- I just watched a video where @BrianLagerstrom made a Rubin and it made me think about what would make a great vegan Rubin... BEETS... CORNED BEETS! I'm so glad I did because this whole thing was good!
Along with the beets we also make a Vegan Russian dressing that is out of this world!

The goal of SauceStache is to continue trying something new, something new to me and something different.
I find inspirations from you the SauceSquad and my constant hunt of social media to see what food is being made around the globe and how can I try to make it. Lets try to make some food and have fun!!
Looks dope Mark! Thanks for the shoutout. The bakery/cafe I used to be the chef at had a vegetarian smoked beet Rueben, twas quite good. Great vid dood.
Dude thats so wild they sold a beet rueben!!! wild Thanks for the inspiration on this one, it was a great sandwich
@@SauceStache Latchkey Deli in Lawrence Kansas has an amazing beet pastrami they use in their Ruebens. So crazy good!
Rutabega.....
Peel it, slice it, pour boiling corning broth over the slices, marinate overnight at least ( two days is better), pan sear then braise in the broth until almost soft. Pour off the liquid and brown again in a neutral oil. Proceed to make an unbelievable Reuben.
I made this for dinner tonight. AWSOME! I cheated and bought my vegan dressing but otherwise followed your directions. YUMMO. I have enough beats to have anther one tomorrow. Can't wait 😊
I’m glad you decided to add sriracha to you dressing Russian dressing is supposed to have horseradish for heat. Most places don’t know and just use thousand island dressing
This was all Brian Lagerstrom base recipe, made vegan! When I tried it it was perfect!
I would love to have a tour of your kitchen cupboards and fridge. I've been a vegetarian for 42 years. I just recently became vegan. I need help organizing my kitchen. Please??? Show me how you organize your vegan kitchen!!! Love your show. I've been sharing your channel like crazy!
Reuben* :)
The commitment to never using adverbs is worthy of praise.
I appreciate that someone notices!!
@@SauceStache 🤣🤣
Now that's pretty amazing!! You used beets as a meat. That's the absolute first. I can't wait to try it. The texture looked great. That's a healthy and beautiful flavorful sandwich. I'm sharing this right now.
Thank you so much!!
I love your enthousiasm! Oh and this sandwich looks amazing!
I love this idea. I've been trying to eat more whole foods and this is fabulous.
This looks great! I've been making corned beets for a few years in my deli, Mort & Betty's. I love your two part cooking method -- I actually do something similar for carrot lox.
I love how you have sauerkraut on your face! You wear it well! I was hoping your honey would try the sandwich. I love her feedback!
I wish she would have gotten to try this on video!! She was in meetings all day by the time I filmed it she needed a break!! She'll be back next video for sur!
I have a bunch of beets that my grandma gave me and have been wondering how to use them before they go bad, I’ll definitely be trying this out! I love Reuben’s and even talked about them being made vegan with somebody in another one of your videos comment section!
You'll love it!!!! Love it!!
Beets are also great pickled if you really have a lot! They'll keep in a pickle jar for ages, and taste awesome in a sweet vinegar brine.
@@bodyofhope Normally, I detest beets, especially the canned ones, but a friend made home-canned pickled, and I was blown away. They had none of the off-putting dirt taste I always associate with canned beets. I've never had the courage to buy and try to prepare them in any way from raw, in spite of their excellent nutritional profile, but things like what Mark's doing here ( @Sauce Stache ) are causing me to think about it.
Holy crap. Reubens are my pre vegan fav. Excited to try it!
You are so cool! I never get tired of your content. We are lucky to have awesome vegans like you in the world! Thank you!
You can add the oil all at once if you freeze the oil! I've made mayo in my food processor for decades using this method and it always comes out perfect.
I made this recipe yesterday and it was a home run! Everyone absolutely loved it, even the meat eaters! Thanks for sharing!
Thats awesome!!! Im so glad everyone liked it!!
I am not a fan of roasted beets but you're making me wanna try this dish.
I'm not a huge beet, but I've prepared them enough ways to make em meaty I got to them now haha You'll enjoy this if you try it
@@SauceStache I love how it literally says "I'm not a huge beet" 💀
To anyone who sees this, the greens of beets are freaking delicious and the stalks are like better celery.
This looks so good! And pretty accessible. I’ve been a bit turned off to many meat substitutes recently (I think I just overdid it) and my body feels like it’s screaming for vegetables and whole foods lmao so I think this would be great to try!
I hear you on that. My husband is an Omni, so we tend to end up having some kind of meat analogue for dinner at least 5 times a week. I'm not a beet fan, but I'm considering it, given so many good looking recipes available. Now, if only cheese analogues weren't so tasteless and nutritionally vapid... 🙄 I miss my "Ten Cheese Lasagna."
Alright man, those are big claims. That is my former favorite sandwich (I haven't found a good substitute since becoming veganish), but I'm going to trust you and try it. Thanks for your videos. Love the content.
