  • Anthony Bourdain and a panel of accomplished chefs share their early cooking experiences and talk about what influenced their cooking styles. Bourdain is the host of the popular Travel Channel program, Anthony Bourdain: No Reservations, executive chef at Brasserie Les Halles, and the author of the bestselling book Kitchen Confidential: Adventures in the Culinary Underbelly. The panelists are Gabrielle Hamilton, chef/owner of Prune and Eric Ripert, chef at Le Bernardin. Michael Ruhlman, a journalist and author of The Soul of a Chef and The Making of a Chef, moderates.

    My father and Anthony Bourdain both died on the same day. Anthony's death had a more profound impact on my life.

    Bourdain is the soul reason why I cook for a living and also had single handedly shaped my own life and character. He was and is my number one inspiration both in work and life.

    Amazing interview. These mates are sincerely eloquent, passionate, and articulate about cooking. I also discovered the difference between being a chef over just being merely a cook!

    Bourdain possibly gave us some insight into his suicide when he talks about how he just wanted to be one of the guys, and to go home at night knowing he did a good job. Rest in peace.

      He drank to excess to help him to deal with his demons. But in the end they got the upper hand.

      Plenty of people have that attitude but they don't end up committing suicide. My guess is that Bourdain knew too much about what is going on, and he was murdered for refusing to endorse veganism.

    My son followed Tony into his grave. Tony was his mentor and my son was an exec chef in many places. In Sept he took a pill and died. He must have reached or identified with Tony too much. 😢

    My first job in a real kitchen was with a tyrant chef. It was 1989, I was 21, fresh out of military and was in no state of mind to put up with that. Even though I worked food service off and on afterwards, that was the end of my cooking dreams.

      Same here but not with a tyrant chef but a tyrant owner who was used to her employees bowing their heads when they saw her.
      Here I come with this "don't fuck with me NYC attitude" and she hated it. Fired me two weeks later.

    What they are not saying is you are going to work every holiday, Friday, Saturday most times sunday,cooking is a labor of love because you are barely going to make enough money to live

    the collective chuckle at 54:55 says all that anyone needs to know about the perceived value of the work that goes into satisfying the public with food on a daily basis. From the price of the meal, to the tip. Sure, the tipping system is archaic at best, but how can you manage customers' expectations, from the actual cost on every level to get the food on the plate to upholding the desired standard of service from a FOH perspective, all while being able as a business owner to reasonably afford paying a real living wage to every employee?

    Filmed in 2006, if only Bourdain knew what he'd be in for with CNN 6 years later in 2012. To think, he thought he was successful in 2006. lol

    I must have been a real foodie...by 1976 I knew of the chef that started in the world trade center..chef lamonica....there were rock start in the chefs world...nothing like 20 years later but for some of us having Michael asking me to dance in the late 60's was better than having one of the animals or monkeys...don't even remember which flirt with me on an elevator.

    I just got done cooking a whole duck with a Cornish Hen inside lol. The hen is a little dryer then I wished but the duck is just wow . That duck skin with hen meat soaked in drippings is just the best thing ever after a few shots of vodka chased with your favorite juice . its not a mcdonalds chicken nugget . So I am ok with it . It fell off the bone . I am good to go . I am just now finding his lives works and am feeling all his words . I never feel ok with who I am . I feel list and just stuck in this skin bag . But hearing him say the kids of things I wish I had the guts to say makes me proud of the fact that I once was a damn good dish washer . He makes me feel ok about the screw up I am . I feel ok with my 4 am duck stuffed with a hen with nothing added . It was simply sexy . If I could make out with food that duck mean raped in crispy duck skin wail I was buzzed makes me feel stronger and capable . I am ok .

      Anthony Bourdain took me on the greatest trips in my life. I was a live in caregiver early 2000 - 2022. So, No Boundaries became my first class ride around the world. Rest in Peace Tony

      Mate, the flavour of sardines here (in Europe) are not even remotely close to your canned sardines. The sardines you're thinking of are salty and sour...here they are fresh and flavourful.

    Cia is not a good investment in my opinion, because alot of people don't realize, you have a ton of dept and you will not be able to pay it back because, you will not be able to get a great paying job at least up front.

      That is a shame, and Im sure Tony would say the same, Eric was one of his best friends and a top chef in the world, not familiar with Gabrielle but Im sure she is a wonderful chef as well, I think Tony would tell you to open your mind and try to appreciate the bigger picture, there are years of experience on that stage, much more than just Tony can provide.
