-Water for cooking

-Salt - 1tsp
Roast Pineapple:-

-Pineapple - 1+1/3 cup chopped
-Oil - 2tsp
-Pinch of salt
-Pinch of sugar
Preparations:-
----------------------------
-Oil - 2 tbsp
-Cashewnuts - 15
-Raisins /dry grapes - 2 tbsp
-Garlic - 5 large cloves
-Spicy Green chilli - 3
-Spring Onion - 1/2 cup chopped
-Frozen peas - 1/4 cup
-Carrot - 1/4 cup thin chopped
-Salt to taste
-Soy sauce - 2tbsp
-Pepper powder - 1/2 tsp
-Sugar - 1tsp
-1/2 Lemon
-Spring onion
1 to 2 teaspoons sriracha or chili garlic sauce (optional)

I had pineapple rice many years ago at a Thai restaurant. I loved it. I made it a couple times since but just made it from memory. Tonight I followed the recipe except didn't have cashews so used raw peanuts. It was so good!
