There are many dufferent kinds if Thai eggplants, from tiny green ones eaten whole, to yellow ones the size and shape of a large almond, to white ones the exact size shape and color of a chicken egg, to round dark purple ones...and other. Many are eaten raw with spicy Thai chili dipping sauce. Or cooked in curries. Or stir fried.

The niece who farms told me to choose smaller Globe specimens like Mr Bishop said. But to make sure that are NOT hard as a rock - there needs to be a bit of squeeze. So, try a bunch of them as that softness can be slight. -------- To cut back on the moisture, after cutting them coat with salt, as Mr Bishop said, and let them sit on a towel for about 2-ish hours. A lot of fluid will be shed. You can them wash them in water to remove the salt - they will _not_ reabsorb fluid. Voila!
Eggplant it is a wonderful vegetable. It looks beautiful. It tastes wonderful if you know how to cook it and if you know how to choose the right one it is the meat of the garden.😋😋😋😋😋
I worked with someone at a casino and she brought me some homemade eggplant parm to try: I loved it, but then Fran was a great cook. Unfortunately, about an hour after eating it, I found out that my "digestive system" doesn't like eggplant at all. I've never been able to eat eggplant without having to take Immodium 😂 I will be having eggplant when I visit Japan and I'm hoping I can eat it without any trouble 🤞🏼

The dish that began turning me around was penne alla Norma. Next, I started trying it on pizza, and it just took off from there. i've heard brussel sprouts also have improved in flavor in modern times. i wonder how bad the foods of the past were before hard core species improvement took hold...though i guess they've been improving for thousands of years under farmers' guidance..
My Mom cooked some eggplant when I was young. She coated the round pieces in flour and fried them in chicken grease. They weren't bitter but needed salt which she had forgotten to put on them. All of the eggplant was eaten but she didn't care for it so we never had it again. How about a way to cook them besides frying in grease?
Its hard once you experience a bad "taste" to try again. For me I love eggplant now. I slice it 1/4 inc bake 10 min 350. spread a mix of ricotta/mozzarella/spicey sausage and some seasoning. roll it up with olive tomato sauce and bake. YUM Now I was told by a chinese man at the veggie store... to find a female eggplant look at the bottom and it will have a "slit" where a male will have the "dot" male has less seeds and so far this has been true for me

Why not discuss eggplant selection on the larger varieties in order to reduce the numbers of seeds? (Pick the males over the females). That globe was a male, but the Italian was female

Why didn’t you mention that there are male and female eggplants? You can tell the difference by looking at the end. Female eggplants have a more pronounced indentation on the end. Male eggplants tend to have fewer seeds!

You are absolutely right, but here in the Mediterranean area, we cooked eggplant too many different way and recall the meat of the garden
It's likely increasingly rare. I grew my own and it was incredibly bitter but ai blame myself not the whole species.

Cook the Japanese eggplant Japanese style, light oil, then add soy sauce after you take them out! Delicious!!!
I cook them on the BBQ. Sliced in half lengthwise, comes out great.

I'm not a picky eater, but in the course of my life I think I had about twenty different eggplant dishes before one finally "unlocked" things for me.

If you want to reduce the bitter elements then just soak it in water for a hour like my family do
Bitter? Oily? Never a problem. But how do you cook it so it ends up soft/silky instead of raw, rubbery, dry, or charred?

They're called eggplant because they look white and egg-shaped when growing on the vine, before getting their purple color
