Games have a habit of making the R34 GTR sound like a built, single turbo model when it sounds nothing like that from the factory. The games that do the best job at representing what a stock R34 GTR sounds like IMO are listed below.

Handling, maybe subjective. But braking yes.
somehow Midnight Club doesn't have the fastest acceleration, that goes to Undercover
The issue with Carbon, Undercover and Midnight 3 is because they set the acceleration too high which ruined the physics of car itself, its more like you drive the race/tuned version instead of the stock version.
All Skyline generation have issues with the turbo lag on 1st gear which sometimes it bogs down until the effective RPM kicks in, they have higher PSI compared to the Lancer or Subaru due they have less PSI which means they have better respond on the car acceleration.
