    There are many recipes for Mayonnaise but the English have a penchant for their very own version called Salad Cream. It's sweeter and tarter that Mayo and that is why they crave it in their cheese sandwich or the base for any great coleslaw.
    My Mayonnaise Recipe • MAYONNAISE MADE EASY ...
    I must admit I like it myself but wherever I have lived it is always sold as an expensive import in tiny jars. So I took to experimenting until I produced this, a passable equivalent.
    What do you think? Make it and see. If you want to adapt it then mess with the sugar, vinegar and mustard balance, to get it just the way you like it.

    You will Need
    This Recipe starts with my quick to make Mayo • Video which I have been told is already one of the nicest Mayo you can taste :)
    1 Tablespoon of White Wine Vinegar
    1 Tablespoon of icing/powdered sugar
    and an optional teaspoon of Mustard.
    If you are lucky enough to be able to get English Mustard Powder, use one teaspoon of it instead of Dijon.

    Thank you, Chef! I’ve been looking for an alternative to store-boughten’ imported salad crea at $6 a jar. This recipe works great, the salad cream is as close to perfect as I’ll see in this life! My first try turned out badly and the reason was I tried to mix all 300ml of the oil with the other ingredients in one step. I ended up with a dark soupy mess. The trick I found is to add the oil gradually as you are mixing, starting with about 100ml and working gradually up to the full 300ml. Also, for any US folks I used common superfine sugar for the caster sugar (nobody in US knows what caster sugar is!), and I found for my taste about half a tablespoon is sufficient. The only other observation is the most common veg oil in supermarkets is soybean based oil and for my money it may be too heavy for this recipe, next time I’l try sunflower or safflower oil. I added a smidge more vinegar to mask the oily taste of the soybean junk so no damage done.

    Just tried it. Used Hellmann's mayo as it was handy. I grew up on Hienz and Chef's brand salad cream. This is insanely close and so simple to make. Thanks for this recipe. Will subscribe.

    Thank you SO much! I’m on a low carb diet and I used powdered sweetener in this. It is a complete dupe for Heinz. I was in a bit of a rush so used Hellman’s Mayo, but it was fab. Will make your Mayo next time. Thank you from Scotland!

    Thank you Jayne. Sarnies :) you must be a Brit. I wonder if anyone else uses the term LOL. I made some just today. My Kids love it. I started adding a little water to the mix. As Heinz have that as one of the ingredients, it makes a little more pourable, which is good.. and then it's just a case of balancing the sweet and vinegar and a little mustard for colour and flavor.

    Thanks for the brilliant recipe Steve
    I'm a Brit living abroad at the minute and so far have only found 1 shop (Safeway) that sells Heinz salad cream at the extortionate price equivalent to 8 pound a bottle, gulp. As much as I love salad cream and can't live without it, theres just no way I would pay that or the 6.99 shipping cost to have a bottle sent over, so your recipe is a total God send lol. Gonna make it next week along with your Ketchup recipe. Thanks sooo much!

    Great. Tinker with the recipe to get it the best for you. It's a balance of sugar or vinegar which takes it to the Salad Cream you miss :)

    I have a question: To my palate Cross & Blackwell and Heinz salad creams (GB) and Marzetti's cole slaw dressing (US) have a slight under taste of the pungency of either cider or malt vinegar. I find that white vinegar alone just doesn't do it for me when I try recipes for these. I'd like to hear your comments, and anyone else's, on this.

      +51diogenes Salad cream is a personal preference, deferent vinegars, sweetness and salt levels will subtly change the notes, I experiment find the flavours I like and work around them, I am by far not an expert of the commercial processed version, mostly I find after making your own they all taste a little artificial.

      Lisa Ray Ohhh, Lisa, I have had an empty pot of Branston Pickle on my Kitchen Side as well as a Daddies Sauce for months and Months. It was to remind me to share my Recipes for both but I just never seem to have found the time. I do make them as a staple because although we can buy them here, they aren't like they used to be and home made is just D'
      I will try to but I have a fairly full schedule in the near future but thanks for prompting me. I need to get those empty jars moved LOL,

    so.... how would you go about making the salad cream but keeping it thick like the mayo - reason is I don;t like the taste of mayo but I do like salad cream. but not how runny it can be... be nice if it stayed in the sandwich etc LOL.
    i know I could just leave out the vinegar but would I not need the flavour of that or is there something I can use to give that taste but not the liquid? - Thanks

      I agree, these corporations have ideas above themselves, It would be nice to see a British firm buy the Salad Cream brand from Heinz and stick that Label back on it (f it is true) Here in Oz and load of American owned Brands just got bought out by an Aussie firm (Bega) and at last Vegemite is indeed Australian, for the first time :o)

      @@Steve-Owens Yeah its a nutribullet. To clarify, I didn't make the mayonnaise first and then stir in salad cream stuff. I just threw it all in. I tried to salvage it with another egg yoke but it didn't work. It was split.

    Hi Steve... This is a nice dressing recipe, but there is a fundamental difference to Salad Cream. Salad cream was created thanks to the German U-boats and World war 1. Of course the UK is not the best climate for tomatoes.. so Heinz was having trouble making Ketchup and came up with this... It's less of a watered down Mayo and more of a Vinaigrette emulsified and stabilized with a LITTLE egg yolk. (Egg yolk is the second ingredient in Mayo... but the 7th in salad cream even after Mustard and cornflour!) In fact egg only makes up 3% That's why the cornstarch and Xanthan gum. I also postulated that the cornstarch was clearjel as heating up the mixture really changes the flavor profile. So for hygiene reasons I use hard boiled yolk. The colour comes from Riboflavin which is VERY yellow. (I just use colour).

      Salad cream wasn't created during the first world war, the recipe goes much further back and was popular in the Victorian era. The original recipe was from 'The Cook's Oracle' by William Kitchiner 1830 . It can also be found in the Victorian editions of Mrs Beeton's cookbook.

    I've tried making salad cream from mayonnaise in this way... it never tastes right to me, just tastes like a sharp tasting mayonnaise. Traditionally salad cream was made from the yolks of cooked hard boiled eggs, puréed with mustard, cream, vinegar, salt and sugar. If you make it from mayonnaise using raw eggs and no cream, it just doesn't have the same flavour. The precooked egg yolk is partially what makes salad cream taste very different from mayonnaise.

    Honestly, when I want to re-create a recipe I feel it imperative to use the exact same measurements. I could figure the ingredients, I expected your recipe to specify the amounts. Following your plan, I still have to guess the amounts. Shame on you for getting our hopes up.