Can you share what your substitution is I would love to know because this is one of my favorite sandwiches and I was thinking about how I missed a Reuben sandwich the other day
I was doubtful, but made this today and it was amazing! Thanks for the recipe.
This looks so good. I am going to have to experiment with some daikon and/ or parsnip to see if I can get a similar flavor (beet allergy).
As a New Yorker living in a developing country i love how accessible this all is !!! Definitely will be making!!!
That looks perfect. So delicious. Simple & uncomplicated food. Full of texture & flavour 🥰
This was amazing! Could you attempt to make Flynn McGarry's beet wellington when you have time? In addition to the recipes I find the reviews very helpful!
Cant wait to try this, sounds amazing
Can you try the pig saver vegan ham recipe that's going around
It's pretty wild right!!! I need to make it
I am not a vegan but I am a Corned Beet convert. For today's lunch, I tried your corned beet sandwich recipe and it was awesome! I used real beef bouillon, smoked gouda and real mayonnaise. This is my new favorite sandwich! Thanks, Mark!
All I can say is that I can't wait to make this. Oh wow!!
I use beets for sandwiches all the time. Usually a combo of beets and turnips, or interchangeably. I have a whole method, too long to go into, but cook method and varying seasonings gives different flavor profiles and textures and work in cold or warm sandwiches. Makes doing plant based lunches for work very easy.
Oh, man, this looks delightful. I've been satisfying my rubin craving with just a sauerkraut-and-garbonzos sandwich, which is pretty okay but this? This looks awesome.
It was so good, thank you!!! Sauerkraut and garbanzos sound really awesome!!
There’s a new vibe to this video and I’m loving it. The music and the layout give it a new feel. Nothing wrong with changing things up every now and again😊
Like 1000!!🔥🤣 That looks AMAZING Mark!!
YOURE amazing!!! Thanks Emma!!!
Looks amazing. One of the VERY FEW things I miss from eating meat is a Reuben sandwich. That said I've had amazing vegan Ruebens from restaurants, but this looks easy enough to try. I wonder if normal processed tofurkey or similar products would be even easier.
Brilliant 👌🏻 Greetings from Scotland 😊 Have a wonderful day everyone 🌻
Thank you! Cheers!
You can use Old Bay Seasoning if you have it as it has the basic spices you used to cook the beets in.
Just awesome. Everything you do is so entertaining and interesting. I like to watch 1 of your videos just before falling asleep. Dreaming of delicious food.
I'm a huge beet fan and never thought to do something like this. I'll be making a few of these this weekend I think. Thank you!
I've seen plenty of seitan recipes for Reuben on out fave FB group and they all looked spectacular But hey, why not use a plant which is beef-like in color and taste already? I also love the fact you really made this humble ingredient a star by flavouring and cooking it well!
I have never tried the original sandwich but I be(e)t this version must be simply spectacular! Full of umami, sour and sweet + crispy and melty at the same time...sounds like a wonderful combo!
.
Anyways, sending you lots of love Mark!
Stay safe and have a great rest of the week!
Thank you Margaret as always!!!! Yeah this was a lot of fun to make and it came out sooooo soo good!!
Lots of love back at ya!!
Question: Why not slice it thin? I never remember eating a Reuben with thick chunks of meat. It was always sliced thin. I would imagine thinly sliced beets would absorb more flavor too. And why not slice before boiling in the broth?
I had the same thought!
Hmm maybe if the beets are cooked for a while they might be to soft to be cut thin
Next time someone claims “a good reuben just can’t be beet!” I can reference this video and correct them!
HAHHAAHAA YES!!!!!!!!
How awesome is Brian's channel?! Huge fan.
Really great! hes a good dude!!
Great Cookbook...just got it....now I have to try this too...yummm
ahhh thank you so much!!!
Can't wait to try this
Me either!!!!
yummm, i'm definitely going to make this. thank you!
Wow that is so cool, thank you so much, I'm so excited, I get corned beets. I'm making the list. You sir, Rock!
Can’t WAIT to try this one. I’m not a huge beet lover, but I think this would be a great way to try them again.
Made my comment right before you mentioned not being a huge fan either! Now I’m extra excited!!
Yeah I'm not big into beets, but they do work in these scenarios!! I hope you enjoy it. The beet flavor is still there, I dont work against it, I try to work with it !
Boom! This made my day so much better! I think I will take a day off just to make this!!! I deserve it. Outta the park!
YES!!! Enjoy the day off!! and your comment made my day better! Thank you
This looks amazing! Reuben's used to be my favourite sandwich and I have made them vegan with tempeh and seitan but this I have to try!
OMG!! I cannot wait to make this! You are truly the bomb!!
Yummilious!!
So this was delicious! I overcooked them and made jerky-like pieces 😆 Makes me wonder...what about Beet bacon?! I'm gonna try!
Thank you!
