  • Sun dried tomatoes are a gourmet treat that look gorgeous and taste fabulous. The best part is that they are so easy to make and if made right, will keep for months. Add them to everything from a party dip to breakfast eggs for a vibrant pop of color and flavor.

    I only jar up a few at a time when i do sundried tomatoes..and I use a sheet pan and put them on the dashboard in my car..they dry out fully in no time on a hot sunny day...only thing i have to do is move the car a bit.. Great video and who does not love them on a homemade pizza.

      Oh my goodness...that is a fabulous idea! I have cooked a chicken under the hood of my truck while we traveled before--I should have thought about that! I am going to try it! It was 118°F in my university parking lot today--it would take no time at all!

    I chocked up listening to you. It isn't possible for a child to understand the sacrifices a parent makes. My parents made sacrifices daily. They did so with a song in their hearts and joy in their step. They are both gone now. Thank you for reminding me. Also for the wonderful video.

      My children used to respond "I love you more" when I'd tell them I love them, and I'd say that's not possible lol. A couple of my girls now understand after having their own😍 I know children think they know what real love is, but there's something special about the love of a parent for a child/children💖💖💖 Thanks for sharing that poem.

    I watch this video each time I do my sundried tomatoes. I don’t want to miss a step. Instead of calling Pam "that woman with a gadget " my husband says "that's one smart woman"!😊

    I’m Italian and when my grandmother made these, she had the oil at 270. She then poured it over the product and water bathed it for 15 min. We ate it for many months. Hope that was safe, we are all still here. Love your channel and all your safety tips and trials.

    Great tutorial! I worked in a Bistro in Sacramento, CA back in the 90s where we made a sauce from sun-dried tomatoes, roasted red bell pepper, cream and herbs. All ingredients were blended smooth. We sautéed and tossed the sauce with radiatore pasta, and then flash-broiled some mozzarella on top. Exquisite, colour, flavor, texture!

    That poem was meant for me today I do believe! It touched my heart & soul. My daughter is going through a 6 yr breakup & irs a hard thing on all of us as a family & her as an individual young woman. It just breaks this mother’s heart for her. They weren’t married but he was a good man. Please pray for her & our family. Thank you ❤️

    I grow an heirloom variety that was developed for sun drying. I dry them all the way in my food dryer and then store them all year as dried food. When I want to use them I put them in a bowl and cover them with hot water until they are the texture I like, drain them, and cover with a bit of balsamic vinegar and the rest with olive oil. Sometimes I add Italian seasoning and salt. I refrigerate them and use within a few days.

    I am just finishing my first batch. Just thought I would mention that you must be doing something right because others are copying you, lol. I love your videos, the fact that you teach the importance of food safety. I had to re-certify in food handling every 5 years when I had a restaurant. Even 40 years does not make one an expert unless they are willing to continually learn. Thank you both for sharing your expertise and awesome videos with us!!

    I love our dehydrated “sun dried” tomatoes. I used different coloured cherry tomatoes and the colour in my jars is just amazing, not to mention the yummy taste. I store mine in my pantry and I only have 2 jars left from last fall!! We use them in everything, salad, nachos, tacos, pasta, pizza, the list is unlimited! Thank you 😊

    crackers with cream cheese and sun dried tomatoes is the best snack ever. we puree them into a paste and slather them on crackers. we also add them to pasta, to salads, to sauces and just about anything else. we love them so we grow a ton of tomatoes and dry pounds and pounds of them.

    The poem spoke to me. My heritage is not Italian but my heart and soul is 100% Italian. I have been there once for 19 days. I cried all the way home. I too chose the family road and now I am too old to start over and live that dream. So I find ways to bring Italy to me.

    Those look absolutely delicious! And they would be delicious in just about everything. I'm hoping we get a nice crop ourselves there's about 30 plants out there 10 of them are San marzano. And that poem was beautiful. I'm going to play it back and write it down.

    You saved the day! I dehydrated some tomatoes but when I put them in EVOO they came out crunchy as you mentioned. I tried putting them in water to reconstitute, but not warm water, and they were better but not what I wanted … still crunchy. Now I can finally use all the tomatoes I dehydrated to give to family and friends who love sundried tomatoes. I’m so thrilled I can now finish the process and know how to proceed safely. Thank you so very much!❤️

      The recipe I use is boil a littler of water with half cup vinegar add dried tomatoes for 5 mins. Dry on towel for 2 hours and then pack in oil

    This was the best recipe I read for sun dried tomatoes! The only one that said to rehydrate them before jarring them up. Makes sense! So I just finished mine and they look just like yours! I sent this to my sister that wants to try sun dried tomatoes for the first time.

