    Hi, thank you for a brilliant lesson. I wanted to try a similar thing with coffee. Is it doable? And should I increase or decrease the pectin?

    For strawberry, passion fruit, or raspberry pâte de fruits, increase the amount of pectin to 15 g.

      Robert Bennett i cannot find trimoline in my area, what can i use?
      Also, your corn syrup looks yellowy.. is it the dark corn syrup or light corn syrup im supposed to use?

    Fabulous recipe, but WHAT is inverted sugar?

      Hi there and thank you for watching. Inverted sugars will be syrup glucose, honey, corn syrup. Their properties makes them easier to work with than regular granulated sugar, they prevent sugar cristalisation and bring smoothness and textures to dessert creams, soft candy and ice cream.
