I love making sourdough bread! I have been maintaining a starter for nearly 7 months now. The process is lengthy but very fascinating. It gets easier with practice and time. I think to achieve an airy crumb is to have very well hydrated dough, like 80-85%. You will know your dough is perfectly fermented when it is jiggly and feels "lighter" as gas is trapped from all the stretch & fold -think of it like heavy cream to turning it into whipped cream (if that makes sense). Having a matured starter (usually takes a month) will also play as a factor as it will give a better rise overall 😊.

it is so complicated and yet when people eat it, they don't appreciate it that much. This has changed the way I look at sourdough breads and for sure the next time I eat it, I will slowly devour it, thinking of how painstakingly difficult it is to make . Kudos to all Pastry chefs and bakers alike!

could it be because people are used to eating sweet white bread in Asia or particularly the Philippines. I find that bread in the Philippines are a lot sweeter than in Australia. And it can be harder for people to find a normal white bread from a cafe in Australia these days. Its usually sourdough or some milk bun
The proofing/last rise is what makes it airy and gives it lots of holes. I saw how you inverted the dough and then transfered it to the dutch oven on both occasions. That’s what deflated or popped some air pockets inside which are overly sensitive to any agitation. A lot of developed air holes popped during those two shakings. Improve on that and it’ll be more light and airy inside. Make sure tge dough has well risen before baking. There should be a noticeable height difference. Otherwise, it will be dense and unpleasantly chewy. Personally, I don’t transfer the proofed dough and it still gives that perfect crust(also, spritz some water before placing it in the oven). I don’t use dutch oven, just regular baking mold or pan. But, I use high temperature and use steam to create that perfect audible crust.

In times like now, under the community lockdown, i just content myself with which are availabe, oftentimes, they're gone immediately in the supermarket counters : pandesal, white breadloaf, dinner rolls .
I really miss these Italian breads: Ciabatta, Foccacia, Pane di Matera...

This looks like it took too much time to prepare (even though the video lasted for only 17 minutes, haha!). I don't know if it's just me but I've seeing Anne's IG stories and even saw her here these past few days, but I think she's just glowing differently now. She was glowing then, but ever since she gave birth, she became more beautiful❣

i love sourdough and i bake it all the time. i actually have a starter that is 13 month old and i plan to keep it alive and pass it to my grand children! :)

Joshua made me do it too!! Sourdough can be really intimidating and it’s a lot of process, but it is so worth it! I don’t even buy bread anymore. My first sourdough is my biggest flex during this lockdown lol!

Good video. Just a couple notes though for starting bakers:
The first loaf dough looked kind of dry and I assume it had a low hydration so that might be why it didn't have a lot of oven spring.
Wetting your hands and using a bench knife will make handling the dough a lot easier.
Using a lame makes scoring a lot easier to angle the cuts for good ears.
Overall though great job and keep up the good work. Welcome to the addiction of sourdough

I’ve been making sourdough since last fall following the Tartine Bread recipe (kinda similar to Joshua’s) and the characteristics of the bread is that it should be slightly chewy and it really has that distinct tackiness to it.
Pro tip: Let the bread completely cool down before cutting into it.
Hi Erwan, you don’t actually need to feed your sourdough everyday. You only need to feed of you’re going to use it everyday but if not, you can store it inside the chiller and it can last up to 2 months without feeding, You’ll know when it’s hungry if there’s a hooch on top of your sourdough. Or you can feed it once a week when it’s stored in the chiller if you want. Keep in mind that the older your sourdough, the stronger it becomes. What I’m doing right now is I divided my Sourdough starter into two parts. One is inside the chiller which is my mother dough and the other one is left outside the chiller and I’m feeding it every 12 hours mainly because I’m planning to use it everyday. The reason why I left one inside the chiller which I call my mother dough is for safety blanket. If anything goes wrong with my sourdough atleast I still have a replica and I don’t have to start all over again 😊

I am impressed by the amount of work and study Erwan puts into his videos. He is truly a scholar and a gentleman.
A few years ago I tried making sour dough at home. After several months of reading internet and trial and error here is what I concluded:
1. through away the Dutch oven, put the bread in a cold oven and spritz it with water near the end of baking
2. while initially getting the starter growing, throw out half of it with each feeding. The frequency of how often you do this is how you select the kinds of yeast (fast or slow growing) you get.
3. forget the stretch and fold kneading, instead use a machine such as a kitchen aide with a dough hook and knead for at least 4 minutes up to about 9 minutes
4. after adding liquid to the flour let it set for about 20 minutes before kneading
5. a baton is an important tool
6. bake to an internal temp of at least 205 F
7. the size of the oven affects how quickly the bread browns, smaller ovens are quicker and may require changing the temp down by 5-10 degrees F.
8. While delicious, long term use of flour from any grass (including sugar) is detrimental to your health, that's why I no longer bake sour dough.

There's a show on netflix you guys should check out it's called "The Chef Show" starring John Favreau and chef Roy Choi where they make really awesome dishes with different guests each episode. In an episode of the third volume of the show, John also made sourdough bread and i think his recipe is easier to follow and the folding technique he used was more effective.