    I am so glad that I came across your canning videos. I made the mistake of oven canning dry beans and rice after watching several videos by unqualified people. You answered a question I had about salvaging those. I made an attempt, but ended up trashing the beans. I was inexperienced enough to not know I couldn’t can on my glass top stove. That’s another story. I have since learned that my stovetop caused a fluctuation of heat. Glory he! The beans came out of the jars and made a royal mess. I will be watching and “liking” your videos since I listened to your credentials. I can trust your advice, and being a teacher of mathematics, I know all about probability. I like your zero probability method. Thank you.

    Thanks Pam. There is a variety of tomato called Principe Borghese that are often used for this, they are a compact determinant plant that produce small, almost mini-roma like tomatoes and they grow exceptionally well in pots due to their compact nature. Might be a good variety for you to try this coming season.

    Thank you SO much for this timely video! We have one plant that has 1oz size tomatoes that are only good for canning or drying (and boy, is it prolific!). I’ve been dehydrating them, but hadn’t figured out how to store them, yet. Principe Bhorgese is the variety, I believe. Maybe by the end of the summer, we’ll have enough dehydrated to do the oil-saving process. 🏆🏆🏆

    I made two quarts from tomatoes I raised. It takes an incredible amount of time to get to the finished product. Each tray of tomatoes took over a day to dehydrate, and no telling how many trays of tomatoes it took to make those two quarts!

    Hello! I had to revisit this and am making. I would save the oil afterwards for cooking or dressing with the infused oil. It’s a great idea for those few ripen tomatoes that come in and not enough to just can the tomatoes. Thank you so much.

    New subscriber here. This is the best video on sun dried tomatoes I’ve ever seen. I love the idea of drying them completely, then rehydrating them. That way they can be dried and stored, then rehydrated and processed in oil, in smaller batches. Thank you!

    I once tried to soften dehydrated tomato slices in oil, thinking to do the same thing, and it didn't work. Now I know why! Love the expression on your face when you say you can use them in "anything you want!"

    In Greece i have olive trees.I take some olives and put them in water that i change every 2 days to remove bitterness.Then i put them in a solution of water,salt and vinegar for almost 70 days.Then in big vases i put the olives,fresh garlic, rosemary and pepper corns, and i top it with olive oil.I keep it in a cool place and it last for 8 mounths.I never had an issue, but from now on i will use dehydrated.You know best.I trust you.

      That is quite a process--thank you so much for sharing what you do. The vinegar for 70 days would have acidify the olives, which is probably why it has been fine. But using dehydrated is a better way to ensure your safety.

    Im so excited to have found this video… I watch all youre videos, and for some reason missed this one.. it is summer here in Australia, and we have an absolute mountain of homegrown tomato’s.. Ive freeze dried so many, and now, plan to make some of youre delicious looking sun dried tomato’s in EVOO…. Thanks as always for the safety first approach..     I managed to wait two weeks and tasted my sun dried tomatoes. They are wonderful! Next year I will do more. Thanks again for a fab recipe!

    Oh, that poem ❤ Have you been to Italy? If not, can you go now? If there's a way to get that dream, go for it! We have 4 children and the sacrifices that go with that. With adult children, we're going to do some of the things we missed out on when we had to support them. We have to save up but it is so worth it. It's our reward for a job well done. Our kids love to see us living our lives and enjoying ourselves too.

    This is fun! I’ve been watching your video in the grocery store because as I’m getting ready to get sun-dried tomatoes for a recipe I just wondered if you can do that at home? And of course you can!
    So that’s some thing that I will be working on this year as tomatoes come in season. I’m going to try it one time with grocery store tomatoes. And won’t that be delicious when local tomatoes are in season, I can’t wait!

    I’m so grateful for this recipe! I tried it last year shortly after you published the video, drying the tomatoes in the sun, and have several kilos of tomatoes drying in the sun right now for more. Can you address oil-preserving foods that haven’t been dried, such as Italian-style oven-roasted tomatoes or pickled eggplant, or as I’ve seen in France, coverIng fermented vegetables with a layer of olive oil to preserve them? Would these foods be safe if stored in the refrigerator? Your videos on water bath canning everything and preserving
    in honey were extremely helpful and I’m sure there are a lot of us who would love the general low-down on preserving foods in oil. Many thanks in advance!

    Looks beautiful. I may try these with halved grape tomatoes....shorter dehydrating time. I have a specialty garlic olive oil that will be perfect. I will add garlic flakes, too. We love garlic.

      Sounds great! Yes, the drying time would be cut in half. I just dehydrated grape tomato halves and it took a full 24 hours to get them all done.
