How to Make: Sourdough Bread - What the Doctor Ordered W/ Dr. Stolsig

  • Steps to make 1 loaf of sourdough:
    1. Feed starter with 100g of bread flour and 100ml of water.
    2. Mix 500g of bread flower and roughly 350ml of warm water. Rest for 30 min.
    3. After 30 min, add 1/2 tbsp - 1 tbsp of salt and 110 grams of the active starter.
    4. Mix and fold.
    5. Repeat the folding step 2 more times in 15 minute intervals
    6. Bulk fermentation for roughly 8 hours. Dough should double in size.
    7. Shape and let the dough rest on the countertop for 15 minutes.
    8. Let it proof.
    9. Flour the top of the dough with semolina or white flour.
    10. Score your bread.
    11. Bake with lid on for 30 minutes.
    12. Bake with lid off for 15-25 minutes.
    13. Let rest for 1 hour.
    14. Enjoy.
