  • I just watched a video where ‪@BrianLagerstrom‬ made a Rubin and it made me think about what would make a great vegan Rubin... BEETS... CORNED BEETS! I'm so glad I did because this whole thing was good!

    Looks dope Mark! Thanks for the shoutout. The bakery/cafe I used to be the chef at had a vegetarian smoked beet Rueben, twas quite good. Great vid dood.

    Rutabega.....
    Peel it, slice it, pour boiling corning broth over the slices, marinate overnight at least ( two days is better), pan sear then braise in the broth until almost soft. Pour off the liquid and brown again in a neutral oil. Proceed to make an unbelievable Reuben.

    I made this for dinner tonight. AWSOME! I cheated and bought my vegan dressing but otherwise followed your directions. YUMMO. I have enough beats to have anther one tomorrow. Can't wait 😊

    I’m glad you decided to add sriracha to you dressing Russian dressing is supposed to have horseradish for heat. Most places don’t know and just use thousand island dressing

    I have a bunch of beets that my grandma gave me and have been wondering how to use them before they go bad, I’ll definitely be trying this out! I love Reuben’s and even talked about them being made vegan with somebody in another one of your videos comment section!

      Beets are also great pickled if you really have a lot! They'll keep in a pickle jar for ages, and taste awesome in a sweet vinegar brine.

      @@bodyofhope Normally, I detest beets, especially the canned ones, but a friend made home-canned pickled, and I was blown away. They had none of the off-putting dirt taste I always associate with canned beets. I've never had the courage to buy and try to prepare them in any way from raw, in spite of their excellent nutritional profile, but things like what Mark's doing here ( @Sauce Stache ) are causing me to think about it.

    You can add the oil all at once if you freeze the oil! I've made mayo in my food processor for decades using this method and it always comes out perfect.

    This looks so good! And pretty accessible. I’ve been a bit turned off to many meat substitutes recently (I think I just overdid it) and my body feels like it’s screaming for vegetables and whole foods lmao so I think this would be great to try!

      I hear you on that. My husband is an Omni, so we tend to end up having some kind of meat analogue for dinner at least 5 times a week. I'm not a beet fan, but I'm considering it, given so many good looking recipes available. Now, if only cheese analogues weren't so tasteless and nutritionally vapid... 🙄 I miss my "Ten Cheese Lasagna."

    Alright man, those are big claims. That is my former favorite sandwich (I haven't found a good substitute since becoming veganish), but I'm going to trust you and try it. Thanks for your videos. Love the content.

    I am not a vegan but I am a Corned Beet convert. For today's lunch, I tried your corned beet sandwich recipe and it was awesome! I used real beef bouillon, smoked gouda and real mayonnaise. This is my new favorite sandwich! Thanks, Mark!

    I use beets for sandwiches all the time. Usually a combo of beets and turnips, or interchangeably. I have a whole method, too long to go into, but cook method and varying seasonings gives different flavor profiles and textures and work in cold or warm sandwiches. Makes doing plant based lunches for work very easy.

    Looks amazing. One of the VERY FEW things I miss from eating meat is a Reuben sandwich. That said I've had amazing vegan Ruebens from restaurants, but this looks easy enough to try. I wonder if normal processed tofurkey or similar products would be even easier.

    You can use Old Bay Seasoning if you have it as it has the basic spices you used to cook the beets in.

    I've seen plenty of seitan recipes for Reuben on out fave FB group and they all looked spectacular But hey, why not use a plant which is beef-like in color and taste already? I also love the fact you really made this humble ingredient a star by flavouring and cooking it well!
    I have never tried the original sandwich but I be(e)t this version must be simply spectacular! Full of umami, sour and sweet + crispy and melty at the same time...sounds like a wonderful combo!

    Question: Why not slice it thin? I never remember eating a Reuben with thick chunks of meat. It was always sliced thin. I would imagine thinly sliced beets would absorb more flavor too. And why not slice before boiling in the broth?

    I'd like to see more vegan recipes that aren't even trying to be something else or replacement for other foods, much of what I've seen you cook could very well stand on its own..

    Awesome!! Just pulled some fresh beets out of the garden and made a beautiful sandwich 🤤 only things I did different was used olive sourdough with some vegan mozzarella & vegan parmesan a few sweet and spicy gherkins and some fresh baby spinach, Fantastic! I will be doing it again.. the Russian style sauce is particularly yummy. 🔥 good job mate as always👌 and g'day from Tasmania ✌

    I worked in a deli in Minneapolis that served Reubens as a kid and can report that Russian dressing (especially this one!) is also great on sandwiches dressed with coleslaw 🤤

    It's funny! I'm Russian and i didn't know there's a special Russian sauce 🇷🇺 Ppl here just mix mayo with ketchup, it's the closest i can think of. But your version looks so much better, thanks)))

    With an emersion blender you can add everything in, egg, oil and all and just stick your blender at the bottom of the cup and blend until the bottom layer has turned white and thick and creamy, and slowly undulate the blender as you lift it out to make sure all the layers have blended and emulsified cuz the oil will stay on top and as you undulate the blender the oil will get incorporated little by little, just make sure you add the oil last so the oil does stay on top. I find using the traditional method when using an emersion blender doesn't give me a thick enough mayo to where I like it.

    Roasted (brought out the sweetness), then dried, then let them soak up the juices again (like what you did with parsnip) Excellent texture, the taste was more "corny", and less bleeding. I'm thinking chioggia beets would be the right level of marbling...

    Wow what an incredible sandwich and fun video! If I try this it will be with a different vegetable, because my stomach does not react well to beets. Do you have any idea what vegetable(s) might be a good substitute?

    I think you should have actually pickled the beets like corned beef. I also think dehydrating the beets before and after that process would be really beneficial to the texture. Certainly a longer process but im gonna look into it.

      Soy lecithin is actually easy to come by, and I am pretty sure the aquafaba is enough to emulsify the oil ;)
