  • Today I prepared the roasted zucchini, quick and easy recipe. Roasted courgettes can be used as a side dish for meat or fish or to stuff sandwiches. In fact, I also use them in cold pasta or rice salad. Making these courgettes is very simple, but to do them really well, just follow a few quick tips!

    INGREDIENTS FOR 4 PEOPLE
    3 courgettes
    1 clove of garlic
    3 tablespoons of extra virgin olive oil
    Salt to taste
    Spicy chili to taste
    Oregano or fresh mint
    First wash the courgettes, remove the ends and cut them with the knife into slices less than a centimeter thick (it is preferable not to cut them with the mandolin as they may be too thin soaking the seasoning). Put a colander on a flat plate, arrange the sliced ​​courgettes in the colander and on each layer put a little salt. Once all the layers are made, salt the last one and then put a weight on it (I opted for a container full of water) and let the courgettes drip for about 20-25 minutes (they will lose a good part of their vegetation water). In the meantime, prepare the seasoning: in a saucepan, heat the extra virgin olive oil for a minute, then turn off, add the cloves of garlic, the hot pepper and then the oregano (or the mint) and let it cool. After 20 minutes, remove the weight from the courgettes, transfer them to a clean and dry cloth and squeeze them well without breaking them. If they are still wet or damp, place them on the tea towel and pat them dry with kitchen paper towels. Now turn on the flame under the grill pan (if you want you can also roast these aubergines in a non-stick pan or on the barbecue) and when it is hot, put the courgettes next to each other and roast them and cook them for about a minute and a half, then turn them and cook them for another minute and a half. Certainly even the less experienced will notice the moment when they can be removed, so remove them and place them on a plate. Once they are all roasted, season them leaving them on the plate (if you eat them within a few hours) or put them in a container (to be able to keep them covered in the refrigerator for up to 2-3 days) and season them on each layer. Attention to the salt, I in addition to the one put to make them drain I have not added anything else, but you taste and regulate yourself.
