I think it slows down the microorganism from spoiling the food and when freezing it will also freeze the microorganism even in nature we can find like in sout poles of earth the organisms are actually frozen but if it melt it will be active again. Hope it help

fungi,algae,protozoa,bacteria are microorganisms but virus is not REALLY considered a miccroorgaism as it only reproduces inside the host body

What is inoculum
Let me give an example. Have you see the process of making curd? For making curd person take a sample of curd and put it into the milk. And after some hour the milk turn into the curd. So the sample that we have taken from curd is known as inoculum

Why does the bacteria again converts the nitrogen into gaseous form in the last step ?
So that the nitrogen that is now in the soil should get back to the atmosphere as if the nitrogen gets stored in the soil and the bacteria doesn't converts it in atmospheric N2 then their would be a lack of nitrogen in the atmosphere.remember what is the taken needs to be returned back to it to maintain the ecological balance.
