.
I do appreciate the way you explain everything so well. After listening to your videos I don't worry so much about poisoning my family. Thank you.
That is very nice to know! Thank you!
Thank you for the reminder about botulism. Others don't stress it enough.
Love that poem.
Looks beautiful. I may try these with halved grape tomatoes....shorter dehydrating time. I have a specialty garlic olive oil that will be perfect. I will add garlic flakes, too. We love garlic.
Love the poem. Thanks for sharing.
Sounds great! Yes, the drying time would be cut in half. I just dehydrated grape tomato halves and it took a full 24 hours to get them all done.
I have 65 tomato plants!! So far I have not done sun dried. Doing it!
Really good! Thank you!
Our pleasure! Jim
Hey Pam! Hopefully your kids see this video and treat you to that Italian vacation for your birthday or anniversary!
I hope so too! Thank you.
