Ingredients
About 4 cups of chopped kunafa dough
1/4 teaspoon kunafa color or orange color (optional)
1/4-1/3 cup melted butter
Mix all ingredients well until all the dough turns orange and is coated with butter
To make the filling
-Mix 1 1/2-2 cups of sweet ricotta and shredded mozzarella or Akkawi cheese. The cheeses should be dry and free of moisture.
-Add half the dough in a small baking dish, distribute it well and press it well.
-Distribute the filling over the first layer of kunafa and press it well with kitchen paper until we get rid of any moisture in the cheese.
-Add the second half of the dough, distribute it well over the cheese and press it well with the spatula.
-Bake immediately or cover and freeze to bake for another time.
-Bake at 375°F for 20-30 minutes or until slightly golden brown on top.