My wife overheard “beet meat” and was confused about what I was watching.
Another masterpiece!👏
Thank you so much!!!!!!
Yes!!!! Making this asap! Chao is my fav, too
Dwight Kurt Schrute III would like a word, Sir.
Seriously looks delicious!
Im so mad that I didnt give Dwight props for the beets!
@@SauceStache Next time!
Interesting idea. I will have to give this a try
Yay! I was hoping you'd do a Reuben!
I'd like to see more vegan recipes that aren't even trying to be something else or replacement for other foods, much of what I've seen you cook could very well stand on its own..
Wow I made a recipe like this last year though with thinly cut beetroot as pastrami substitute. It was so good! Especially with mustard in the sandwich!
Now show us how to make powdered aquafaba, please!!
Awesome!! Just pulled some fresh beets out of the garden and made a beautiful sandwich 🤤 only things I did different was used olive sourdough with some vegan mozzarella & vegan parmesan a few sweet and spicy gherkins and some fresh baby spinach, Fantastic! I will be doing it again.. the Russian style sauce is particularly yummy. 🔥 good job mate as always👌 and g'day from Tasmania ✌
I just love fresh boiled beets so much so I know gonna love this!
Looks delicious. I’ll try this.
Please make a vegan fastfood chain already you've got what it takes, ur menu is gonna amazing I'll gadly visit.
i now want a beet ruben i really want one lol
Me too! 😋
You should make one!!!
Sounds delicious!
WOW!!!!!!!!!!! Incredible!!!!! 😍😍😍😍😍😍😍😍😍😍😍😍😍😍
I love love beets.... can't wait to try this. :-)
You are a wizard
Love this
hahahah thank you
Looks delicious . Yummy
Man! I need your cookbook ASAP
Yum!
I worked in a deli in Minneapolis that served Reubens as a kid and can report that Russian dressing (especially this one!) is also great on sandwiches dressed with coleslaw 🤤
It's funny! I'm Russian and i didn't know there's a special Russian sauce 🇷🇺 Ppl here just mix mayo with ketchup, it's the closest i can think of. But your version looks so much better, thanks)))
the way he keeps saying beat meat 🤣🤣
With an emersion blender you can add everything in, egg, oil and all and just stick your blender at the bottom of the cup and blend until the bottom layer has turned white and thick and creamy, and slowly undulate the blender as you lift it out to make sure all the layers have blended and emulsified cuz the oil will stay on top and as you undulate the blender the oil will get incorporated little by little, just make sure you add the oil last so the oil does stay on top. I find using the traditional method when using an emersion blender doesn't give me a thick enough mayo to where I like it.
Roasted (brought out the sweetness), then dried, then let them soak up the juices again (like what you did with parsnip) Excellent texture, the taste was more "corny", and less bleeding. I'm thinking chioggia beets would be the right level of marbling...
Neeeeeed this!
Good job! The community post for this video was right below the video this time 😂
I NEED THIS RUEBEN!!!!!!!!
Really nice recipe 👍
Ok but but but ... You ate the beet greens and stems thought, right? They're SO GOOD.
Hey Mark! I loved this video :) would love to see a 'corned beef' recipe using yuba/bean curd skin!
Oh my!
My mouth is watering
Wow what an incredible sandwich and fun video! If I try this it will be with a different vegetable, because my stomach does not react well to beets. Do you have any idea what vegetable(s) might be a good substitute?
Thank you!!! You can do this with a load of other veggies!! Radish works great thin, thin sliced carrots would be good too!
@@SauceStache oh yes, carrots might be great! What about portobello mushrooms?
Isn't it super sweet? Nitrate Oxide is the master energy and heart healthy 💞
Thanks. Will have to try. Reubens the only meaty thing I've missed in decades of vegetarianism.
I think you should have actually pickled the beets like corned beef. I also think dehydrating the beets before and after that process would be really beneficial to the texture. Certainly a longer process but im gonna look into it.
I love a vegan rueben, can't wait to try this
i don't know why. but this video was especially funny to me today. Thank you XDDDDDD
Can’t wait to make my kitchen look like a murder scene with this recipe, lol
"I didn't want to use the egg replacer because people said it was hard to come by. Anyway, here's a soy thing you've never seen or heard of before and it's essential for the whole thing to stick together." Lol
Soy lecithin is actually easy to come by, and I am pretty sure the aquafaba is enough to emulsify the oil ;)
That made me so hungry!
Nice
this looks awesome! curing or dry aging vegetables like beets or even other foods like mushrooms, tofu or seitan sounds interesting too! would it work?
I totally beet it would work on tofu!!
Man that looks good. I want to give it a try but not the biggest beet fan. Do you think it's possible to corn beef a portobello mushroom as a substitute?
Can’t find the recipe on your site. Just wondering about measurements as far as the boil. Ready to make it tonight but just want to make sure
I never thought I'd see someone meating their beets on CZcams
