Like the concept but, I for one, am an Eggs Benedict purist. Nothing against Salmon for breakfast either. I've done that many times myself AND with a poached eggs and biscuits. The spinach is a nice idea too. The "out of the box" creativity is what I really enjoy about this channel as it relates to nearly everything. Maybe an Eggs Benedict with Smoked Ribs or, maybe even pulled pork? Smoke Brisket even? I'm salivating at the prospects!!!!!

I had no idea to strain the egg whites ! I'll take mine without the skin and hot sauce for the early first meal of the day. For 2021...rotisserie chicken stuffed with navel oranges (no seeds). The juices add so much to the chicken flavor after a couple of hours on the spit...Try it and see.

It is truly an amazing combination with the hollandaise sauce. Trick is to get the poached eggs just right...not too rare and not too done.

vitamix.com Costco has them on sale a few times a year. Worth every penny....I have had one for 20+ years. Nothing else comes close.
